It is more common for us to prepare fruit salads and snacks with cheeses and jamon with melon. But melon pie may pleasantly surprise you. It can be made from shortbread, puff pastry, biscuit or yeast dough.

Melon pie in the oven with kefir

Ingredients:
- melon pulp – 350-400 g;
- sugar – 125 gr.;
- drink – 250 ml;
- flour – 250 gr.;
- soda – 5 g;
- eggs – 3 pcs.;
- butter – 100 gr.;
- semolina – 200 gr.
Manufacturing:
- In a saucepan, beat eggs with sugar.
- Continuing to beat at low speed, add soft butter and pour in the drink.
- Pour semolina evenly, add a spoonful of soda, to which add a drop of lemon juice or vinegar.
- Add the sifted flour and make the dough homogeneous.
- Wash the melon, cut into pieces and cut the pulp from the skin into small cubes.
- Grease a frying pan with oil, line it with tracing paper and pour in the dough.
- Spread the melon pieces sparingly over the entire surface and drown any in the dough.
- Place in the preheated oven and bake until done at medium heat.
- Place the finished pie on a fine plate and let cool.
Serve with tea for afternoon tea or for dessert after lunch.
Melon pie in a slow cooker

Ingredients:
- melon – 700 gr.;
- sugar – 200 gr.;
- flour – 250 gr.;
- soda – 5 g;
- eggs – 4 pcs.;

Melon pie made from puff pastry
In order to have enough interior in the layer cake, the melon must be prepared in advance.
Ingredients:
- melon – 900 gr.;
- sugar – 100 gr.;
- dough –500 gr.;
- testicle – 1 pc.;
- starch – 40 gr.
Manufacturing:
- Wash the melon, cut into halves and remove the seeds.
- Cut into slices and then remove the flesh from the skin.
- Chop into randomly shaped pieces, place in a deep bowl and cover with sweet sand.
- Leave to sit for about an hour.
- Sprinkle the melon pieces with starch and stir.
- Thaw the finished puff pastry and roll out both pieces into not very thin layers according to the size of your baking sheet.
- Grease a baking sheet with a thin layer of oil, place a layer of dough and place the filling on it.
- Cover with a second layer of dough and carefully join the edges together.
- In a cup, beat the egg with a fork and brush the entire surface of the baked goods.
- Pierce the top layer of dough in several places using a fork or toothpick.
- Place the baking sheet in the preheated oven and bake the pie for half an hour at medium heat.
- Place the finished pie on a plate, let cool slightly and cut into portions.

Pie with melon and apples

Ingredients:
- melon – 400 gr.;
- apples – 250 gr.;
- sugar – 300 gr.;
- flour – 350 gr.;
- soda – 10 g;
- eggs – 6 pcs.;
- sour cream – 30 gr.;
- oil – 20 gr.
Manufacturing:
- Separate the whites from the yolks.
- Beat the yolks with sweet sand, add sour cream and gradually add flour and add soda with a drop of lemon juice.
- Wash the melon, remove the seeds and skin, and cut the pulp into thin slices.
- Wash the sour apples, remove the core and cut into thin slices.
- Beat the egg whites separately with a pinch of salt.
- Gently fold the egg white mixture into the batter.
- Grease a frying pan with oil, line it with tracing paper and lay out a thin layer of dough.
- Level with a spoon. Place a thick layer of apple slices on top.
- Fill with a thin layer of dough and place pieces of melon on it.
- Cover everything with the remaining dough and place in a preheated oven.

