Homemade juices are an excellent way to preserve vitamins (a group of low molecular weight organic compounds of relatively simple structure and varied chemical nature) for the winter. I prepare plum juice in two versions - with pulp and without pulp. Why, then, do I use 2 different methods of making it. Plum juice with pulp is prepared using a juicer (or by hand), you can see its recipe here. Transparent juice of the most beautiful color is brewed using a juicer. Therefore, first, for those who have not encountered this unit, I will tell you what a juice cooker is and how to cook juice in it completely. And later, below, I will share a recipe for plum juice for the winter.

What is a juicer

A juice cooker is a system of 3 parts, externally similar to pans, which are placed one on top of the other. The bottom one, in principle, is a pan.

The middle one is a container for collecting juice. The center of its bottom looks like an inverted funnel. Outside, close to the bottom, there is a faucet with a silicone tube for draining juice, which has a clamp.

The upper part looks like a colander. Its bottom and sides are perforated.

Juice cookers are usually produced from two types of materials - aluminum and stainless steel. The best option is 2nd.

How to cook juice or how a juicer works

Ordinary tap water is poured into the lower part of the juicer. Then the middle part with the tap is placed on top of it. It should be clamped at this point. Fruits are cut into pieces and placed in the upper, perforated part of the juicer. This entire pyramid is placed on a slab. You need to place a saucepan or bowl nearby, the height of which will be lower than the height of the tap for draining the juice. The tube is lowered into this pan or bowl.

When the water boils, steam from the lower pan enters the upper part through the hole in the middle one (the juice collector) and the fruits begin to steam, releasing juice. The juice flows through holes in the walls and bottom of the upper part of the juicer into the middle (juice collector). When the juice level in the juice collector reaches the height of the faucet, you will see it in a transparent silicone tube.

At this point, you need to remove the clamp and let the juice flow freely into a pan (bowl) placed nearby. The first part of the juice is considered not very rich, so it is advised to put the clamp back on and pour the first batch of juice back onto the fruit. After that, you can remove the clamp and go about your business, the juice will evenly flow out and drain without the help of others.

Fundamental aspect! There must be plenty of water in the bottom pan so that it does not boil over. It is better to keep the fire moderate. It is not correct to think: more fire - more juice. That's right: the more the fire, the faster the water boils away. And this is unsafe.

In almost all recipes, when they talk about how to cook juice in a juicer, they advise putting sugar immediately in a container with fruit, and pouring the juice straight into jars. This option seems inappropriate to me. Firstly, it is impossible to find the sweetness of the juice in advance. Secondly, I prefer to boil the juice again later to guarantee its sterility, which means both shelf life and properties. It is at this step that I add sugar, and then pour the juice into sterilized jars.

Basically, everything is about the juicer. It's time to make juice!

Plum juice for the winter

Ingredients:

  • plums;
  • sugar.

Making juice:

We thoroughly wash the plums under running water. Cut in half and remove the seeds. At the same time, we check for the presence of worms inside. Place the cut plums in the upper part of the juicer.

Pour water into the bottom one to 2/3 its size.

We install the entire system on the stove, place a saucepan under the clamped tube and turn on moderate heat.

When the juice becomes visible in the silicone tube, remove the clamp and let the first batch of juice flow into the pan. Then we put the clamp on again, and pour the first batch of juice back onto the plums. She is considered bad. Although every time I have doubts about whether it’s necessary to do this...

Then we remove the clamp completely, and the juice will flow into the pan on its own as it accumulates.

Plums are a fruit that gives a lot of juice. From the full drain container (the upper part) I get at least 3 liters. plum juice for the winter.

Fundamental aspect! Based on the amount of juice released by the fruit, choose a container (pan, bowl) of the appropriate size!

Cook the juice for approximately 1 hour. In order to determine whether the plum has given all the juice or not, you just need to hold the tube with a clamp and see whether the juice accumulates in it, and what its color is. If it still accumulates, but its color has become much lighter, then it is no longer worth collecting such juice. There is a lot of condensation in it.

Turn off the fire under the juice cooker and place the pan with the juice opposite on the stove. You need to taste the juice and find out how much sugar you need. Bring the juice to a boil, add sugar, stir, cook for another 5 minutes and turn off.

We will pour the juice into sterilized jars. I already mentioned how I sterilize them in the oven in the recipe for apricot juice with pulp.

I put the jar in a deep bowl, under which I put a potholder or a cloth so that it does not slip. A bowl is needed in case the jar bursts or the juice spills past, generally for safety purposes. Everything is very hot, both the juice and the cans.

I twist the jars with a machine. I previously boiled the lids for the jars in water.

I turn the rolled up jars upside down, wrap them up and leave them to cool as is.

Fragrant plum juice in a juicer

We prepare the most delicious plum juice without pulp.

