Chicken roll with cheese and prunes
Chicken roll with cheese and prunes
Chicken roll is prepared very simply, quickly, using commonly available ingredients. The dish has a narrow, unique taste. All this makes chicken roll just a godsend for any formal table, when you want to amaze guests and vary the taste range of dishes. You can also stick skewers into the sliced roll plates and serve them with success as an aperitif or appetizer at buffets and banquets.
- 600 gr. chicken breast
- 150-200 gr. hard cheese
- 200 gr. prunes
- 2-3 tbsp. l. mayonnaise
- dark ground pepper
- salt
- Before you start making the chicken roll, you should prepare the prunes. If you get prunes with seeds, then remove the seeds; if the fruits are very dried, then soak them in water for 10 minutes.
- While the prunes are soaking, let’s deal specifically with the chicken breasts. I used three small breasts, each about 200 g each. First, we wash them under running water, then cut off all the films and veins.
- For a chicken roll, it is better to have as large a layer of chicken meat as possible. To get exactly these layers, we cut each breast with a knife from the side, but not all the way. Next, open the trimmed fillet like a book.
- We beat off our open “books” with a kitchen hammer. To prevent meat splashes from splashing all over the table, it is better to do this by covering the breasts with a piece of cling film in advance. You should beat it painstakingly, but without fanaticism, so as not to make holes in the fillet.
- Lubricate the fillet with mayonnaise over the entire surface, salt and pepper.
- Place prunes on the chicken fillet. We place them at a similar distance from each other. Remember that the chicken rolls will have to be rolled.
- Grate the cheese on a large grater and sprinkle it liberally over the entire surface of the upcoming roll.
- Carefully roll up the chicken roll. We turn the edges inward.
- What comes out is this beautiful and plump chicken roll with cheese and prunes inside.
- After the first chicken roll, roll up all the others. Place the rolls on a greased baking sheet.
- Place the chicken rolls in an oven preheated to 200ºC and bake for 25-30 minutes. Naturally, you can bake the roll in foil, but personally I like it when the meat has an appetizing golden side, so in this case I prefer not to use foil. For extra golden brownness, you can brush the chicken rolls with egg.
- After 25-30 minutes, the delicious chicken rolls are ready. They can be removed from the oven and served.
- If you plan chicken rolls as one of the main dishes, then, naturally, they need to be served hot, when there is still viscous melted cheese inside. In this case, if you plan to serve this dish as an aperitif, you should wait until the meat has cooled and the cheese has hardened. Then the rolls can be cut into even, beautiful pieces.
- Chicken roll with cheese and prunes comes out tasty, tender and juicy. A good cheap, but very impressive dish for a holiday.

To make the chicken roll, wash the chicken breast meat. Remove any remaining bones and skin. 1 chicken breast (half) must be cut so that a thin single layer of meat without holes comes out. Imagine a folding children's book made of 3 halves. This is roughly how you should cut the meat. Divide the meat horizontally into 3 parts in your mind. From one edge to the other we make a cut, cutting off the first part of the book, but do not cut to the end. You will end up with a book with halves of unequal thickness. Now cut off more boards from the thicker part, starting from the center of the layer to the edge. We will get a single layer of chicken fillet without holes.
Beat the purchased layer of chicken fillet with a hammer. Transfer the meat to cling film. Salt it and pepper it.
Grate hard cheese. Choose the saltiest types of cheese so that the finished dish has a distinctive taste. Do not use cheese product. Not only is this product not healthy, but it also doesn’t hold its shape when baked. Place grated hard cheese on a layer of chicken fillet. Wash the prunes under running water. Remove seeds and tails. Place the prune pulp on the edge.
Roll the meat, using film for yourself, into a roll. There is no need to pinch, pin or tie the roll.
To ensure that the roll is perfect after baking, sprinkle reddish ground paprika on top. Transfer the roll to a sheet of foil. It should be lubricated with oil.
Wrap the roll in foil so that it is tightly wrapped and the juice does not leak out during baking. Perform the above function with each piece of chicken fillet.
Transfer the roll to a baking sheet. Preheat the oven to 180 degrees. Bake until done for 40 minutes.
From 2 halves of chicken fillet you will get two large rolls, which can be cut into 10 large pieces at the rate of 2-3 pieces per serving. Allow the roll to cool thoroughly after baking. Cut the cooled roll to taste. I do not recommend cutting the hot roll. The cheese will still be hot. Meat too. The roll may lose its shape. It is imperative to cut the roll when it has cooled down. This roll is perfect as a tenderloin for a holiday, and you can take it with you to a picnic.
