In order to fry truly golden-brown potatoes, and not cook potato porridge, it is important to keep certain points in mind. I am happy to share all my knowledge and experience with you in recipes, and this one will be no exception.

And one more thing: tasty fried potatoes come only from varieties suitable for frying. Choose dense tubers with yellowish flesh - those varieties that do not contain a lot of starch. I can barely guide you by the titles, but our entire family has been giving preference to the Scarb variety for many years.

To make this ordinary, tasty and satisfying second course, we will need the following ingredients: potatoes, oyster mushrooms, onions, refined sunflower and butter, fresh dill, salt and ground dark pepper.

First, let's take care of the oyster mushrooms (300 grams): carefully wash them under cool running water. Tip: do not put mushrooms in a bowl of water - they will immediately absorb the liquid! We transfer clean oyster mushrooms to paper napkins or a towel to remove excess water (there is no need for water when frying).

Then we separate the bunches into individual mushrooms. If the oyster mushrooms are large, cut them smaller. They write that the base and legs of oyster mushrooms are quite dense, so some people simply cut them off and throw them away. I think it depends on the maturity of the mushrooms. For example, I bought fairly small and young mushrooms, so I used everything without a trace.

In a wide and deep frying pan, heat a couple of tablespoons of vegetable oil without aroma and add the cooked oyster mushrooms. Fry over high heat, stirring, for about 5 minutes.

At the same time, peel and chop a medium-sized onion into cubes.

Are the oyster mushrooms covered with a golden crust? This means they are actually ready.

Add the chopped onion and, stirring constantly so as not to burn, fry the mushrooms over a slightly lower than medium heat.

When the onion browns and a pleasant smell appears, add a teaspoon of butter and season with salt and pepper (to taste, of course).

Another minute and the oyster mushrooms are ready. We transfer them to a plate to free up the pan for the potatoes. If you have a 2nd (3rd, 4th...) frying pan, just leave the mushrooms in this one for us.

Now it's the potato's turn. 800 grams is already in purified form. Cut each potato into fairly large pieces.

We immediately put them in cool water so that they do not darken, after which we rinse thoroughly under running water to wash off excess starch - it is because of them that the potatoes begin to stick together and fall apart when frying.

An important point: dry the potato bars on a clean and dry kitchen towel, cardboard napkins or cardboard kitchen towels. Try to create such a way that a small amount of water remains on the potato slices. Water droplets shoot out in hot oil!

Pour about 100 ml of sunflower oil into the frying pan (more is better than less), heat it well. As soon as a corresponding light, slightly noticeable smoke appears above the oil, you can add the potatoes. It is imperative to fry it without a lid over medium heat until the lower part is browned. And another important point: do not stir!

What is the secret so that fried potatoes do not fall apart and turn into stew? It's simple: it needs to be stirred as little as possible and salted at the very end of production. During every frying I stir it 3-4 times, and even then, very, very carefully. Well, don’t skimp on the butter – potatoes love it very much.

Try a couple of slices: if the inside of the potato is soft, it's ready. Without removing the pan from the heat (I do this only for the photo), add the fried mushrooms and onions.

Salt and pepper to taste (we already seasoned the oyster mushrooms, remember?). For our family, half a teaspoon (maybe even less) of salt and a pinch of pepper is completely enough. I pepper already prepared food for myself because my husband doesn’t like it.

Mix carefully and sprinkle with chopped dill if desired. Arrange in portions using a slotted spoon (a large one and a wide spoon with holes) so that excess oil remains in the pan.

Delicious? Very! Nourishing? Not that word! But sometimes you’re so hungry for fried potatoes with mushrooms that you don’t think about calories at all.
