Cookies “Smetanyushki”

The recipe is simple, but it turns out very, very tasty.

Sour cream and honey cookies “Colombina”

I really love the heroes of the Italian comedy Del Arte. So I thought about it - why not prepare a series of dishes. Various. 1st – “Silver Line for children’s satisfaction” cookies. Not cloying, honey-like, soft, with marmalade diamonds, so similar to the colorful suit of the cheerful Columbine.

Sour cream cookies “Gold bars”

Very tender and melt-in-your-mouth cookies with a sweet crust.

Sour cream cookies with currant jam

are made extremely quickly and eaten even faster

Cookies with sour cream . Sour cream cookies can be safely served with tea or coffee, or you can take them with you to work or on a walk as a snack, because both children and adults adore these tender and soft cookies! And to attract the attention of children with a new delicacy, you can prepare it in the form of different figures: flowers, animals, etc.

You can prepare cookies with sour cream with a wide variety of products: with condensed milk, with honey, with cottage cheese, with jam, with vanilla, etc. With all this, condensed milk and jam are most often used as inside. You can even make sour cream oatmeal cookies or sour cream cookies for beer - for this, margarine is included in the recipe.

The indisputable advantage of any sour cream cookie is that the dough for its production is prepared extremely simply and quickly. Usually this dough is prepared from sour cream, eggs, butter and flour, but there are also recipes that do not require the addition of eggs. If you add cottage cheese to the dough, the cookies will turn out surprisingly fluffy and indescribably satisfying. It is not forbidden to vary the dough with products such as chocolate, marmalade, raisins, dried fruits, nuts, etc. And to give the finished liver a special smell, you can add cinnamon, cocoa, honey or vanillin to the dough. You can also make wonderful Christmas cookies based on sour cream dough - for this, add ground ginger, cinnamon or saffron to the flour when kneading the dough.

To make cookies with sour cream especially soft and tasty, it is better to take sour cream with a fairly high percentage of fat content. Cookies made from low-fat sour cream sometimes turn out somewhat dry. But if the dough recipe contains margarine or butter, it is completely acceptable to use low-fat sour cream (unless, of course, its fat content is indicated in the recipe). If only sour cream is used to make the dough, without butter or margarine, then the fat content of sour cream must be at least 25%. And if you want the cookies to come out crispy, the dough is rolled out as thin as possible, and the cookies themselves are baked at a low temperature.

Before putting sour cream cookies into the oven, they are usually not greased with anything. But in this case, if you want to sprinkle it with sugar, nuts or sesame seeds, it won’t hurt to moisten the surface of the cut out cookies with an egg or water. And in order to make this task much easier for yourself, it is worth purchasing a special culinary brush. Sour cream cookies painted with glaze also look very beautiful, so you should definitely take this delicious idea on board.

Soft cookies with sour cream: quick and tasty, 4 recipes

Children are always eager to be pampered with healthy delicacies. Store baked goods don't excite me. Harmful chemical additives and refined oils are often mixed into it. It’s not that I don’t advise children, or even adults, to try such products.

They are stored for a long time and do not go stale. But the effect comes due to preservatives and chemicals.

There can be no better homemade recipes for quick and sweet baked goods.

Now our selection of culinary secrets is dedicated to soft ordinary cookies with a sour cream base. Here you can let your imagination run wild: add all sorts of favorite little useful things to the dough. Experiment with all your heart with your insides. Or do without them completely.

Sprinkle coconut flakes into the dough, raisins and nuts, multi-colored dried fruits, pieces of chocolate - add whatever your heart desires.

Soft cookies made with sour cream without butter or margarine, quick and tasty at home

Are there any healthy cookies that are not very high in calories? - you ask. Naturally, there are! One of these options can be created completely without oil and even without margarine. Sour cream adds a suitable softness to the texture. And soda will provide the dough with a solid rise. Let's get down to our favorite cooking.

