  • The dough should spring back when pressed. To make the mixture elastic, flour should be added evenly on a tablespoon;
  • Additional ingredients, such as dried fruits, nuts, candied fruits, are placed in the dispenser. If it is not there, then the components are laid according to the signal;
  • After the baking time is over, the cake should be kept in the bread machine for about 20-30 minutes. Easter bread needs to brew!

This recipe for Easter cake in a bread maker is my attempt to convince myself or even justify to myself that making similar homemade baked goods is completely possible, even with the miracle helper given to us. At the same time, I must see that the result not only amused me, but also impressed me. The Easter cake in the bread maker came out very tall, shaggy, tender, savory and fragrant. I chose a recipe for Easter cake in a bread machine that is quite simple and based on completely available ingredients. Instead of milk, you can use low-fat (10%) cream or whey (after making curd eggs there is always a significant amount of it left). As a tasty addition, choose what you like best - I took homemade candied fruits or dried cranberries. You can add raisins or other dried fruits and nuts. I flavored the dough with orange zest - this is an optional, but very successful ingredient.

The recipe for Easter cake in a bread machine includes the following ingredients: premium wheat flour, milk (any fat content), chicken eggs, sweet sand and sweet powder, any candied fruits, dried cranberries, butter, orange zest, lemon juice, instant yeast (tea spoons under a knife or 6 grams), salt and a little vanillin (can be replaced with a teaspoon of vanilla sugar). All products should be at room temperature.

Depending on the bread machine model, the sequence of placing goods may vary. I use the watery ingredients first, then the dry ones. Pour milk into the bread machine container, add melted and cooled butter.

Wash and dry chicken eggs. We break them into a separate bowl, after which we take half of 1 egg white from the total size - we will need it for making icing for the finished Easter cake. Pour everything else (3 yolks and 2.5 whites) into the milk and butter.

Next add orange zest, crushed on a small grater, and a pinch of vanillin. Let's all chat a bit.

Finally, sift the premium wheat flour into the bowl. I hope you realize that this amount of flour is a relative concept: you may need a little more or a little less. This depends not only on the moisture content of the flour, but also on the size of the chicken eggs.

Pour sweet sand, a little salt and instant yeast into different edges of the container. I just didn’t inspect dry yeast and fresh (pressed) yeast for this recipe, so I can’t say anything about the likely outcome.

Place the container in the bread machine and select the French bread program. Time 3 hours 50 minutes. Crust – medium, loaf – 900 grams. If you don’t have such a regime, focus on those that exist. I advise you to use one that takes at least 3.5 hours to bake, because our yeast dough is rich and needs to be fermented well. The bread maker needs the first 15 (or maybe 17-20, I literally didn’t time it) minutes to knead the dough and form a bun. This is where she might need your help. If the wheat flour is very dry, you need to add a little more milk. And when you see that the bun is very watery and does not want to gather into a ball, add a little flour. The dough for Easter cake in a bread machine comes out very soft, tender and shiny. It holds its shape, but at the same time it slowly begins to spread to the sides. You should not fill the dough with excess flour, otherwise the finished baked goods will be dense, not very high and not as airy as you would like. After what time will our assistant give a signal that it is time to pour in the additives. I have homemade candied pumpkin and kiwi, and also dried cranberries. I sprinkled the dried fruits with a tablespoon of wheat flour and simply added them to the dough. The bread maker continues intensive kneading.

This is what the bun for the upcoming Easter cake looks like. It has noticeably thickened, but with all this it still remains quite soft. Next, the dough will ferment in the bread maker.

The next step is completely optional, but I do it from time to time. Just when you hear that the bread maker has begun the final kneading before the final proofing of the workpiece, wait until the blade has finished rotating. Take out the bun and carefully round it, placing it exactly in the center. Some chefs even remove the spatula so that there is no unsightly dent on the bottom of the finished baked goods. But, to my chagrin, over time the shoulder blade did not come off, so it is constantly out of place. Now do not open the lid until the end of the program.

When the cooking time is up and the bread machine beeps, feel free to open the lid and see what happened. This is how our Easter cake rose! It actually rested against the lid - I haven’t had one for a long time.

We immediately take out the bucket along with the Easter cake.

Let the hot baked goods stand for a few minutes, then remove from the container. Tall and ruddy handsome, a delight to the eye.

And here is a view from the other side - you see, his roof was slightly blown off. This happens from time to time if the dough is not sufficiently proofed. However, this is not critical for the cake, because we will still be covering it with glaze.

Usually, Easter cakes are cooled on their side, especially if they turn out to be very tall. I did so.

While the Easter cake is cooling, prepare the sweet glaze. To do this, simply combine the sifted sweet powder with half the protein and carefully grind everything with a spoon, fork or spatula until the powder is completely dissolved. At the end, add a little lemon juice and mix everything well again. The glaze should be uniform, smooth and shiny. You may need more or less sweet powder depending on the size of the protein. If you want a thicker glaze, add more powder evenly.

Cover the cooled cake with sweet glaze and, if desired, decorate with confectionery sprinkles or other decor of your choice.

Usually, Easter cakes are prepared the day before the holiday, in other words, the baked goods are allowed to brew and ripen. Then it has the most intense taste and smell. We took a sample after the baked goods had cooled and the glaze had dried out slightly.

Do you see how airy, shaggy and fibrous the crumb is? In fact, the Easter cake in the bread machine not only amused us with its taste and smell, but also pleasantly surprised me with the result. I really prepared it and didn’t have much hope for such a wonderful result.