- 300g melon pulp
- 100g butter
- 3 testicles
- 1 glass semolina
- 1 glass of kefir
- 1 cup flour
- 1/2 cup sugar
- 1 tsp. baking powder
- A pinch of salt
How to make melon pie:
- I baked this pie in a 26 cm pan. My melon is very juicy, this time the pie came out moist with a rich melon flavor.
- Beat the eggs with a pinch of salt and sugar.
- Add melted butter and drink to the egg mixture.
- Then add semolina and mix.
- At the end add flour and baking powder. Mix everything thoroughly with a spoon or mixer (so that there are no lumps).
- Cut the melon into small pieces.
- Grease a baking dish with oil, pour the dough into it and place pieces of melon on top.
- Bake at 190 degrees for approximately 30-40 minutes. Until golden brown (check doneness with a wooden skewer or toothpick).

This cupcake, if not your family’s favorite pastry, will certainly become so! The melt-in-your-mouth dough harmonizes with the sweet melon. Absolutely, this fruit is unusually good in baking. Thanks to its juiciness, the cake becomes a little more moist and therefore tender. And when there is a lot of melon, you can also richly decorate the finished delicacy.
The recipe for curd cake with melon is not for those who watch their figure. Unless you can slow down after the first piece... But this is unlikely. Therefore, get ready right away and seriously. Well, enough jokes, it's time to start making.
Ingredients:
- Butter – 100 g
- Sugar – 1 glass
- Testicle – 2 pcs.
- Cottage cheese – 200 g
- Flour – 200 g
- Baking powder – 1 tsp. with a slide
- Ginger – 0.5 tsp.
- Melon pulp – 200 g
Manufacturing process:
- We wash and cut the melon. Remove the pulp from the skin and cut into small cubes.
- Beat soft butter until white, add sugar and beat for another 3-5 minutes.
- Then, continuing to beat, beat in the eggs one at a time.
- Next, put the cottage cheese into the bowl. Beat until smooth.
- In a separate container, combine the dry ingredients: flour, baking powder and ginger. Mix.
- Sift the ingredients for the curd dough.
- Mix thoroughly and obtain a thick, elastic mass.
- Finally add the cooked melon.
- Place the dough in a mold greased with butter, put it in the oven, preheated to 180-200 degrees, and bake until done - 30-40 minutes. Test the cake with a wood stick.
- Cottage cheesecake with melon is ready! Serve to the table, garnishing to taste. Bon appetit!
Essential additions to the recipe:
- All ingredients for making should be at room temperature, and the butter should be soft for whipping.
- To make the cake dough as homogeneous as possible, take cottage cheese from packs or rub the homemade product through a sieve/punch with a blender.
- Instead of adding them to the dough, pieces of melon can also be placed on the bottom of the mold or on top of the mixture before baking.