Let's take:

  • sour cream, at least 15% fat - one glass;
  • chicken eggs - two pieces;
  • sugar - half a glass;
  • wheat flour - 2.5 cups;
  • salt - a pinch;
  • soda - half a teaspoon;
  • a little vegetable oil, grease the baking sheet.

Manufacturing:

In a comfortable deep bowl, lightly beat the first basic ingredients - eggs with sugar.

Now it's time for white sour cream. Add a little salt and add soda. After stirring, bubbles flicker on the surface.

Finally, add the sifted flour.

The mass can completely absorb a little more or less than two and a half glasses. Here the size of the eggs matters.

Mix everything thoroughly with your hands. Customize the appearance of the cookies to your own taste. Some people like nice round things. And someone is in ecstasy from cutting out dough with funny molds.

Distribute drops of sunflower oil on a baking sheet. It is very comfortable to lay sheets of baking parchment. Nothing sticks: all you have to do is collect the ready-made treat balls and simply remove the paper.

Place the spread out hills in the oven for a little less than half an hour. If we set the heat to 180 degrees.

Did you see a nice golden brown crust? Place the hot delicacies on a tray, dish, or plates.

Shortbread recipe without eggs quickly in the oven

Good guests are about to arrive? And you don't have dessert. Don't panic! We have a good super recipe for shortbread cookies that can be made almost instantly.

During a culinary marathon, there is no need to leave the dough in the refrigerator or freezer forever. A couple of hand waves, and the attractive slide is already asking for tea. Come and help yourself!

For high-speed cooking, take:

  • wheat flour - 250 grams;
  • butter - 200 grams;
  • sweet powder - 100 grams;
  • potato starch - a couple of tablespoons;
  • a pinch of vanillin or cinnamon.

Manufacturing:

We will need softened butter. At normal warm temperatures it will thaw in about half an hour. In other recipes, the butter-sugar mixture is kneaded with your hands. We beat the pieces with a mixer until fluffy.

Add sweet powder with vanilla there and go through the mixer again.

Starch and puffed flour are the final chord in our dough. You can reduce the speed of the device. And at a leisurely speed, bring everything until smooth. Or you can do it manually.

The result was unusually wonderful: tender softness, and does not stick to your hands.

I usually act as an architect. I sculpt lumps of future cookies with my hands. Flatten them a little, using strokes of a fork to create reliefs along the top of the roundness. Now the miracle on the baking sheet is ready!

We heat the home fireplace to 180 degrees. After 20 minutes, the hills of shortbread pastries will become pleasantly golden. We pour some fragrant tea and delight dessert lovers.

We prepare cookies from sour cream in a frying pan for kids - so simple that you can bake them any day

I would like to share with you a mind-bogglingly useful and outrageously easy method for making round sour cream cookies. For kids - you can't imagine anything better! After all, they are prepared without oil or oven.

We heat up an ordinary frying pan, and we are already culinary masters. The color of taste comes out special. A little curd, but without a gram of cottage cheese.

For exciting creativity in a frying pan, take:

  • wheat flour - one and a half cups;
  • chicken egg - one piece;
  • sour cream - three tablespoons;
  • sugar - 80 grams;
  • vegetable oil - three tablespoons;
  • baking powder - a teaspoon.

Manufacturing:

From a fresh chicken egg, we only need the yolk. In a bowl, combine the trio of sour cream, sugar and yolk. We turn on the mixer and then work with it. A homogeneous liquid mass came out.

Now it's time for sunflower oil.
Whip quickly again. Lightly add the previously sifted flour in parts.

And now we conjure the dough with our hands. We make a bun out of it.

We form an elongated sausage four to five cm thick. And cut it into even pieces.

Apply little pressure to any mini-circle. A figure appears that looks like a puck. How to decorate them? A fork or a chef's hammer will help us! Lattice patterns remain from the hammer. A fork is convenient for drawing stripes and grooves.

I often throw small poppy seeds into the dough. The result is both delicious and creative.

Place a dry frying pan, not greased or oiled, over low heat. Place the prepared treats on the heated bottom and wait for about 4 minutes. Either side cooks quickly.

