How to create hedgehogs from minced meat and rice with gravy in a frying pan

  • Minced meat - 800 gr.
  • Rice - 170 gr.
  • Seasoning for meat (khmeli-suneli) - 2 tsp.

  • Salt to taste.
  • Onion - 1 pc.
  • Carrots - 1 large piece.
  • Sweet pepper - 1/2 pcs.
  • Tomato paste - 200 gr.
  • Paprika - 1 tsp.

  • Salt - 1 incomplete tbsp. l.
  • Sugar - 1 tbsp. l.

I think that almost everyone knows and adore this dish from their youth. And so they always call it “hedgehogs,” because the boiled rice in these meatballs, which are actually meatballs, resembles the spines of a hedgehog.

I take minced meat. I have half and half beef and pork, it’s not very fatty, it’s rolled in the middle cell of the meat grinder. The minced meat needs to be salted to taste, add a spoonful of pepper consistency and a couple of spoons of meat seasoning (I just took khmeli-suneli, this seasoning is also excellent). Stir well.

The rice must be thoroughly washed in a colander in advance and allowed to drain off all the water. In terms of quantity: I take a little less than 1/4 of the weight of the minced rice, it seems to me that this is the best proportion.

Mix. At first it may seem that there is not enough rice, it is hard to see, but later, when it is cooked perfectly, you will see it at the moment.

Roll the minced meat into rounded meatballs. Children really love to participate in this process. My little son helped me, in the very middle of his masterpieces. 😀

To ensure that the hedgehogs keep their shape perfectly, take a portion of minced meat in your hand, transfer it from palm to palm a couple of times so that the mass compacts and the air comes out of it. And only later roll the ball.

The size is not very small - approximately 4-5 cm in diameter. Remember that when cooked they will become larger due to the fluffy rice.

We put the finished hedgehogs in the refrigerator for now, and let’s start making the gravy.

Take a medium onion and chop it not very finely.

I have a big carrot. If you have a small one, then take several pieces. Grate it on a large grater.

And I also have sweet peppers, thin-walled, yellow, and at the same time very fragrant. I cut it into narrow strips. When the gravy is ready, it will not be visible in it at all, but it will give its own taste and smell.

Take the vegetables and place them in a frying pan with a small amount of vegetable oil. Saute for several minutes over medium heat, avoiding frying.

Add tomato paste to vegetables. Stir and fry everything together for a few more minutes.

I don’t recommend replacing pasta with ketchup, because ketchup often has a strong sourness. Although, it is natural to your taste.

Tomato paste has the most neutral taste and is simply pureed tomatoes, without spices. I add salt and sugar myself for taste. Don’t be surprised, tomatoes mix very well with sugar, their taste becomes richer and brighter.

I also add paprika and dried garlic. This is such a wonderful vegetable pillow that I came up with.

I put future hedgehogs on top. At the moment, they still do not in any way resemble prickly animals - they are completely ordinary-looking meatballs.

The rice is hidden here and there inside and is almost invisible to the eye. I don’t fry them in advance; in my opinion, there’s no point in doing so.

I fill the hedgehogs with boiling water from the kettle. I used about a liter of water (the frying pan is large). The task is simply to cover the meat balls one hundred percent with water. Gently stir the gravy between the hedgehogs and taste it. Add salt or pepper as needed.

Then cover with a lid, reduce the heat to low and cook the hedgehogs for 40 minutes with the lid closed.

After the designated time, my balls were transformed. The rice was saturated with water and became clearly visible. Here they are, hedgehogs in all their beauty! 5 minutes before it’s ready, add a bay leaf, although the smell is wonderful. The gravy becomes rich and thick thanks to the starch contained in the rice.

Therefore, there is no need to add any additional thickeners, such as flour. The dish is ready and it turned out amazing!

I’ll say a few words about the side dish and show the little one a life hack. Hedgehogs are perfect for mashed potatoes, but now I wanted to serve them with fully boiled baby potatoes. We often forget about this necessary and ordinary side dish.

I boiled potatoes in their jackets. This way it retains more of the necessary substances and keeps its shape perfectly. And in the company of salt, butter and fragrant dill, it turns out so tasty that you eat it and can’t stop! The only thing is that it’s not comfortable to clean it, especially when it’s still hot, just out of the pan.

Then, in order not to burn my fingers and not have to bother with peeling, I came up with a little life hack: I prick the jacket potatoes onto a fork and carefully peel them with a knife. This happens quickly and during the peeling process you practically do not touch the fried potatoes.

When my friend saw my method like this, she had such a surprised face, as if I had discovered America. It turns out that not enough people come up with the idea of ​​somehow making the process of peeling fried potatoes easier. Maybe you will need such a thought, it would seem like a trifle, but it’s useful to know.

Well, I peeled the potatoes and cut them into slices without even touching them with my hands. Added salt, butter and dill. I usually prepare potatoes this way for country gatherings, but now I wanted something specifically like this.

I put the hedgehogs (look how beautiful and cute they are, and they have just the right amount of rice, no more, no less) with the potatoes, and don’t forget a spoonful of gravy with the vegetables. It’s a pity, I can’t convey the smell of this yummy and its divine taste! We'll have to cook for you and try it ourselves.

2 medium sized carrots.

Meatballs in creamy sauce baked with rice! From the first name your tummy begins to rumble, and only if you try it.

Beef, it is better to take it raw, in other words, the freshest. You can replace it with ready-made minced meat, but the freshest.

Heavy cream 350 ml.

Hard cheese 150g.

Garlic, small cloves.

1 teaspoon starch (preferably potato starch).

Spices and salt to taste.

If you purchased meat, then you need to start cooking by twisting the minced meat. If the minced meat is ready, then simply twist it with onions and garlic. Add salt and spices to taste and stir.

Wash the rice and boil until half cooked, mix with minced meat. Wet your hands with water so that nothing sticks to your hands. Carefully form medium-sized meatballs and place them on the bottom of the pan in which you will bake them. Preheat the oven to 180 C and place the pan to bake for 20 minutes.
