  • blueberries 300 gr
  • milk 250 gr
  • eggs 1 piece
  • sugar 100 gr
  • butter 80 gr
  • vanilla sugar (vanillin) 10 g
  • dry yeast 2 teaspoon
  • salt 0.5 teaspoon
  • sweet powder 2 teaspoon

Heat the milk to approximately 40 degrees, add yeast, a spoonful of sugar and stir until dissolved. Leave for 15 minutes in a warm place. Sift the flour and divide it into two parts; after time, add it to the bowl. Mix everything until a homogeneous mixture. Leave in a warm place for another 30 minutes.

Let's melt the butter. We divide the egg into yolks and whites, take the yolks, add salt and sugar to our mixture, add vanillin and mix it all.

Beat the whites well with a mixer. Gently mix into the dough, add the remaining half of the flour. In order for the dough to rise, cover it with film and leave it warm for 1 hour.

We sort the blueberries and dry them. When the dough has risen, take a baking sheet, grease it with oil and put the dough on it, pour the berries. Preheat the stove to 180 degrees and place the baking sheet in the oven. Production time 45 minutes. Sprinkle the finished pie with sweet powder. Bon appetit!

Chocolate pie with berries

  • flour 400 gr
  • eggs 5 pcs
  • dark chocolate 275 gr
  • sugar 250 gr
  • butter 100 gr
  • vanilla sugar (vanillin) 10 g
  • salt 1 tsp
  • berry (no matter what) 0.5 kg
  • lemon 0.5 pcs

Prepare the berry sauce: sort the berries, wash them, dry them, and place them in a saucepan. Add 100g sugar, mix well and set heat to medium. After boiling, cook for another 10 minutes, stirring. Pour the mixture into a blender and finely chop the berries. Add lemon juice (without pulp or seeds).

For the dough: put the chocolate, butter and remaining sugar in a saucepan, put it on low heat and stir until the ingredients are completely dissolved, add vanillin.

Wait until the mixture cools and add flour. The dough should be thick. Add salt to the whites and beat with a mixer. Fold the whipped egg whites evenly into the chocolate mixture. Preheat the oven to 180 degrees. Grease the baking dish with oil and pour in our dough. Bake for 30 minutes. Serve chocolate pie with berry sauce.

Charlotte with plums

  • Plums 400 gr
  • eggs 4 pcs
  • sugar 200 gr
  • flour 150 gr
  • salt 1/4 tsp

The eggs should be at room temperature. Sift the flour through a sieve, add salt and mix. Grease a baking dish with vegetable oil and sprinkle with flour. Wash the plums and cut them into quarters. Beat the eggs with a mixer in a narrow stream, pour in the sugar and stir until completely dissolved, then add the flour.

Place plums in the mold and fill with dough. Preheat the oven to 180 degrees, after 45 minutes the cake is ready. We take it out and cover it with a light towel and let it stand for 10 minutes. Sprinkle with sweet powder. Enjoy your tea!

Shortbread pie with frozen berries

  • flour 350 gr
  • baking powder 1/2 tsp
  • sugar 150 gr
  • vanillin 10 g
  • butter 150 gr
  • 1/2 cup milk (if needed)
  • egg 1 piece
  • salt 1/4 tsp
  • jelly 1 sachet

Let the butter come to room temperature. Stir melted butter with sugar and vanilla until creamy. Continuing to beat, add the egg. Sift the flour, add baking powder and mix salt.

Add to the oil mixture. Knead the dough until a lump forms. The dough should be smooth and elastic; add milk as needed. Roll the dough ball. Let it cool in the refrigerator. We take any frozen berries. Defrost completely, pour the juice into a glass, add jelly and juice or water to make 250 ml. We will use this juice to make jelly.

Take a mold (it’s better if it’s 26 cm in diameter). In the mold, place the dough on it with a layer of berries. Sprinkle with sugar. Preheat the oven to 180 degrees and leave the pie for 40 minutes. Remove from the oven, let it brew and cool, pour in the jelly. You need to pour the jelly quickly and carefully, because it hardens quickly.

Cherry pie with cottage cheese

  • flour 300 gr
  • butter 100 gr
  • sugar 230 gr
  • eggs 2 pcs
  • baking powder 2 tsp
  • vanillin 1 sachet
  • cottage cheese 400 gr
  • cherry 450 gr
  • cream of any fat content 250 ml

Sift flour into a bowl, add baking powder, salt, vanillin, mix. Beat the egg with a whisk, add sugar, stir until smooth. Melt the butter in a water bath. Mix the dry and egg mixture, pour in the butter and knead into a tight dough. Line the mold with baking paper and place the dough there, level it, make sides and pierce with a fork.

Preheat the oven to 180 degrees, put the dough there and bake until golden brown. If the berry is frozen, it will defrost beforehand; if it is fresh, wash it and sort it, and separate the seeds. In a bowl, combine the cream, whip the cottage cheese, then add sugar and vanillin, add the cherries and mix.

Take out the browned pie and let it cool. We crush it well and pour in the mixture and put it back in the oven for another 30 minutes. We take the pie out of the oven, let it cool and we can safely start drinking tea

In our family, I love baked goods, especially those made with shortcrust pastry and with berry filling. That’s why now I would like to share with you the recipe for a berry pie that I made for my family the other day.

The pie came out tender and very tasty. crispy base and light, juicy and flavorful interior.

I made the pie in a larger pan, so the amount of ingredients was multiplied by 2, but if you make the pie in a regular pan, reduce the quantity by 2 times.

For the dough we will need oil, it is better to use butter rather than margarine.


The oil must be at room temperature to make it more convenient to “work” with it.

You need to add 100 g of sweet sand to the butter.


The rest of the sweet sand will be used for the filling.

