Making a dish step by step:

To make thick pancakes, we need the following ingredients: drink or sour milk of any fat content, premium or first grade wheat flour, medium-sized chicken eggs, refined vegetable oil, sweet sand, baking soda and salt. All products should be at room temperature.

Break a couple of chicken eggs into a suitable sized bowl, add 2 tablespoons of sugar and a pinch of salt.

Beat everything with a mixer or whisk until the sugar crystals dissolve.

Add 500 ml of kefir and 3 tablespoons (leave a little for greasing the pan) of vegetable oil without aroma (I use sunflower).

Mix everything, add 1 teaspoon of baking soda and mix thoroughly again.

All that remains is to add 400 grams of wheat flour (I use premium grade) to the watery base for future thick pancakes.

Mix all ingredients with a mixer or whisk until no lumps remain. The pancake dough comes out quite thick - like low-fat sour cream. If you make such a dough very watery, the pancakes will increase in volume during baking, and after removing from the pan they will fall off.

Heat a frying pan, grease it with a small amount of vegetable oil and pour a ladle (3-4 tablespoons) of pancake batter into the center. There is no need to spread anything or turn the pan - the dough itself will spread over the surface as needed.

Immediately close the pan with a lid and cook the pancake over low heat until bubbles appear and the dough is baked on top.

Turn the thick pancake over and cook the other side until done.

Remove the thick pancake from the pan and prepare the next one. In total, from the indicated amount of ingredients used, I get 7 pancakes with a diameter of 17 cm.

Let me now share with you an ancient family recipe for plump, delicious pancakes, which are mixed with kefir.

This is my grandmother’s favorite recipe and she makes these pancakes every time we come to visit.

  • Flour - 300 gr
  • Drink – 500 ml
  • Testicles - 2 pcs.
  • Sugar - 2 tbsp. l
  • Vanillin on the tip of a knife
  • Soda - 1 tsp
  • Sunflower oil - 3 tbsp. l
  • Salt - 1/2 tsp

Let's cook. Combine the eggs with sugar, add salt and add vanillin on the tip of a knife.

Mix well with a whisk. Pour in half the kefir and add soda.

There is no need to extinguish the soda, the acid of kefir will extinguish it. We wait 5 minutes for the reaction to occur.

Add sifted flour evenly. Stir well as it can be, so that the dough will turn out thick.

And then add the second half of kefir. We do this to avoid lumps.

Knead the dough well. It became more watery and fluid. Add sunflower oil.

Again, stir everything well. The dough comes out more watery than for pancakes. Just right for our plump pancakes.

In a dry, perfectly heated frying pan, we begin to bake our pancakes.

Pour and level slightly. There is no need to spread it all over the pan; they should remain small.

We set the fire to low so that they should be perfectly baked inside.

And if the fire is strong, they will quickly brown on the outside, but the inside may remain damp.

That’s why we don’t rush, we bake slowly. They immediately make beautiful holes!

It takes us approximately 2 minutes on each side to get such a beautiful blush.

Place the finished pancakes in a stack. From this amount of ingredients you will get 12-15 fluffy and fragrant pancakes.

It’s great if it’s not very fresh, but perfectly sour, then the reaction with soda will be stronger, which means the pancakes will be plump. It is best served warm, with jam, preserves, honey or condensed milk - choose any additives you like!

Ingredients

  • drink – 500 ml
  • chicken eggs – 2 pcs.
  • vanillin - on the tip of a knife
  • vegetable oil – 3 tbsp. l.
  • sugar – 2 tbsp. l.
  • salt – 1 chip.
  • wheat flour – 400 g
  • baking soda – 1 tsp.

Note. All products should be at room temperature (if you forgot to take the drink out of the refrigerator in advance, then heat it in a saucepan or in the microwave to a temperature of approximately 35-40 degrees).

Manufacturing

Break the eggs into a deep bowl, add sugar and salt. Using a whisk, beat until the sweet grains dissolve. As for sugar, the pancakes according to this recipe will turn out moderately sweet, because we will pour jam or honey on top of them. You can add more sugar if you wish.

Add the drink and soda, vegetable oil (refined, in other words without aroma). For scent, add vanillin at the tip of a knife. Mix everything until smooth.

Add flour sifted through a sieve. It is best to do this in 5-6 steps. We break up all the lumps - you can use a whisk or mixer.

The pancake dough should be thick, like thick sour cream. There is no need to add more kefir than indicated in the recipe and make the dough watery, otherwise your pancakes will rise very much during baking, but as soon as you remove them from the pan, they will fall.

Heat up a pancake maker or cast iron frying pan well. Grease it with a small amount of oil and pour the first portion of dough into the center of the pan - about half a ladle. Using the back of the ladle, lightly spread the dough along the bottom so that it is distributed more or less evenly. Immediately close the lid and bake a thick pancake - about 2-3 minutes, over medium heat, until the dough on top is baked and bubbles.

Turn the pancake over and continue baking it on the second side until fully cooked.

As they bake, remove the thick pancakes from the pan and stack them on top of each other. In total, from the indicated amount of ingredients you will get 7-8 pancakes.

Pancakes made with kefir are fluffy and soft, porous.