  • plums - 3 kg;
  • sweet sand - 100 g.

The first thing you should check is that the valve of the juice cooker is closed tightly so that the steam does not escape from it, but processes the fruits. The rubber hose should be closed with a clamp.

  1. Wash the selected fruits to prepare plum juice for the winter in a juicer.
  2. Pour water into the apparatus and let it boil.
  3. After it boils, throw the cooked whole fruits into a colander, cover with a lid, put the juicer on low heat, and leave the apparatus for an hour.
  4. Wait an hour, place a juice container under the hose and remove the clamp.
  5. Then you need to add sweet sand to the container. The ratio of sugar and purchased juice should be about 100 g per 1 liter.
  6. Boil the sweetened juice for 5-7 minutes.
  7. Then pour the freshly prepared juice into pre-sterilized jars.
  8. Turn the closed jars upside down, cover them with a blanket or wrap them in thick cloth (A collection of different and interacting tissues form organs) .
  9. Wait until the juice has cooled, after which it should be placed in the pantry or basement for storage.

The drink obtained from the juicer can be added to jelly and compotes.

There is no need to overcook fruits in the juicer, because the juice may not be very tasty.

Recipe: plum juice in a juicer with pulp

Ingredients for 1.5 liters of juice:

  • plums - 4 kg;
  • sugar - 300 g.

Let's start preparing:

  1. Wash, dry and remove seeds from the fruit.
  2. Then put the plums in a juicer and cook the juice.
  3. Then pour the resulting juice into a saucepan with sugar, add the resulting pulp.
  4. Bring to a boil over low heat.
  5. Wait about 3 minutes, pour into containers and roll up.

Juice with pulp is useful because it contains many necessary components, for example, pectin, fiber and almost everything else, and drinking plum juice with pulp in winter is especially useful.

Juice from plum halves

Useful:

  • plums (pitted);
  • sugar - 90 g per 1 kg of plums.
  1. Pour at least 2.5 liters into the juicer. water and bring it to a boil.
  2. Rinse the plums and remove the pit, dividing the plums in half.
  3. Then load the plums into it and reduce the heat.
  4. Cooking lasts about an hour, after which add sugar.
  5. Pour the juice into sterilized jars in advance, boiling them beforehand.
  6. Turn them upside down, cover with a thick cloth (A collection of different and interacting tissues form organs) , close them with a lid and cool.

The water is constantly bubbling in the bottom saucepan, which means it may boil over. As you should, lift the saucepan from time to time and check the amount of water. And, if you need to add water, then place the stewpan on a plate or roast stand prepared in advance.

The mass must cool slightly, then it is ground through a sieve. Add water and pour out all the sugar, mix well and put on fire. Bring to a boil, remove any foam that forms. After the mixture boils, reduce the heat and boil for another 15 minutes. The roast is poured into jars, covered with lids, rolled up and put away under a warm shelter until it cools.

Plum juice with pulp through a juicer

If you have a juicer at home, the process is easier. You will need 3 kg of plums and 0.5 kg of sugar.

The fruits are pitted, washed and the juice is squeezed out. There is no need to throw away the remains; they are filled with water, boiled for a couple of minutes and combined with the squeezed out liquid.

Then the purchased size is measured and water is added at a ratio of 1:1. Place on the fire, bring to a boil, pour out the sugar. After dissolving it, boil for 5-7 minutes.

When hot, pour into jars and roll them up. Then they put it in a black space on the lids until it cools completely. Cover the top with an old blanket or towels. Afterwards they put it in the cellar.

Sugar-free plum juice for the winter

To make the drink you will need: 2 kg of fruit.

Wash the plums in cool water and place in a prepared container. Heat to 70 ⁰C and leave for 10-15 minutes. Squeeze out the juice using a bag made of gauze. In order for all the liquid to drain, it is suspended and a container is placed under it into which the juice will drip. From time to time you should step up and push it out.

Combine all the liquid together and pour into jars. Sterilize at a temperature of 85 ⁰C for 25 minutes. At the end of the process, close the lids. Leave in a dark place until it cools completely. Cover with a blanket or blanket.

Apple-plum juice - a recipe for the winter

Making mixed types of juices is common among almost all housewives. The taste of the finished product improves, and the desired composition increases. By combining apples and plums, you get a vitamin cocktail for the winter. To prepare it, you will need: 1 kg of plums, 0.5 kg of apples, 4 tbsp. spoons of sweet sand.

While the juice is preparing, sterilize the jars and lids. Fill the jars or bottles with juice to the very top, close, and roll up. Turn the jars over, wrap them, and leave them until they cool completely.

The juice is perfectly stored in a city apartment. It comes out thick, fragrant and very tasty. And the most important thing is that you understand what it is made of.
