Breakfast in Lent
It is not for nothing that breakfast is called the main meal, because it gives a boost of energy for the coming day. Breakfast during Lent is even more important, since with the restriction of goods of animal origin, the body is all the more in need of proper reinforcement.
You shouldn’t think that you won’t have anything to eat for breakfast during Lent, since butter and yogurt, eggs and milk have been removed from the menu. There are essentially a lot of options, and they are all no less appetizing and satisfying.
We are used to starting the morning with porridge - breakfast during Lent can include any regular cereal - be it oatmeal, buckwheat or rice. You will have to give up milk and butter, but you can make up for their absence by adding dried fruits or berries. A good addition to porridge would be a sauce, for example, mushroom or vegetable.
We are used to enjoying pancakes in the morning - and breakfast during Lent does not prohibit this dish. Just prepare the dough without eggs and milk - lean pancakes are easy to bake and taste as good as ordinary ones.
Another beautiful option is dough pies without quick ingredients. Such pies can be baked with entrails made from cabbage, herbs, mushrooms, peppers, and potatoes. You can not only have a hearty breakfast with them, but also take them with you to work for lunch or as a snack.
You can serve salad for breakfast during Lent. There are a huge number of recipes for lean salads, so throughout Lent you can prepare lean salads for yourself in the morning - both cool and warm. Use an abundance of vegetables and fruits so that the prepared dishes constantly amuse you and your family. Do not forget that tofu is one of the foods allowed during fasting. Since it is a soybean product, this “cheese” can be safely included in your Lenten menu. With all this, tofu is rich in protein and therefore will perfectly compensate for the lack of this important element.
If you have time, you can cook something more substantial - bake vegetables or pita bread with entrails, for example, bean puree.
During Lent, you can treat yourself to rice pudding, which is made from rice and soy milk with the addition of raisins, nuts, cinnamon, honey or maple syrup.
Among the drinks that would be appropriate for breakfast during Lent are vegetable and fruit smoothies, juices, regular tea and coffee (but with soy milk, not cow's milk).

Components:
- Flour – 250-350 gr.;
- Mineral sparkling water – 0.5 l.;
- Sugar – 2 tbsp. l.;
- Salt - a pinch;
- Mushrooms – 200 gr.;
- Onion – 1 pc.
Lenten pancakes with mushroom entrails
Manufacturing development:
- Sift the flour into a bowl, add sugar and a pinch of salt.
- Add half a portion of mineral water. Knead the stiff dough.
- Add the remaining water evenly, stirring constantly with a whisk so that there are no lumps. Watch the mixture so that it comes out evenly watery.
- Let the dough rest for 20-30 minutes.
- Prepare the mushroom filling. Wash the mushrooms and chop finely.
- Peel the onion and chop into thin half rings.
- At 2 tbsp. l. fry the onions and mushrooms in sunflower oil until tender.
- Salt, add ground pepper and bay leaf to taste. You can also use vegetable and berry filling to prepare various meatless breakfast recipes for any day.
- After 20 minutes, stir the dough, add 2-3 tablespoons of sunflower (olive) oil.
- Use a special frying pan for frying. Coat the surface with a thin layer of sunflower oil. Pour in a ladle of dough and spread the dough around the pan in a circular motion. Fry the pancake slightly on both sides.
- Bake all the pancakes from the prepared dough in this way.
- When the frying process is complete, start forming portions. Place a dessert spoon of the insides in the middle of the pancake, wrap the edges with an envelope - in fact, a lean breakfast is ready. The recipe with photo shows the best form.
- Repeat these actions with everyone. Before serving, fry the pancakes in a dry frying pan on both sides. Use low heat so the inside will warm up without burning the shell.
Chickpea fritters
Chickpeas are a legume widely used in Turkish cooking. This variety of peas is used to make first and second courses. Thanks to the high protein content, chickpeas make a fairly satisfying lean breakfast. We suggest preparing this quick recipe right now. Chickpea fritters
Manufacturing development:
- Heat the water until warm, add sugar, yeast, a little flour and stir. Leave to infuse for 30 minutes near a heat source.
- Combine 2 types of flour in a bowl, add dry spices (salt, turmeric), stir.
- Add watery yeast infusion to the flour and knead the dough.
- Chop dill, garlic, add herbs to the dough. Mix all ingredients thoroughly.
- Lenten breakfast dishes according to the recipe do not include sunflower oil or vegetable fats. But for frying, we still recommend using a small amount.
- For frying, use a frying pan with a small amount of vegetable oil.
- Place portions with a spoon onto the heated surface.
- Fry on one and the other side until beautifully golden brown. Place the finished pancakes on a paper towel to absorb any remaining oil.
Toasts with mushroom and eggplant pate