Melon itself is quite sweet and juicy; it can be consumed raw and without the help of others, in other words, even without sugar. If you come across a fruit that is not very ripe or sweet, then this is another reason to bake a fragrant pie. Add sugar, vanilla or cinnamon and stir. You can fry the pieces in a frying pan or steam them in a saucepan.
Depending on the type of dough, melon pies are formed open, closed, or made with a mesh on top, in other words, semi-closed. You can simply mix the chopped pieces into the batter and it will look like charlotte.
Melon pie “Tender” on kefir with semolina
Recipe for a tender melon pie with baking powder. If you replace it with soda, then use half the portion and quench it in kefir. The list indicates the amount of pure melon pulp without skin and seeds.
Ingredients
• 1 tsp. with a mountain of ripper;
Manufacturing
1. Stir the cereal with kefir. For the pie to truly live up to its name, let the mixture sit for half an hour. The semolina will swell, become tender and soft.
2. In a large and deep bowl, grind the sugar with a small pinch of salt and 3 eggs.
3. Combine both consistencies, add sugar, pour in melted butter. This pie can also be made with margarine.
4. Add flour, together with it add baking powder to the dough.
5. All that remains is to stir everything well. Let it sit for 5 minutes.
6. During this period of time, it is necessary to cut the peeled melon pulp into cubes.
7. Mix the prepared pieces into the dough. Pour into a greased mold.
8. Prepare the tender pie for half an hour, set and bake at 180. You can pour the dough into a multicooker and cook for 50 minutes on baking mode. If necessary, you can turn the pie over at the end so that it browns on the other side as well.
Yeast melon pie (made from milk dough)
Semi-closed version of yeast pie with sunny melon. Instead of whole milk, you can use a diluted dry extract for the dough or use a mixture with added water.
Ingredients
• 3.5 cups psh. flour;
• butter 50 grams;
For the inside:
• 300 g of pure melon;
• 2 tablespoons of starch;
• sugar as desired.
One yolk for lubrication, the white can be added to the dough.
Manufacturing
1. 1.5 hours before baking, you need to knead the dough. Heat the milk, the liquid must be warm, add all the ingredients according to the recipe, the butter must be melted and cooled in advance. Knead with flour.
2. Place the soft, light dough in a large bowl or saucepan, cover with a kitchen towel, and let rise well.
3. Cut the melon into careful pieces. If it's sweet, then you don't need sugar. If you want to find a tasteless melon in the pie, you can add a little sand when shaping the product.
4. Take out the dough, pinch off the third part. From the rest, spread the cake out with your hands, transfer it to the mold, and use your fingers to make small sides.
5. Mix melon with starch and place on the dough. Sprinkle sugar on top, but don’t add much, 3 spoons is enough.
6. Form thin flagella from the plucked piece and make a mesh on the pie.
7. Grease all mesh elements and sides with yolk.
8. Place in the oven at 200°C, wait until the dough is ready.
Pie with melon and jelly from shortcrust pastry
A version of the pie with amazing insides, to which dry jelly is added. You can take any flavor, melon mixes well with all berries and fruits. Margarine and butter in the dough are interchangeable, but the fat content does not have to be below 70%.
Ingredients
• 220 g of butter with a fat content of 70% or higher;
• egg plus one yolk;
• 60 grams of sugar;
• 80 g of dry jelly.
Manufacturing
1. Remove the butter or margarine to a warm place in advance to soften it. Add sugar and salt, beat with a mixer until quite foamy. If the fat content of a product is above 70, then this is not a problem.
2. Add the yolk and whole egg, but only evenly, continue beating until smooth.
3. Take out the mixer, add flour, knead the dough with your hands. Don’t crumple it for a long time, it doesn’t have to drag on. Place in the refrigerator for 30 minutes.
4. Cut the melon into nice, thin slices.
5. Take out the dough, spread it over the mold, mold the sides about 2 cm.
6. Pour jelly and place pieces of melon on top.
7. Set to bake at 200 degrees, for an average of 22-24 minutes. Check the readiness of the sides.
8. Remove the cake from the oven and leave it in the pan to cool.
Pie with melon and apple made from puff pastry
A quick version of the pie, which is even easier to prepare than it might seem at first. It is better to use a sour apple, it will dilute the taste of the melon.
Ingredients
• vanilla or cinnamon to taste.
Manufacturing
1. Divide the defrosted dough into two layers. You can cut out the cakes to make a round pie. It’s better to create one slightly larger so that small sides appear. Place the layer for the bottom into the mold.
2. Chop the apple and melon pulp, stir, season with starch and sugar.
