Traditional sponge cake with kefir

There are a huge number of options for kefir sponge cake, their composition and proportions of ingredients vary slightly. Below is an option with a proven traditional composition, but it can simply be transformed into lemon, vanilla, chocolate or another by adding the appropriate component (vanilla, cocoa, zest or raisins).

The traditional proportions of ingredients will be as follows:

  • 2 testicles;
  • 100 g sugar;
  • 100 g butter;
  • 500 ml kefir;
  • 5 g soda;
  • 320 g flour.

Baking step by step:

  1. Grate the butter onto a coarse grater, and then grind with a whisk along with sugar and eggs. Add 1/3 of the flour to this mixture and whisk everything again.
  2. Next, pour the drink mixed with soda into the dough, stir and evenly add the remaining flour, bringing the mixture to the thickness of sour cream.
  3. Bake in a greased pan at 200 degrees for about 40 minutes. Allow the finished biscuit to cool for five to ten minutes in the switched off oven, then cool on a wire rack.

Vanilla sponge cake with kefir

Even if the cake baked according to this recipe is not destined to become a cake, the enchanting smell of vanilla will still make it a confectionery masterpiece, capable of adding warmth and homely comfort to family or friendly gatherings over a cup of tea.

For vanilla sponge cake with kefir you need to prepare:

  • 3 testicles;
  • 200 g sugar;
  • 200 ml kefir;
  • 100 g butter;
  • 5 g vanilla sugar;
  • 5 g slaked soda;
  • 260 g flour.

Bakery:

  1. Beat butter and sugar with a mixer until white. Then, continuing to beat, but at low speed, add one egg at a time.
  2. Next add vanilla sugar, slaked soda and flour. Stir thoroughly. This can be done with a mixer or a silicone spatula.
  3. Add the drink to the last part of the dough. Stir the mixture; the mixture should be slightly thicker than for pancakes.
  4. The biscuit should be cooked at 200 degrees in the oven for about 30-40 minutes. Cool the finished cake on a wire rack.

Chocolate sponge cake

Fans of chocolate baking will enjoy a sponge cake with a rich cocoa flavor, but especially easy to make. A shortbread baked according to this recipe can become the basis of a real cake, delicious chocolate cakes, or simply a simple addition to tea.

What you need to take for the test:

  • 2 testicles;
  • 200 g sugar;
  • 200 ml refined vegetable oil;
  • 200 ml kefir of any fat content;
  • 100 g cocoa powder;
  • 14 g baking powder;
  • 205 g flour.

How to make chocolate sponge cake:

  1. Place sugar, butter, drink and eggs in one container. There they should be shaken well. There is no need to beat the mixture; a couple of strokes with a hand whisk will be enough to make the mixture homogeneous.
  2. Sift the remaining bulk dough ingredients into a separate bowl and mix thoroughly. It is necessary to achieve an even distribution of cocoa and baking powder in the flour, as well as in the dough.
  3. Combine both components, adding dry ingredients to the watery ones in small portions. Transfer the well-kneaded dough onto a prepared baking sheet or into a baking dish.
  4. Cook for about 40 minutes at 180-200 degrees, depending on the operating characteristics of a particular oven. Readiness is determined by testing with a dry toothpick.

No added eggs

Allergic reactions to eggs are not yet a reason to give up tender and airy baked goods, because there is a fairly simple recipe according to which you can bake a delicious sponge cake without eggs using kefir. The eggs in the biscuit dough will be modified with 2 other products - vegetable oil and baking powder.

The proportions of ingredients will be as follows:

  • 200 g sugar;
  • 240 ml kefir;
  • 320 g wheat flour;
  • 14 g baking powder;
  • 105 ml vegetable oil.

Steps for kneading dough and baking:

  1. Pour sugar into a warm, but not hot drink and stir until all the grains are dissolved. Then pour in the vegetable oil and whisk everything well.
  2. After this, all that remains is to add the sifted flour with baking powder and mix thoroughly so that all the lumps disappear.
  3. Grease a springform baking pan with a drop of oil, pour the dough into it, smooth it out and place it in a hot oven for 30-35 minutes. Its temperature must be at 180 degrees.

A lush fruit dessert can be baked by adding regular jam to the kefir biscuit dough. The taste, color and mixture of the finished baked goods will depend almost entirely on the jam chosen. This pie contains the following ingredients:

  • 3 testicles;
  • 180 g sugar;
  • 100 g butter;
  • 200 ml kefir;
  • 7 g soda;
  • 2 g vanillin;
  • 15 g cocoa powder;
  • 390 g flour.

Baking method:

  1. Melt the butter and let it cool slightly. Mix warm drink with soda. Foam the eggs together with sugar, pour in the oil and drink. Then add vanilla and flour, carefully stir the mass with a spoon.
  2. Divide the dough in half and make one part chocolate by adding cocoa powder.
  3. Fill a greased and floured pan with dough. To do this, alternately place black and light dough in the center of the mold using a tablespoon.