Add eggs to a bowl with butter and sugar.


Carefully combine the contents until smooth and add flour and baking powder to the bowl.


It should also be taken into account that more or less flour may be required, it all depends on the properties of the flour.

The dough should be elastic, soft and comfortable to work with, so it should be kneaded well.


The dough needs to rest, so I put it in a greased pan and put it in the refrigerator for 15 minutes.

By the way, you can divide the dough and create a closed pie, it all depends on tastes and preferences.


While the dough is resting, you need to take the berries, put them in a saucepan, add the remaining sugar and let the berries and sugar melt.


It should be remembered that sugar must also be added to taste so that the inside does not turn out sour; almost everything depends on the berries that you use in the filling. I have a mix of plums, strawberries, currants and cranberries.

To make the inside thick, I add starch to it, which does not give any taste to the berries, it only makes the filling thick.

The starch must be diluted in water beforehand so that there are no lumps.


And add to the berries. Almost 5-7 minutes and the inside is ready. In general, it takes me no more than 10 minutes to make the inside. It is worth remembering that the inside must cool down; it is not permissible to put it in the mold when it is hot.


We spread the filling onto the dough, which we take out of the refrigerator.


That's all, the pie can be placed in an oven previously preheated to 180C for 40-50 minutes.

It’s better to naturally check the readiness of the pie, because the walls of my pie are thick and they may need more time, it all also depends on the oven.

I left the pie in the oven for 45 minutes, which was enough.

The pie turned out not only beautiful, catchy and summery, but also tender and very tasty.

In the recipe we use the freshest blackcurrant berries, but if you bake the cake outside of its ripening season, then use frozen fruits. For those who decided to add sour reddish currants to the dessert, we recommend increasing the amount of sugar (to taste).

  1. We freeze the butter (butter) in the refrigerator in advance, then cut the frozen product into small cubes, or simply grate it.
  2. Add sifted flour and a pinch of salt to a bowl with chopped butter and begin to intensively mix the ingredients.
  3. Next, add cool (actually ice-cold) water to the mix in small portions, without stopping, at the same time, stirring the dough. As a result, you should get a flexible, soft dough mass.
  4. We transfer the kneaded dough into a baking dish and immediately form sides from it along the edges.
  5. We make light punctures in the dough with a fork, cover with cling film and put in the refrigerator for a while.
  6. While the dough hardens, we will make cottage cheese. To do this, we rub it through a sieve so that it becomes homogeneous in the mixture, however, you can completely throw it as it is - lumps, in general, do as you wish, this is not a fundamental point for the taste of the baked goods.
  1. Now add sweet powder and starch to the pureed curd mass and mix everything thoroughly.

How to cook raspberry pie in the oven

  • Pour yeast into warm (not hot) water (you can replace it with milk), mix everything, then pour ½ of the required amount of sifted flour into the mixture, throw in a pinch of sugar, mix the ingredients until smooth and leave our dough warm for 2-3 hours.
  • When the dough rises, add the remaining sugar, beat in one chicken egg, add salt to everything and mix gently.
  • Next, pour the remaining half of the flour into the dough and begin to knead the yeast dough. The result of proper kneading is elastic, smooth dough that does not stick to your hands.
  • Combine the dough with butter (be sure to be slightly softened), and again knead everything carefully.
  • Leave the finished dough in a warm place for 1-2 hours until it rises well. During the indicated time, try to knead the dough mass 2-3 times with your hands.
  • When the dough has risen, roll out the ball into a layer 1 cm wide, then transfer it to the bottom of a baking sheet greased with butter and leave it there for 10-15 minutes.
  • Then we sprinkle the test base with a small amount of starch, after which we put on it the thawed berries, devoid of excess water, mixed with starch earlier.
  • We also sprinkle the edges of the raspberry interior with starch, then sprinkle the berries with sugar, fold 1 cm of the edges (along the entire circle or perimeter - depending on the shape of your shape) of the yeast dough and pinch them tightly.

  • Place the pan with the future pie in an oven preheated to 220°C and bake it until cooked and lightly browned.

To do this, instead of 1 tbsp. use 1.5 tbsp of water, the amount of other ingredients will also increase accordingly. But you can take a third of the purchased dough to form the top layer of the berry dessert.

  • Sweet powder – 4 tbsp;
  • Soda – 0.25 tsp.

Pie with berries and sour cream: a unique recipe

  1. Sift flour with salt and baking powder.
  2. Add slaked soda and nutmeg to the bulk mixture and mix everything.
  3. In a separate bowl, combine sweet orange juice with Sherry grape wine.
  4. Separately from the other components, beat soft butter (200 g) with regular sugar. Then add chicken eggs to the oil mixture and mix everything.
  5. Pour a mixture of citrus juice and wine into the whipped butter. But keep in mind that you don’t need to pour everything in at once; divide the entire volume into 2 times (approaches).
  6. Now, in 3 approaches, add sifted flour little by little, without ceasing to knead the dough. At the end of kneading, you should have a fluffy, soft and flexible dough mass.
  7. Grease a baking dish (in our recipe the shape is round) with butter, transfer the finished dough into it, and pour the cooked berries on top of it.
  8. Bake the pie with the freshest berries in a preheated oven at 200 °C for 20 minutes.
  9. After 20 minutes, lower the temperature in the oven to 170 °C, and grease the cake itself, or rather its surface, with the remaining softened butter and sprinkle with sweet powder (2 tbsp).
  10. Return the berry dessert to the oven and bake it for another 15 minutes. After this, remove the baked goods from the oven and leave to cool until they reach room temperature.
  11. As a result, beat the sour cream with the remaining sweet powder and grease the top of the baked goods with the purchased sour cream. Place the dessert in the refrigerator for 2 hours, and before serving, decorate it with the remaining berries.
