If you have fresh shrimp, boil them. I had ice cream royal ones. I defrosted them in water so that they would be easy to clean later. Do not overexpose it in water!

Step 5:

Then, having removed the shell, I removed the intestinal tract (a narrow cut should be made on the back of the shrimp and a narrow thread should be removed) and threaded onto skewers. This way the shrimp will be smoother when we pour boiling water over it and later place it on the rice.

To make the shrimp have a more piquant taste, I poured a bubbling mixture of lemon juice, salt and water over them (all to taste). Let it sit for a couple of minutes. Later, salt this mixture and put the shrimp in a bowl without removing the skewers.

We can quickly prepare a dressing using a teaspoon of boiling water, the same amount of sugar and rice vinegar. You can taste it and change the ratio of components. For example, I poured a little more water.

Step-by-step production

  1. First you need to prepare the rice for the rolls. For this we take only round rice, under no circumstances long rice, which is not suitable for rolls at all. We wash 250 grams of rice 7-8 times with cool water until it becomes transparent.
  2. Place the washed rice in a saucepan with a thick bottom, pour 370 ml of cool water into it. Place the pan with rice on the stove, cover it loosely with a lid, and wait for the water to boil. It is important not to skip boiling.
  3. When the water boils, close the lid tightly, reduce the heat to low, and cook for 12-13 minutes until the water is absorbed into the rice. We don’t open the lid, don’t disturb or touch anything, the main thing is not to miss the allotted time.
  4. While the rice is cooking, make the dressing. Pour 30 ml of rice vinegar into a small saucepan and put it on low heat, because you only need to heat it up to intensively dissolve the remaining components. Add half a teaspoon each of sugar and salt to the saucepan, and then a small piece of nori measuring approximately 25 square cm.
  5. Take a wooden kitchen spatula, stir the ingredients until the sugar and salt dissolve and the nori smells. When the sugar and salt dissolve at this low heat (boiling is not allowed), pour the vinegar into a separate container and remove the piece of nori.
  6. Now let's prepare the freshest cucumber for the rolls. Cut a long, fresh cucumber in half, and cut each half in half again lengthwise. We need to remove the soft part of the cucumber, consisting of seeds. We do this with a very sharp knife.
  7. When we remove the pulp, cut each of the 4 parts into thin strips and put them aside for now.
  8. In the meantime, 12 minutes have passed, remove the rice from the stove, leave separately with the lid closed for another 10 minutes.
  9. Let's prepare the baking sauce. On a cutting board, cut 6-7 pre-peeled shrimp and place them in a separate bowl.
  10. Add three teaspoons of Philadelphia cream cheese, two teaspoons of capelin caviar, one tablespoon of hot sauce. Mix the ingredients thoroughly. The baking sauce is ready, put it aside for now.
  11. It took 10 minutes from the time we set the rice to cook without heat. Place it in a deep container, mix with a wooden spatula or spoon (not an iron spoon), carefully add rice vinegar with sugar and salt, mix and set aside to cool.
  12. Let's move on to the formation of rolls. Wrap a piece of mat with cling film. We place a sheet of nori on it, which is most often 20 by 20 cm in size. To make the rolls as careful as possible, we cut off two intended strips from the sheet, remove them, and on the rest of the layer we will form a product from rice and shrimp.
  13. We put on rubber gloves, take a certain mass of rice, lay it out on the nori, not reaching 2-3 cm on one side of the layer in order to carefully close the roll later.
  14. On top of the rice in the center of the nori, place a strip of Philadelphia cheese using a teaspoon or syringe.
  15. Then, along the perimeter of the strip of cheese, we lay out thin slices of cucumbers on one side of the cheese, and on the other - pre-peeled shrimp parallel to the cheese and cucumbers.
  16. Now we roll up the roll: we wrap it together with the nori mat in the direction on which the rice was not placed completely, press it down, but not very tightly, so that the edges come together.
  17. It may turn out that the rice will begin to come out at the edges. Then use a knife to carefully press it down along the edges, returning it inside the roll.
  18. We remove the mat and get a roll in the form of a long sausage.
  19. We cut it with a very sharp knife with one click, first into two parts, then each into two more, we get eight products of similar size, which we put on a baking sheet and put in the oven for 8-10 minutes at a temperature of 200-220 degrees. Before putting it in the oven, add a little thick sauce made from cheese, shrimp and hot sauce to any roll. Place one shrimp on top.
