From one pack of cottage cheese and the same amount of sour cream by weight comes out a fairly decent portion of very tasty, crumbly homemade cookies. I liked the recipe because it is as simple as possible and does not require grinding the cottage cheese through a sieve (I must admit, I don’t really like this). All you need to do is mix all the ingredients, shape the liver into the desired shape and put it in the oven. The only point you should pay attention to is the amount of flour.

Maybe you, like me, will be surprised by the presence of both soda and baking powder in the ingredients. This also puzzled me, but I did not deviate from the recipe and added both powders. Perhaps this is why the finished cookies later became loose and crumbly... But it seems to me that they could have simply increased the amount of either the first or the second component. But let's take things in order.

What do we need for cookies?

  • cottage cheese – 1 pack (180g);
  • sour cream – 180g;
  • sugar – 70g;
  • butter – 70g;
  • eggs – 2 pcs;
  • soda – 1 tsp;
  • baking powder for dough – 1 tsp;
  • flour - about 400g.

How to make very tasty cookies from cottage cheese and sour cream

  1. We will need soft butter, but it is better not to heat it, but to take it out of the refrigerator in advance. Place cottage cheese, sour cream in a bowl, break eggs, add baking soda and sugar. I think it is necessary to write about the fat content of milk products. Cottage cheese is suitable for any fat content, but not low-fat. I absolutely try to avoid low-fat, because in fact it is the least necessary, it’s better to buy a low-fat one. Sour cream is suitable at 15-20%, it is moderately thick and will not very thin the dough.
  2. Mix everything well with a fork. We get a watery mass with pieces of cottage cheese.
  3. First sift the flour into a separate bowl, and then add it in parts to our mixture. Why in parts? Because flour can be different in its quality, characteristics and storage conditions: some contain more water, some are drier, the gluten in it may be different, then more or less of it may be needed in the dough. Therefore, we add a little at a time, mixing well after each addition, until we feel that the dough can be collected into a ball.
  4. The mixture will make the cookie dough somewhat sticky. This can be any kind based on cottage cheese, made according to any recipe. It will slightly stick to your hands, but there is no need to add more flour. Because it’s very easy to “beat” the dough and later the finished cookies will be dry, hard and with a floury taste. We'd better add a little more onto the board when rolling out.
  5. Place the lump on a board dusted with flour. Cut into 4 parts.
  6. Roll each one out with a rolling pin into a layer about 5-7 mm wide. We cut out the blanks using shaped cookie cutters. If you don’t have any cuttings, you can cut out mugs with a glass or not roll them into a layer at all, but roll them into a sausage and cut crosswise into pucks. This does not affect the taste of the cookies in any way.
  7. Line a baking tray with baking paper and place the cookie dough pieces on it at a certain distance from each other, but not too much. These cookies don't grow much in size.
  8. Bake in an oven preheated to 200°C for 15 minutes or until the cookies are light golden brown. Don't overdo it! When hot, it will be very soft and may seem like it is not yet baked. But when the cookies cool, they will harden slightly. But if you keep it in the oven, it will not just harden, but may turn into a cracker.

By the way, those grains of cottage cheese that are noticeable in the photo of the dough above are not noticeable at all in the finished cookies. I have had this regular recipe for cottage cheese cookies for quite a long time and often bake using it. The dough is easy to prepare, and to avoid kneading it with your hands, you can use a stand mixer, food processor or bread maker. Then this process will take even less time.

My cottage cheese cookies are round in shape because I cut out the dough with an ordinary glass. But you can create an imprint on cookies using the tools at hand. Crystal glasses have a pattern on the bottom, with which you can create a beautiful imprint on the blank or use an ordinary mold with a smaller diameter than our circle. You can do it even simpler by lightly making a cross - crosswise with the tines of a fork. I used ordinary plungers for mastic in the shape of a flower.

Next I add vanillin and either vanilla extract. Then I add flour with baking powder and salt. Then I knead the soft dough.

According to the mixture, it does not have to be filled with flour; it is better to be softer if you want tender and soft baked goods. You can add a little more sugar if you like it sweeter.

Before forming homemade cottage cheese cookies, cover the finished dough with film and put it in the refrigerator for an hour; during this period of time it will cool down and it will be easier to work with.

Then I divide it into three parts, two of which I return to the refrigerator and work with the remaining piece. I lightly sprinkle the working surface with flour, roll out the dough 0.5 - 0.8 cm wide, cut out cookies of any shape and squeeze out a sketch of a flower onto them with a plunger.
