Manufacturing

Peel the potato tubers, rinse and cut into very thin slices. It is easier to use a mandalin for cutting. Remove the peel from the onion, rinse and finely chop into half rings.

Thaw the dough at room temperature, divide into two equal parts and roll out thinly. Place one of them on a baking sheet greased with vegetable oil.

Distribute the potato slices on top moderately over the entire surface, slightly overlapping. Add salt and pepper to your own taste.

Now lay out the onion tenderloin.

Cover the top with the second rolled out sheet of dough.

  2. Melt a piece of butter in a frying pan, add the onion and heat it slightly so that it becomes less hard.
  3. Boil hard-boiled, cool and peel the eggshells. Rub them on a large grater.
  4. Combine grated eggs with green onions.
  5. Peel the potatoes, rinse and cut into thin slices.
  6. At room temperature, defrost the dough and roll it into two similar thin layers.
  7. Grease a baking sheet with vegetable oil, place one layer of dough on it and make several punctures with a fork.
  8. Lay the potato tenderloin over the entire surface, leaving small edges to seal the dough later. Spread the onion-egg filling on top in an even layer. Season with salt and pepper to your own taste.

  • Potatoes in puff pastry will turn out even juicier and tastier if you add fried, boiled or pickled mushrooms, meat or sausage products, canned or fresh fish, any vegetables and the freshest herbs. The potato insides are perfectly mixed with minced meat, followed by previously lightly fried, finely chopped boiled eggs, grated cheese (hard varieties, feta cheese, smoked sausage).
  • The pie will be most delicious if you first fry the onion tenderloin in a frying pan in a small amount of vegetable or butter, and then add it to the filling later.
  • If you use boiled potatoes or mashed potatoes for the inside, half an hour is enough for baking in the oven. Therefore, if you increase the baking time too much, the dough may burn.
  • The pie will turn out more attractive if you do not use a whole egg to grease it, but beat the yolk with a tablespoon of milk (when there is no milk, you can replace it with a tablespoon of water with a pinch of sweet sand). The top of the finished baked goods will be especially shiny.

The first thing you need to do is quickly peel the potatoes and put them to boil; if they are large, cut them into two halves.
In order for the potatoes to cook faster, after boiling, you need to pour 2 - 3 tablespoons of vegetable oil or (if you have it, put a piece of salted lard on top, that is, make an oil film on top of the potatoes and they will cook faster.

Then defrost the dough. The fastest way to create this is in the microwave, put it in for 1 - 2 minutes, look, turn it over, turn it on again, but make sure it’s not completely soft.

Peel the onion, rinse, cut into half rings.

Sausage and cheese tenderloin

Sausage or frankfurters (pieces of ham will also work), cut into small pieces.
Cut the cheese into thin slices.

When the potatoes are cooked, cool them slightly and cut them.
By the way, you don’t need to cook the potatoes until fully cooked. The dough (I had one long layer - 500 g), if you have 2 layers, then connect them, pinching them well, and divide into two unequal parts: the largest part will go to the bottom crust, and the smallest to the top, i.e. 2/3 and 1/3 something like that.

Grease a baking sheet with vegetable oil and sprinkle with flour.

Laying potatoes and onions

Roll out a large portion of the dough so that the sides hang slightly.
Place it on a sheet and lay out the chopped potatoes, salt and pepper, and place pieces of butter on top. The next layer of onion, distribute it moderately over the entire surface, also add a little salt.

Laying the meat inside

Then lay out the meat preparations; if there are any onions left, add them on top.

Place cheese slices on them. Fold the edges of the dough under.

Pie coated with egg

Roll out the smallest piece of dough on a table with flour to the size of the open part of the pie.
Connect the bottom and top parts of the dough with a fine seam. The pie is ready, all that remains is to brush it with beaten egg and create 2 holes so that the pie does not warp.

  • puff pastry without yeast – 1 package (450 g)
  • potatoes – 3-4 pcs.
  • cream – 2 tbsp. l.
  • rosemary – 1 large sprig
  • bacon – 6 strips
  • hard cheese – 50 g
  • salt, pepper - to taste
  • egg for greasing the dough - 1/2 pcs.
  • sesame seeds for sprinkling the pie - optional

Manufacturing

Place the thawed puff pastry on a work surface. We divide in half. To make the cake more tender, we recommend rolling out the finished dough additionally to make it thinner. This does not have a sufficient effect on the external appearance of the baked goods (in the case of pies, the external visual layering disappears anyway), but it will literally improve the taste of the dough.

Peel the potatoes. 3 medium-sized tubers are completely enough: if the potato layer is very thick, other flavor colors will be lost.
