At the same time, soft and semi-liquid candies became widespread in European countries. In addition, the chocolate truffle cake is not the least popular.
  • Ganache for traditional truffles is a cream made from chocolate (dark, white or milk), cream and butter. In times of shortage, sweets at home were made from milk powder or children's consistency.
  • To make truffles less high in calories, cream is often replaced with milk, fruit puree or juice.
  • Flavoring additives such as spices, fruits, orange zest, nuts, dried cherries or cranberries are often added to ganache.
  • The taste of chocolate is often decorated with alcoholic drinks: rum, cognac, liqueur.
  • The easiest way is to melt the chocolate for ganache in the microwave or in a water bath. The main thing is not to overheat the chocolate, do not let it boil, but heat it moderately. Therefore, it must be stirred every minute. So the mass needs to be brought to 45-50°C. Just set the temperature. Apply a drop of melted chocolate to the inside of your hand. A person's body temperature is 36.6 degrees. Chocolate mass at a temperature 10 degrees higher will not burn your hand, but the heat will be more noticeable.
  • Truffles are rolled not only in cocoa, but also in ground nuts, wafer crumbs, or decorated with chocolate patterns.
  • For ganache, do not use porous bars or chocolate with additives.

Candy Truffles

Chocolate truffles are named after the delicious mushroom and resemble it in all their appearance.
The recipe for these sweets was invented in 1895 by the French pastry chef Dufour from the city of Chambery. To make truffles you only need four ingredients: chocolate, cream, butter and cocoa powder.
Needless to say, they all must be of high quality. You don't have to be a great pastry chef to create truffles at home.
You don’t even have to temper the chocolate for them! Enough to dissolve the chocolate, mix it with hot cream and, when the mixture has cooled to a suitable temperature, stir in the softened butter. Lumps of chocolate ganache are rolled in cocoa - and the truffles are ready!
If you infuse hot cream with vanilla, citrus zest, cinnamon or other fragrant ingredients, the candies will acquire their subtle aroma, which will reveal itself best after the candies spend the day in the refrigerator. In a tightly closed box, obviously!

Sweets have been given, are given and will be given constantly. And if you create the candies yourself, pack them in beautiful packaging.
