Pangasius in the oven: 3 recipes for tender and healthy fish + photos
Pangasius is called shark or sea catfish. The 2nd title is not true, because pangasius is grown in fresh water. Like other catfish, this fish has a high fat content and easy-to-digest protein. And the absence of small bones makes pangasius dishes a favorite even for children, who are usually wary of fish with bones.
Since this fish lives on the day and is capable of eating any waste, you need to be careful when choosing it. The fillet must have a pleasant pinkish or creamy (under no circumstances grayish) color. The compacted structure indicates that the fish was frozen once, which meets sanitary standards.

Pangasius fish is not a generous fish, but its taste is simply wonderful.
-
1 hour 20 minutes Serves 4 Easy
Pangasius fish is not a generous fish, but its taste is simply wonderful. It reveals itself best if the fish is baked with vegetables. I cook pangasius in the oven. First I bake the fish itself, and later I bake it with stewed vegetables. Thus, the dish comes out with the least amount of calories, and the fish itself is soaked in vegetable juice. So, let's start manufacturing.
Step by step recipe
We take the pangasius carcass, wash and clean it, remove the fins, head, entrails, etc.
Then we place the fish on foil for baking (the foil must be the glossy side out so that the fish does not burn during baking), sprinkle on all sides and inside with ground black pepper and salt.
Wrap the foil tightly, place the “packages” on a baking sheet and bake in the oven at 200 degrees for about 20 minutes.
While the fish is in the oven, prepare the vegetables. You will need one large carrot and the same head of onion. The carrots must be peeled and grated on a large grater, the onions must be peeled and cut into half rings.
Next, pour a little sunflower oil into the frying pan and add the vegetables. Fry them a little, and then add 1/2 teaspoon of ground ginger, 1/2 teaspoon of ground nutmeg, 2 bay leaves, ground dark pepper and salt to taste. Stir the contents of the frying pan and add two tablespoons of tomato sauce and half a glass of water.
Now you need to simmer the vegetables in the sauce until they become soft.
When the carrots and onions are ready (in other words, they become soft), remove the pangasius from the oven, carefully unfold the foil and stuff the fish with vegetables, and spread the remaining gravy on top. Now your dish needs to be covered with foil again and put in the oven for another 20 minutes. Now the temperature can be lowered to 160 C degrees. Make sure that the foil is tightly wrapped so that the fish sauce cannot leak onto the baking sheet. The fact is that juice mixed with vegetables will give a unique taste to the side dish.
I would like to warn you that pangasius is a fatty fish, so it must be served with regular boiled potatoes or a side dish that does not contain a drop of oil. The dish will then turn out very harmonious. So, baked pangasius with vegetables is ready! Bon appetit!
