In production terms, chocolate truffles are made in a round shape from ganache. Later they are glazed with melted chocolate and rolled in cocoa powder. It is possible to repeat truffles at home, because... There is nothing complicated in the recipes. The main thing is to use high-quality ingredients, follow the recipe and culinary tips.
Secrets and tips of chefs
- Since Russian times, hard cone-shaped truffles have gained the greatest popularity. Although usually chocolate truffles are spherical in shape. At the same time, soft and semi-liquid candies became widespread in European countries. In addition, the chocolate truffle cake is not the least popular.
- Ganache for traditional truffles is a cream made from chocolate (dark, white or milk), cream and butter. In times of shortage, sweets at home were made from milk powder or children's consistency.
- To make truffles less high in calories, cream is often replaced with milk, fruit puree or juice.

A person's body temperature is 36.6 degrees. Chocolate mass at a temperature 10 degrees higher will not burn your hand, but the heat will be more noticeable.
- Truffles are rolled not only in cocoa, but also in ground nuts, wafer crumbs, or decorated with chocolate patterns.
- For ganache, do not use porous bars or chocolate with additives.
- The most delicious truffles are made from snow-white chocolate or classic dark chocolate, only freshly prepared. But the candies keep well in the refrigerator for up to several weeks, and in the freezer for up to 2-3 months.
Cocoa truffles
A good option for homemade sweets is traditional chocolate truffles made from cocoa with a delicate creamy interior. They can be prepared very quickly for the arrival of unexpected guests.

Ingredients:
- Black chocolate – 300 g
- Condensed milk - 1 tbsp.
- Cocoa powder - 200 g
Making chocolate truffles from cocoa:
- Break the chocolate into small pieces and place in a deep container. Melt it in a water bath until it becomes watery.
- Pour regular (not boiled) condensed milk into the melted chocolate and stir everything well.
- Pour cocoa powder into the chocolate milk mixture.
- Stir the products so that the mass becomes as dense as possible and you can make candies from it. If necessary, add cocoa powder.
- Form round candies or any other shape from the chocolate consistency.
- Dip each piece in cocoa powder.
- Place the finished alcohol-free truffle candies on parchment paper and place them in the refrigerator to harden for 1-2 hours.
French chocolate truffles
Tender and melting in the mouth, with a moderately tart cocoa shell - traditional French truffles made from generous dark chocolate. This is a sign of luxury and narrow taste.
Ingredients:
- Cream 30% – 80 ml
- Dark chocolate – 125 g
- Butter – 30 8g
- Cocoa powder - 2 tbsp.
Making French chocolate truffles:
- Break the chocolate into pieces and place in a bowl.
- Add softened butter at room temperature and pour in hot (not boiled) cream.
- Stir the products until they are completely dissolved and the mixture is homogeneous. If necessary, place the mixture in a water bath or in the microwave for a couple of minutes.
- Cool the resulting homogeneous mixture to room temperature and place in the refrigerator.
- Place the cooled mixture in a pastry bag and squeeze small chocolate candies onto a flat plate. Place them in the refrigerator for 20 minutes.
- Then pour cocoa powder onto a board or plate, and roll the cooled candy blanks, forming balls. Do this quickly, otherwise the mass will melt from the heat of your hands.
- Place the finished French sweets in the refrigerator for 15 minutes.
Truffles with orange
Black, chocolate, velvet, unique... - chocolate truffles with orange. Sweets conceal luxury, intrigue and adventurism within themselves. At the best receptions they are served with cognac. This is the most generous combination and a good ending to a gala dinner.
Ingredients:
- Bitter chocolate - 300 g for ganache, 500 g for topping
- Cream 33% – 250 g
- Butter - 25 g
- Orange liqueur – 25 g
- Nuts - 1 tbsp.
Making chocolate truffles with orange:
- For the ganache cream, heat the cream in a saucepan over medium heat until bubbling. But don’t bring them to a boil, otherwise they will curdle.
- Chop the chocolate as finely as possible with a knife so that it melts faster and more evenly. Add it to the warm cream and remove the bowl from the heat.
- Using a whisk, vigorously stir the ingredients until a homogeneous mass is obtained and the chocolate is completely melted.
- Stir softened and chopped butter into the mixture.
- Then pour in the orange liqueur, stir and cool the cream in the refrigerator for 2-3 hours.
- Cover a board with cling film or parchment paper and use a teaspoon to spread small handfuls of cream.
- Place the cream in the refrigerator for 15 minutes to harden and form into balls.
- For topping, cut the chocolate into pieces and melt until a watery, homogeneous mixture using any convenient method.
- Cover the truffles with chocolate mixture. Using a double-pronged frosting fork, lift the truffle to allow excess chocolate to drip off.
- Then roll the candies in crushed nuts. To do this, bake the nuts in advance on a baking sheet or fry them in a clean and dry frying pan. Then chop them finely with a knife.
- Cool the finished truffles with orange in the refrigerator for 30 minutes.
Truffles with alcohol
Homemade chocolate truffles for adults with alcohol. These are popular famous candies for real pleasure and pleasure, which are made for almost all holidays and parties.
Ingredients:
- Dark chocolate – 250 g
- Cream 33-35% – 85 ml
- Whiskey – 85 ml
- Cocoa powder - 2 tbsp.