The core becomes golden, and the edges turn out snow-white and tender. Especially, simple, almost brilliant!

Very tasty crumbly sour cream cookies with cottage cheese

I love the cheesy aspects of cookies! Beloved Christmas trees, bunnies, hearts or flowers (cut out in shapes) turn out to be the most delicate. I usually bake sour cream for about fifteen minutes.

Then the treat comes out melting and free-flowing. Craving a crispy crust? Just increase the baking time. Let's put the products we need in order.

Let's take:

  • wheat flour - 300 grams;
  • baking powder - 10 grams;
  • cottage cheese of any fat content - 200 grams;
  • sour cream - 120 grams;
  • butter - 250 grams;
  • egg yolks - 2 pieces;
  • sugar - 100 grams;
  • vanilla sugar - 15 grams;
  • salt - to taste and desire.

Manufacturing:

It is better to take out the bars of butter and place them in a warm place in advance. In an hour it will thaw to a suitable pliability.

Pour sifted flour, a handful of baking powder, and sugar into a wide container. Season with salt. Place the chopped butter in bricks there; and egg yolks.

If time permits, I prefer to put everything together by hand. To convey warmth, your energy, even a grin to the dough. Although a mixer will do the job well.

Spread a cloud of sour cream and cottage cheese. It is not necessary to wipe it into small particles. The very process of kneading and baking will change the substance of the dough. As a result, the grains will dissolve imperceptibly.

Let's work creatively on the test. If the curd is a bit runny, use a little more flour than the specified amount. Gather the dough into a ball, wrap it in cling film and refrigerate. Let it lie there for an hour.

While the oven is heating up (up to 180 degrees), divide the workpiece in half.

It is convenient to first roll out one half into a sheet. You can do it directly in film. It will be luxuriously thick—about half a centimeter.

The most joyful part of making cookies is putting the dough in the molds. And we imagine ourselves as an artist who cuts out mini-paintings.

Well, now, like pottery, you need to bake everything. The oven is already hot. Place the finished miracle molds into it for about fifteen minutes. Once they are browned, you can take them out!

That's all there is to it! Homemade natural sweets on your table!

Step-by-step recipe for making cookies with sour cream

The recipe for cookies with sour cream occupies one of the first pages of my culinary notebook, so it is prepared quickly and comes out extremely tasty. Thanks to him, there is always a use for the remains of sour cream that are found in the refrigerator when cleaning. And on cool winter days you get indescribable pleasure from the smell and warmth emanating from the oven.

Well, you don’t have to run to the store to buy something for tea. My kids like to work with me to squeeze out various shapes from the dough, and then watch how they grow and brown. But the biggest advantage is that you know what it is made from and can give it to your children without fear.

Savory cookies with sour cream

Ingredients

Chicken egg 1 PC.
Wheat flour 400 g
Fat sour cream 250-300 g
Creamy margarine or butter 160-170 g
Sugar 6-7 tbsp. l.
Baking powder 1 tsp.

Step-by-step production

According to this recipe, cookies with sour cream turn out extremely tasty, moderately sweet and soft.