For a lemon-vanilla sponge cake in a slow cooker you will need:

  • 3 testicles;
  • 200 g sweet sand;
  • 200 ml kefir;
  • 90 ml vegetable oil;
  • 5 g soda;
  • 5 g baking powder;
  • 260-320 g flour;
  • 2-3 g vanilla powder;
  • zest of 1 medium lemon.

How to bake a biscuit in a slow cooker:

  1. Mix a drink at room temperature with baking soda and baking powder and set aside for a while.
  2. Beat the eggs with a mixer into a fluffy foam. Then carefully pour in the drink so that the egg-sugar foam does not fall off.

Now I would like to share a recipe for making kefir sponge cake in a slow cooker. To make this pastry you will need chicken eggs. There is no need to take the freshest ones, they take a long time to whip up. But those that have been in the refrigerator for a number of days are excellent for kneading biscuit dough. To prevent feathers and other small debris from getting into the general density, it is recommended to rinse the eggs with water and only then break them into a bowl.

With fermented milk products, the biscuit comes out very soft, crumbly and tender. This is a beautiful base for a celebratory cake, and the cream can be created with boiled condensed milk or cream. The drink is suitable both store-bought and homemade.

In order for the biscuit to come out fragrant, you can pour essence into the base, or add vanilla powder. Lemon or orange zest is also suitable for flavoring. And during the New Year holidays, you can add tangerine zest to the dough.

How to cook a biscuit with kefir in a slow cooker

Cook the chicken eggs and pour the contents into a large bowl.

Secure the beaters and connect the device to the network. Beat the eggs with a mixer until bubbles appear, then add sugar.

Now you need to beat until the mass becomes snow-white. Pour a measured amount of kefir into the dough and mix with whisks.

Add vanilla essence. Add flour and baking powder.

Thoroughly mix the total mixture using a spatula. There is no need to mix with a mixer. And finally pour in sunflower oil.

The dough will become shiny and tender. Pour the dough into a greased multicooker pan.

In the “Baking” mode, the biscuit cooks for exactly 1 hour.

No matter what kind of homemade cakes made from kefir dough, they always come out airy, tender and delicious. Therefore, I invite you, dear readers, to join and prepare with me the usual recipe for a delicious kefir , which we will bake in a slow cooker in the “ baking ” mode. And later, from this sponge cake, we will prepare a wonderful tea cake, with sour cream and chocolate icing.

How to cook:

I baked this biscuit with kefir, one might say from what was in the refrigerator. Eggs are a product that is probably in any refrigerator. But I didn’t have a full glass of kefir, so I had to supplement it with sour cream. Instead of margarine, you can put a piece of plum. oil + a couple of tablespoons of vegetable oil oils

A good sponge cake will always turn out with a bang if the eggs are fresh and beaten properly. That's what we'll do for now. Beat the cooled eggs using a mixer for 5-7 minutes, adding sugar evenly. When the mass becomes dense and airy, the eggs are beaten perfectly.

Next, melt the margarine and pour it in small portions into the beaten eggs. Mix carefully with a spoon. Then pour in the drink. In the absence of baking powder, you can add baking soda (0.5 teaspoon). And it’s better to quench soda in kefir.

Mix flour with baking powder and sift into the egg mixture in three additions. In this case, you need to stir with a spoon, from bottom to top, until the mixture is homogeneous. If you are not going to make a cake from this sponge cake, you can add all the fruits or berries to the dough, then you will get an unsurpassed pie in a slow cooker .

Now, grease the multicooker bowl and drain. butter and place the biscuit dough into it.

Close the lid and set the baking mode to 60 minutes. Because we are baking a sponge cake with kefir, it needs more time than making a regular sponge cake, the recipe for which I will share with you in the near future. After finishing baking, do not open the lid of the multicooker. Just press “stop”, thereby leaving the multicooker on heating. That's about 15 minutes. After that, turn off the multicooker and you can take out our biscuit. He came out beautiful, ruddy and quite tall. It is better to place the finished biscuit on a grid or tray for steaming. Allow the biscuit to cool thoroughly.

Later cut it into shortcakes of the desired thickness. I cut it into 2 parts, but it could have been three. Grease any shortbread generously with sour cream.

I needed about 400 ml for this sponge cake. homemade sour cream and half a glass of sugar. Beat everything well with a mixer, add a pack of vanilla sugar. The cake can be decorated with any berries or fruits. Or you can just sprinkle with grated chocolate. Instead, I made chocolate frosting. In a small bowl, mix 0.5 tbsp. spoons of sour cream, 1 tbsp. spoon of cocoa and 1 tbsp. spoon of sugar. Bring to a homogeneous mass in a water bath. Let the icing cool and use a regular bag to create any patterns on the cake.

The multicooker produces incomparable results not only for baking with kefir , but also for other remarkable desserts, such as, for example: cottage cheese casseroles, puddings, various muffins and almost everything else, the recipes of which you will soon become acquainted with.
