And to give the sweet dessert a new twist, add all the possible fruits and berries that are in season. Take cherries, for example: these berries are quite sour and are eaten mainly after heat treatment. But how delicious desserts are made with this red berry! Have you tried the “Monastery Hut” cake? If not, be sure to try. But now we will talk not only about a tasty, but also a very healthy dessert. Cottage cheese casserole with cherries, the recipe for which we will now analyze, comes out very tender, airy, fragrant, with pleasant sweet and sour notes. The entire manufacturing process will take approximately 1-1.5 hours. It is better to bake the dish at low temperatures so that it is perfectly baked in the middle, but does not burn on the outside.

Ingredients:

  • Cottage cheese (preferably soft, without lumps) or unsweetened curd mass - 1 kg;
  • Testicle - 4 pcs.;
  • Sugar - 1 tbsp;
  • Vanilla sugar or vanilla extract - 1 tsp;
  • Semolina - 3 tbsp;
  • Flour - 3 tbsp;
  • Baking powder for dough - 1 tsp;
  • Sour cream with a fat content of 15-20% - 3 tbsp;
  • Cherry - 40-50 pcs. ;
  • Corn starch (better) or potato starch - 2-3 tbsp;
  • Caramel topping for decoration - 3-5 tbsp.

Recipe for cottage cheese casserole with cherries in the oven

1. The properties of the cottage cheese will determine how soft and tender the casserole itself will be. Try to choose homemade cottage cheese; the lumps should be soft and easy to rub between your fingers. If you buy it in a store, don’t opt ​​for a cottage cheese product - it’s a cheap palm oil substitute and has nothing in common with natural healthy cottage cheese.

We transfer all the cottage cheese into a huge bowl, in which the main preparation of the mass for the casserole will be made. To make the mass more homogeneous, it is better to grind it through a fine sieve.

2. Add sweet sand to the cottage cheese and add vanilla sugar for flavor.

3. Beat in chicken eggs. Start blending using an immersion blender. It is not necessary to achieve a very uniform structure, this is optional.

4. Immediately add semolina and mix the mixture. Leave for 10 minutes.

5. Add wheat flour and baking powder. Blend the mixture again with a blender.

6. At the end, add sour cream, thanks to it the casserole will be slightly moist, not dry. Beat with a blender again until smooth.

7. We use silicone or iron mold. The latter must be lubricated with vegetable oil. The bottom can be covered with parchment if desired. Transfer half of the curd mass into the mold.

8. Wash the cherries and remove the pits. Then roll the berries in starch so that it absorbs the juice during baking. This way the berries will turn out like jelly. You can add a little sugar to the starch if the cherries are very sour.

9. Place the berries in the mold with cottage cheese.

10. Place the rest of the mixture on top and level with a spoon.

11. Place in an oven preheated to 170-175 degrees and bake for approximately 40-50 minutes. The higher the casserole, the longer it will take to cook. Check for doneness by piercing the center with a toothpick. If the toothpick remains clean, without traces of curd dough, the casserole can be removed from the oven. Let it cool for 10 minutes, then carefully remove it from the mold.

In my family, everyone loves both casseroles and cheesecakes, and they also love lazy dumplings - in general, cottage cheese never goes away. I like to create casseroles with various types of berries, fruits or dried fruits. In the summer, you can, of course, use the freshest berries and fruits, but in the winter you can get by with supplies - frozen pitted cherries, strawberries, etc. You can serve the casserole with sour cream or any syrup.

Prepare all products according to the list. Choose cottage cheese with any percentage of fat content - whatever you like best.

For a large casserole of 8 servings, you will need:

  1. 500 g of cottage cheese with a fat content of no more than 5% (don’t forget to count calories)
  2. 3 testicles
  3. 3 tbsp. l. Sahara
  4. ½ packet vanilla sugar
  5. 4 tbsp. l. flour or semolina
  6. 250 g fresh or frozen cherries
  7. Sweet powder for serving
  8. Butter for greasing the mold

You see, there are very few ingredients and they are all available. If desired, you can add ground cinnamon or a teaspoon of lemon zest to the cottage cheese casserole. The latter must be rubbed as carefully as possible so that snow-white veins do not get into the dough, which will give it a nasty bitterness.

Step-by-step recipe for cherry casserole

Step 1: Knead the cottage cheese thoroughly with a fork until smooth. If you have the time and desire to get your hands dirty on a weekend day, beat him with a blender - this will make him very affectionate.

Step 2: Separate the egg whites from the yolks. First, using a whisk or fork, beat until stiff peaks form. To make the process go faster, use fresh, cool eggs. Her one hack is to add a pinch of salt to them.

Step 3: combine cottage cheese with egg yolks, sugar and vanilla. Add flour or semolina. If you are firmly on the PP, use cornmeal. Knead into a homogeneous dough.