  1. Let's start making it by adding baking powder to the flour and sifting it. It’s more convenient for me to knead right away on the table, but you can do it in a wide bowl.
  2. Now take chilled butter or creamy margarine, rub it into flour on a large grater and grind, turning the mass into crumbs. If you cook with softened or melted butter, it will turn out just soft. And it will be tender, sandy and crumbly.
  3. Add sour cream to the crumbs and mix well. Please note that we do not add sugar to the dough. We will have it on top of the cookies. Also I don't lay an egg. This imparts firmness to the baked goods and reduces crumbling. To get puff pastry, add 30-40 ml of vodka or 2 tbsp. l. grape juice mixed with lemon.
  4. Wrap the finished dough in cling film and place it in the refrigerator for at least 30 minutes. Cookie dough with sour cream is made extremely quickly, or, as they say, quickly. It takes longer to cool down. After this it will become denser and more pliable. You should not use the freezer, where the dough will freeze and rolling it out will be problematic. If this happens, remove the film and leave to warm up at room temperature for 5-7 minutes.
  5. Sprinkle the table with flour. Cut off half the dough and roll it out 0.5-1 cm wide. So that it does not drag behind the rolling pin, from time to time we treat it and the layer itself with flour.
  6. At this step, you can simply cut the layer with an ordinary or figured knife into squares or squeeze out the shapes using molds. Or completely cut strips 1 cm wide or squeeze out circles with a glass
  7. Break the remaining egg into a small bowl and beat it lightly with a fork. Pour sugar into another container. Cover the baking sheet with parchment and turn on the oven at 180-190°. The paper does not need to be lubricated or sprinkled with anything. We take each piece, in turn dip it only with the top side into the egg and sugar and place it on a baking sheet. Thanks to this, the cookies will not be extremely sweet and rosy. You can place the figures on a baking sheet, brush them with egg wash using a brush and sprinkle with sugar.
  8. According to the recipe, bake extremely tasty sour cream cookies in the oven for approximately 20 minutes. We put the cookies on a plate or in a vase, and put the newest batch in their space.

From my own experience I say that it does not survive until the moment when tea or coffee is prepared, so it is quickly stretched by the rushing household members.

You can also quickly and easily create mayonnaise cookies. I also advise you to bake homemade oatmeal cookies, which are tastier and healthier than store-bought ones.

Other options

Soft vanilla-sour cream cookies without margarine

  1. Take a small glass of sour cream and dissolve 4 tbsp in it. l. Sahara.
  2. Mix 200-250 g of flour, 1 tsp. baking powder and a pinch of salt. Pour this mixture into sour cream, add 1 tsp. vanilla extract or sugar and knead a soft dough that will not stick to your hands. This dough will make an extremely soft gingerbread-like cookie. If you want it to crunch, add about 80 g more flour.
  3. Wrap it in film and put it in the refrigerator for half an hour.
  4. Cut off half, roll out about 1 cm wide and squeeze out shapes using stencils or make circles with a glass.
  5. Place the pieces on a baking sheet lined with parchment and bake in an oven preheated to 180-190° for 20 minutes. During this period of time we prepare another portion of cookies.

Poppy cookies

  1. Soften 120-130 g of high-quality margarine or butter at room temperature.
  2. Grind a small glass of sour cream with 4-5 tablespoons of sugar and 1 egg. Add margarine, 100-150 g poppy seeds and mix.
  3. Combine 350-400 g of wheat flour with 1/3 tsp. soda or 1 tsp. baking powder. In this case, there is no need to turn it off. Sour cream acid is enough for this.
  4. Knead a non-sticky, soft dough. Place it in a bag or wrap it in cling film and keep it in the refrigerator for 30 minutes.
  5. Roll out half into a layer of 0.5-1 cm and form cookies.
  6. Bake on a lined baking sheet for about 20 minutes at 180-190°. I immediately warn you that it will not be ruddy, but remains light, so you don’t need to be guided by color. It’s better to take one out after a while, break it and check the degree of readiness.

Nut cookies are prepared in a similar way.

Sour cream cookies with honey

  1. Melt 2-3 tbsp in a water or steam bath. l. at least some honey.
  2. While it has not cooled down, add 1/2 cup of sugar and 120-140 g of butter or margarine. Mix well.
  3. Sprinkle 1/3 tsp. not slaked soda or 1 tsp. baking powder and add 3/4 cup sour cream. Bring until smooth.
  4. Sift 2 cups of wheat flour into this mixture and knead into an elastic, soft dough.
  5. We tear off small pieces and make koloboks 1.5-2 cm in diameter. We place them on a baking sheet with parchment at a distance of approximately 2 cm from each other, so that during baking they will increase and spread slightly.
  6. Place in a preheated oven at 180° for 20 minutes. Depending on the type of honey, cookies may change color and become darker.