3. Place the filling on the bottom layer of the pie.
4. Brush the edges with egg.
5. Cut the remaining layer on the table with a knife, you can create many holes. Transfer to the pie, join with greased edges, and stick.
6. Cover the top with egg.
7. Bake at 200 degrees.
Pie with fried melon (yeast closed)
A version of a covered pie with fried melon insides. The dough is kneaded with water and sour cream; use as much flour as is needed.
Ingredients
• 4-6 glasses of flour;
• 10 g yeast (use dry);
For the inside:
• 30 g butter;
Manufacturing
1. Sift the flour to enrich it with oxygen. Heat the water, mix with sugar and yeast. Add a pinch of salt and a glass of flour. Leave the dough for half an hour.
2. Now you can add all the other ingredients on the list. Knead into a soft, slightly sticky dough. Place in a saucepan with high sides and keep warm.
3. When the dough has risen perfectly, lower it and wait a second time.
4. Heat the butter in a frying pan.
5. Chop the melon, put it in oil and evaporate all the water. At the end, add sugar, heat and season the filling with cinnamon. You can add a little liqueur or cognac, it will be even tastier. Cool.
6. Form a covered pie using the dough and fried melon. Roll out the layers as thin as possible. Be sure to make holes on top for steam to escape.
7. Brush the top with yolk. Bake at 190°C for 15-18 minutes. Look at the color and readiness of the cakes.
Sponge cake with melon “Sun”
A simple version of a soft and light pie, which can safely be called melon charlotte. You don’t need a lot of insides, 300 grams is enough. You can take the zest dry; in this case, reduce the amount in half.
Ingredients
• 1.2 cups sugar;
• 1 tsp ripper;
• 1.5 cups flour.
Manufacturing
1. The oven must be turned on to heat up immediately, because the dough is made quickly. Set it to 190 degrees.
2. Immediately cut the melon into pieces.
3. Sift the flour, mix with chopped zest and baking powder.
4. Grease the pan.
5. You can start kneading the dough. Beat 5 eggs and prescription sand until very fluffy foam.
6. Add the flour mixture with zest. Mix quickly with a spatula.
7. Add the melon pieces.
8. Pour into the prepared pan and bake.
9. After 20 minutes, use a stick to pierce the pie in the central part. If it remains dry, then you can remove the baked goods from the oven.
10. Let stand in the mold, then remove. After cooling, decorate with sweet powder.
Melon pie with sour cream (with baking powder)
Another quick version of melon pie. He asks for the dough to be kneaded, but everything is done very quickly. Immediately turn on the oven to warm up. Set it to 180. The recipe is suitable for a slow cooker.
Ingredients
• 250 g millet. flour;
• 1.3 tsp. baking powder;
• 200 g sour cream 20%;
Manufacturing
1. Place all ingredients, excluding wheat flour and melon, in a bowl, beat for three minutes with a whisk or one minute with a mixer.
2. Add flour to the dough.
3. Pour half of the resulting mass into the greased form.
4. Quickly crumble the melon pulp onto the dough. There is no need to add sugar, but for flavor you can lightly sprinkle the pieces with cinnamon or grated zest.
5. Drizzle with remaining batter.
6. Bake until done. At 180 it will take about half an hour.
Melon Pie - Helpful Tips and Tricks
• In closed pies with melon, it is imperative to make holes. Steam from the bubbling juice of the inside will escape through them. If there are no holes, then the top can tear anywhere and the baked goods will lose their representative appearance.
• If the melon is very juicy, then it is better to evaporate the water from the pieces. This can be done in a frying pan so that nothing sticks, add a little oil.
• Baking powder can be added to any dough. This powder will make the porosity of the crumb uniform, and the baked goods will be soft, airy and will not allow them to fall off.
• Yeast dough must be kneaded well until the dough itself begins to peel off from the walls of the dish. Shortbread dough will take a long time to handle and the baked goods will be hard. Biscuit dough loves beating, but does not tolerate long kneading with flour.

Recipe for “Airy melon pie”:
Remove seeds and skin from the melon and grind the pulp in a food processor. Add sugar, yolks, flour, melted butter and vanillin - beat everything well. (Lyrical digression: I took 1 tbsp. flour, but it all depends on the juiciness of your melon; if it is not at all juicy, take less flour, and if it is very juicy, then more).
Grease the mold with butter, pour the melon dough into it and into the oven preheated to 200*C for about 40 minutes.
Now the top layer is meringue.
Beat the chilled whites with sugar and vanilla until thick foam.
When the pie is ready, take it out, put the meringue on top and put it back in the oven for about 15 minutes.
When the pie is ready, take it out, cool, and cut into pieces.
