South American donuts with glaze - traditional recipe (step by step)

The most common version of making fried donuts, with glaze, but without the inside. I give two recipes for glaze, chocolate and vanilla.

Use for dough:

  • Flour – 0.5 kg.
  • Milk – 250 ml.
  • Sweet sand – 70 gr.
  • A couple of eggs.
  • Butter – 75 gr.
  • Dry yeast – 7 gr.
  • Vanilla sugar – 8 gr.
  • Salt - a small spoon.
  • Sweet powder – 150 gr.
  • Vanillin – a pinch.
  • Butter – 20 gr.
  • Burning water.
  • Sunflower oil for frying, sprinkle for decoration.

For chocolate glaze:

  • Chocolate – 100 gr.
  • Cream 33% - 50 ml.
  • Butter – 15 gr.
  • Confectionery topping.

I will knead the dough in a food processor, but in an ordinary bowl it is prepared in the same way, the procedure is the same. Mix all the dry ingredients for the dough in a bowl.

Beat in the eggs, pour in warm milk.

Knead the dough. It will be soft, sticking to your palms, but holding its shape perfectly.

Cut the butter into small pieces. While still operating the food processor, transfer the butter one piece at a time.

Place the finished dough in a bowl and cover with cling film. Leave in a warm place for 1.5 hours. The mass must double in volume.

After this time, knead the mixture, cover again and leave on the table for 10 minutes.

Cut donuts from baking paper. Make as much as will fit on the baking sheet. It is possible to do without them, but it will be more convenient to transfer the workpieces. Take a cutout with a diameter of 8 cm and to cut out the middle 3 cm. Instead of an iron cutout, you can take a glass of a suitable diameter.

Roll out the dough ball into a thick cake. The rolling thickness is at least 1.5 cm.

Cut the donut blanks. Collect the scraps and mix them back into the dough.

Cut a hole in the middle and place the piece on parchment.

Place the donuts on a baking sheet or board and place in a warm place for half an hour to allow the dough to rise again.

Pour oil into the pan. Pour generously; donuts should float in oil when frying. Directly on a sheet of paper, place the workpieces in a frying pan with hot oil. Carefully remove the leaves from under the donuts.

Fry until beautifully browned on both sides, without leaving the stove so that you can turn the pieces just right. Fry over low heat, then the products will be cooked moderately and will not burn.

First place the finished donuts on a paper napkin, then, when the excess oil has drained, transfer to a plate.

To create a clear glaze, combine powdered sugar and vanilla in a bowl. Pour in the melted butter, stir the mixture. Start adding hot water, stirring the contents immediately. Don't pour too much water at once. The more you dilute the glaze with water, the more transparent it will become.

Dip the top of the donut into the fondant and immediately sprinkle with decorative sprinkles. In extreme times, you can buy ready-made glaze in stores, which you just need to dilute with water and immediately use for decoration.

  1. Combine sugar with eggs in a bowl, add salt and vanilla. Add softened butter and pour in milk. Mix the mixture thoroughly.
  2. Slowly add flour, mixing each portion well. When the dough becomes elastic, hide it under film and place it in a warm place.
  3. After 1.5-2 hours, the test mass will fit perfectly and will double in volume.
  4. Roll out the dough into a thick flat cake, cut out pieces 7-8 cm in diameter.
  5. Pour oil into a saucepan and heat it almost to a boil. Fry the donuts in it until golden brown.
  6. Using a pastry syringe, fill the donuts. If you use a spoon, make a small cut and add the filling.

Then pour melted (but not hot) butter into the dough, add vanilla sugar and the second part of the flour. Knead thoroughly and leave to rise 2 more times.

Roll out the dough into a layer 1 cm wide and cut into circles about 10 cm in diameter. Create a notch in the center.

Place the donuts on a baking sheet sprinkled with flour and place in a warm space to rise for 20 minutes.

Heat a deep frying pan and pour vegetable oil into it so that the donuts float in it when frying. Fry on both sides in hot oil until golden brown. Donuts fry very quickly. The entire cooking process involves rising the dough.

  3. After half an hour, add eggs, remaining milk and butter melted in a water bath to the mixture. Stir well.
  4. Sprinkle the remaining flour evenly into the watery mixture. When the dough thickens and is difficult to stir with a spatula or spoon, place it on the table and knead with your hands. Place the finished dough in a bowl and cover with cling film, leave to rise for half an hour.
  5. After 30 minutes, on a table greased with vegetable oil, roll out the dough into a layer 1 cm wide. Cut out circles from this layer using a mug or a special mold. In the center of each, make a hole with a recess of the smallest diameter (for this purpose, you can use a stack).
  6. Place the donut blanks on a baking sheet covered with parchment, at a distance from each other. Bake the products in an oven preheated to 180 degrees.

How to make donut glaze

When using glaze at home, follow these rules:

  1. The right mixture of frosting is similar to cream. It doesn't have to flow freely, but it does need a certain thickness to give even coverage.
  2. If the chocolate glaze has hardened, simply return it by heating it. If the mixture has hardened in the piping bag, use the microwave.
  3. For coloring, it is advisable to use gel or dust dyes diluted in water.
  4. Patterns must be applied to a coating of a different color after the previous layer has completely dried.
  5. When coloring the glaze, it is necessary to reduce the amount of other water (milk or water), otherwise the mass will be rather weak.
  6. Donuts covered with colored or chocolate coating can be decorated with coconut flakes or small colored decorations. It is necessary to use the sprinkle on the uncured coating layer.

Regular sweet

The glaze for donuts in the South American style does not require heat treatment and allows you to use any dyes afterwards. And donuts with a snow-white coating can be decorated with colored sprinkles.

To make homemade colored glaze from milk you will need:

  • sweet powder – 350 g;
  • cream (fat content 10%) or milk - 1 tablespoon;

  2. Heat the mixture over low heat until thickened.

Chocolate

  • sweet sand – 200 g;
  • water – ½ cup (100 ml);
  • butter – 30 g;
  • dark chocolate – 1 bar (80 g).
  1. Pour water over sugar and place on low heat. Stir the mixture until the sweet crystals are completely dissolved.
  2. Add the chocolate broken into small pieces to the purchased syrup. Continuing to stir, bring the mixture to a boil.
  3. Add butter to boiled chocolate.
  4. Stirring constantly, cook the glaze for 10 minutes. Then cool slightly. The result should be a homogeneous mass without lumps - only with such a uniform coating can you get delicious donuts.

Caramel

  • small sweet sand or powder – 180 g;
  • purified water – 150 g + 30 g (for soaking gelatin);
  • starch (corn) – 10 g;
  • gelatin – 5 g;
  • cream (fat content 35%) – 150 g.
  1. Pour gelatin with cool water (30 ml) and let it swell for 10-15 minutes.
  2. Mix the starch and cream with a hand whisk or spoon. If lumps form, strain the mixture through a sieve.
  3. Melt the sugar in a small frying pan over low heat until amber in color. Don't mix!
  4. If a caramel aroma appears, add 150 ml of water to the melted sugar. Add water in a narrow stream, quickly stirring the mixture.
  5. Add cream and starch to caramel. Bring the mixture to a boil, heat slightly, remove from the stove.
  6. Melt the swollen gelatin in a water bath.
  7. Pour the watery gelatin into the caramel and stir thoroughly.
  8. Cool the caramel frosting, but do not let it harden.
