Having such a bright fish in stock, it would be a sin not to bake it with potatoes in foil. The main thing is to rub the carp with lemon juice and mustard to remove the smell of mud inherent in river fish. If desired, you can use other spices and herbs, for example, dried thyme, oregano. Almost everyone coats the fish not with mustard, but with garlic mayonnaise - it also turns out very tasty! I don’t recommend adding onions or carrots, because the first one always burns, and the smell of carrots can overwhelm the taste of the dish, so do without them. In any case, the baked fish can be sprinkled with chopped green onions when serving.
The most important thing that you should keep in mind when baking fish or even chicken in foil is that you should not place the foil against the skin, because after baking it will be removed along with it and you will get a not very appetizing dish. Always place some layer of lemons, oranges, potato slices, carrots and other vegetables between the fish and the foil.

Peel the potatoes, wash them in water, cut them in half vertically and cut each half of the root vegetable into large slices. Pour them into a baking tray or baking dish.
Salt and pepper the tenderloin and add vegetable oil. Stir thoroughly.
Gut the fish and remove the scales from it. Wash thoroughly. If it has a dark film inside, it must be cleaned off, otherwise it will taste bitter. Rub the carp with a mixture of salt, ground dark pepper, mustard and lemon juice. Place on potatoes. I like to hide the tail of the fish inside so it doesn't get fried on the foil. You can use both granular and ready-made powdered mustard. But remember that grainy bread should not be baked for a long time without foil - it will char.
Cut half a lemon into slices and place on the highest space - where the fish will come into contact with the foil. It’s just important that the lemon tenderloin prevents this from happening.
Cover the entire baking sheet with foil and preheat the oven to 220 degrees. Bake the dish for approximately 50 minutes.
After the designated time, carefully remove the foil and let the dish brown for another 5 minutes - be careful that the mustard seeds do not char! After that, remove the baking sheet with the carp and potatoes baked in the oven and serve. You don’t have to put it on plates - the guests will do it themselves.

We would like to suggest that you don’t fool around too much and don’t mess around, but use a completely ordinary recipe - bake fish in the oven with potatoes. Later you will be amazed at how unique the finished dish turns out. This option is perfect for a home-cooked Sunday lunch or a romantic dinner.
- Carefully clean the fish of scales, cut the belly and remove the entrails. Wash it well under running water and let it dry. Carp is a bony fish, and so that small bones are not too noticeable in the finished dish, make shallow cuts on both sides from the ridge to the abdomen (the photo below will make it clearer for you). Thanks to this procedure, during baking the small bones will become softer and will not be felt.
- Mix salt, ground black pepper and seasoning for fish dishes in a separate bowl. Using the acquired consistency, rub the fish carcass well on all sides. Typically, in order to become saturated with the smell of spices, the fish must lie in the refrigerator for some time. After that, lightly coat the carp with mayonnaise.
- Rinse the lemon and cut it into thin slices. Insert them into the cuts, place the remaining ones in the abdomen.
- Prepare the vegetables, peel and peel them, rinse and dry. Place the potatoes in a deep bowl, season with salt and pepper to your taste, and pour in vegetable oil. Stir until the spices and oil are evenly distributed throughout the potatoes. On any tuber, make 4-5 cuts, not reaching the end 0.5-1 cm.
- Cut the carrots into thin slices, insert one into the cuts on the potatoes.
- Cut the onions into rings.
- Take a baking sheet or baking dish and grease it generously with vegetable oil. Arrange the onion rings (don't use all of them, leave a few to put on top of the fish carcass). If you have leftover carrot slices, place them on top of the onions. Now place the carp in the center, place the potatoes around it, and sprinkle the remaining onion rings on top of the fish. Cover the pan with foil.
Useful tips
- Fish is one of those foods that perfectly absorb odors. Therefore, to enhance the aroma and taste of the finished dish, do not overdo it with seasonings and spices. Dried vegetables (onions, carrots and garlic), turmeric and ground coriander, paprika and varieties of ground pepper (hot, white, aromatic), thyme, dill, parsley, ginger, bay leaf, fennel, almonds, curry and caraway.
- To make this dish, do not use very large potato tubers; they may not be baked.
- When preparing a fish carcass, it is better to cut off its fins and gills with a tail, and also remove the eyes, because the finished fish may taste bitter around these places. And so that empty eye sockets do not spoil the appearance of the finished dish, insert olives or some berries there.
- In addition to the potatoes, other vegetables can be placed around the fish for baking - carrots, cauliflower, bell peppers, broccoli, zucchini and eggplant cut into bars.

- Salt - 1.5 teaspoons
- Juice of half a lemon
- Bunch of dill
- Dark ground pepper (or a mixture of peppers)
If desired, you can use fish seasonings, as well as mayonnaise (to coat any piece). We don't do this; we love the taste of fish, not spices.

I peeled the potatoes, washed them and cut them into large pieces. You can cut the potatoes however you like. Calculate the amount of potatoes for your family. I had 6 pieces.
Salt the potatoes, sprinkle with ground black pepper (to taste, you can do without it, or use seasoning for potatoes). I added a spoonful of refined vegetable oil and mixed everything well.
The carp is exactly 2 kg. We took it from the market. You can purchase from 1 kg to 5-6 kg. The choice is huge.
Do you understand why I like mirror carp? Because it actually has no scales. And the fish tastes even more tender and juicy.
The fish should be gutted, the fins, tail and head should be cut off. Clean the scales (even though they are not there, in fact, it is necessary to remove what is there).
We wash the fish well with running water and cut it into pieces (I have about 3 cm, you can cut from 2 to 5 cm according to your desire and the size of the fish).
I transfer the carp pieces into a bowl. I add 1.5 teaspoons of salt, a mixture of peppers from the mill (fragrant pepper, freshly ground).
Wash the dill and chop finely. I add dill to the fish.
Carp pairs wonderfully with lemon. Squeeze the juice of half a lemon. My lemon is medium size.
Mix the fish well so that any piece of carp is coated with the marinade. At this step you can add fish spices (if you like).
Let the fish marinate. I marinate for about 1-3 hours, if there is absolutely no time, leave for 20 minutes at room temperature. And if you have time, then leave the fish to marinate in the refrigerator overnight (that is, in the dark) .
If you marinate fish, you don’t need to peel the potatoes right away. I marinate the carp pieces for 20 minutes.
I put the fish on the potatoes and put it in an oven preheated to 180-200 degrees. The carp was baked in the oven in pieces for about 40-45 minutes.
I have a glass mold with a lid, I covered the mold with a lid, and 20 minutes before it was ready, I removed the lid so that the fish could brown.
You can cover the pan or baking sheet with foil.
This is what the dish looks like. It turns out very tasty and appetizing. I can’t tell you how satisfying it is. This dish is suitable for a homemade dinner or lunch.
By the way, the carp can be laid out completely on potatoes and baked in the oven. But pieces of carp are in no way worse than fully baked carp.
