Do you still buy chocolate covered cheese curds? Then I'm coming to for you! I’m going with my recipe for this ordinary, tasty and healthy dessert, which we will prepare at home with our own hands. Cottage cheese in chocolate glaze is a delicacy that everyone without exception likes, so it’s faster to prepare!

A few words about the products that will be useful to us now. You can use cottage cheese of any fat content (I have 5%), just don’t use watery one, otherwise the inside will also be watery and not dense. You can also add butter of any fat content, but it must be specifically butter, and not margarine or any spread! Everything about condensed milk seems to be clear, but if you wish, you can create it yourself using this recipe.

Regarding chocolate: personally, I prefer bitter chocolate (ready-made cheesecakes actually don’t have the corresponding bitterness), but you can take milk chocolate so that the dessert comes out just like in the store. But for me, industrial chocolate-covered cheesecakes are very sugary, specifically because of the sweetest glaze given to us. Vanillin is a purely voluntary matter and is needed only for a slight scent.

Pour water into a saucepan (about 2-3 fingers deep) and bring it to a boil. Place a bowl of chocolate inside so that its bottom does not touch the boiling water.

Melt the chocolate, stirring until it turns into a one hundred percent homogeneous mass.

Keep the melted chocolate in a water bath, removing it from the stove. We take a suitable brush (I have a construction brush - I bought it, washed it well and dried it, and now I use it only for culinary purposes). Silicone, by the way, is not particularly comfortable to apply chocolate.

Depending on your desires and abilities, we select molds for future curd cheeses. It doesn’t matter what shape and size they are, the main thing is to use silicone ones. I have 80 ml muffin tins - 5 pieces. Coat the inside of the molds with melted chocolate so that a fairly thin layer comes out. If there are some unmarked areas, it doesn’t matter – we’ll hide the flaws later.

Place the molds in the freezer for 10 minutes to allow the chocolate to set.

Then we apply the 2nd layer - the work is quite dirty, you can perfectly smear your hands with chocolate (you will wash it later). Try to create an even layer on the bottom and along the edges. Again, place the molds in the freezer for another 10-15 minutes - it’s most convenient to immediately place them on a board or flat dish.

In the meantime, let's create the curd filling for the cheesecakes. Here everything is even simpler: put cottage cheese in a bowl, add 50 grams of soft butter (take it out of the refrigerator in advance), condensed milk and a pinch of vanillin for flavor.

Blend everything with an immersion blender until smooth and homogeneous. The mass is not very dense, but at the same time it is not watery - like fatty sour cream. It holds its shape unsurpassedly and does not flow. If you don’t have a specific immersion blender, you can, of course, use a regular blender. In this case, you MUST rub the cottage cheese through a sieve, preferably twice, otherwise you won’t get a smooth mass. The curd inside for homemade cheesecakes is ready.

By this time, the chocolate icing has set and hardened - you will not only see it, but also feel it when you take the molds in your hands.

We fill the molds with the curd mass, slightly short of reaching the top (we still need to create the bottoms of the curds).

Carefully level the curd filling with a knife or spatula so that there is no slide - this is for aesthetes.

All that remains is to apply melted chocolate to the curd mass, which we always kept in a water bath (but not on the stove!). I calculated the amount of chocolate icing so that it was enough for all 5 cheesecakes. In this way, we cover all the preparations with chocolate and again put everything in the freezer for another 15 minutes. If you do not plan to eat everything right away, put the curd cheeses in the refrigerator for several hours.

When the top layer (aka the bottom) sets and hardens, you can enjoy dessert. How to remove silicone molds? Yes, it’s simpler than usual: you bend the edges of the molds down, and then turn them over directly onto a plate.