- Any housewife understands: lavash is used to prepare a frisky and tasty Lenten breakfast. Recipes may include soy, mushrooms, legumes. But in this case we use vegetables - a universal set that virtually everyone can find.
- Wash the tomatoes and cut them in half.
- Cut the chili, remove {filling}, chop.
- Chop the lettuce coarsely. Chop the green onion.
- Combine lettuce, green onions, and tomatoes in a bowl. Sprinkle the vegetables with sugar and a pinch of salt.
- In a separate bowl, combine horseradish, lemon zest, Tabasco sauce, and maybe a few drops of olive oil. Stir until smooth, season the purchased sauce with the vegetables.

Lenten breakfasts for any day of the week
One of the most difficult tasks during fasting is eating breakfast. After all, for breakfast we are accustomed to eating products of animal origin: eggs in all varieties, cottage cheese, milk porridge, coffee with milk and, in the end, sandwiches.
Life is easier for everyone who loves porridge: you can cook it in water, too, add nuts and berries for taste - and breakfast is ready. You can completely replace cow's milk with its plant-based version.
But what can you do if you are used to eating sandwiches for breakfast? Here, various vegetable pates and varieties of caviar (eggplant, squash, onion) will come to the rescue - they all mix perfectly with grain bread, different types of pita bread, and pita bread. You can vary your menu with rice paper or Mexican tortillas. In the first one, wrap some marinated shrimp, sprinkle with sesame seeds and drizzle with soy sauce. And in a Mexican tortilla you can wrap corn, fried with onions and sweet peppers, season everything with spicy tomato sauce - that’s a vegetable quesadilla.
You can put mugs of fried eggplant and zucchini on bread, as well as avocado slices. Or green lettuce leaves, cucumbers, tomatoes and sweet peppers... There are a huge number of options.
We bring to your attention a morning Lenten menu for any day of the week. For weekdays the recipes are simpler and quicker, and on weekends the recipes are the most labor-intensive.
Mon
Vegetable salad with tofu cheese
100 g grain bread toast
1 reddish onion
1 tbsp. soy sauce
½ tbsp. lime juice
½ tbsp. olive oil
Step 1. Cut the bread into small pieces and dry. Peel the onion, cut into thin rings, and scald.
Step 2. Peel the avocado, remove the pit, cut half into cubes (the other half can be cut into slices, put on bread and salt - it makes a good sandwich).
Step 3 . Chop tomatoes, peppers and tofu cheese, mix with croutons, avocado and onion.
Step 4. Whisk together soy sauce, juice and olive oil. Season the salad and season with pepper as needed.
Turkish coffee
3-4 tablespoons very finely ground coffee
Pinch of dark pepper
Step 1. Put coffee in a cezve, add sugar and pepper, pour in a little cool water, and put on fire.
Step 2. Heat almost to a boil, then add cool water almost to the edges of the cezve and put on fire.
Step 3. When it starts to boil, remove from heat, pour in a teaspoon of cool water and wait 5-10 minutes for it to brew.
Tuesday
Eggplants in rice paper
1 tbsp. olive oil
50 g walnuts
Step 1. Wash the eggplants, cut into slices, salt and pepper.
Step 2. Chop the cilantro and finely chop the nuts.
Step 3. Fry on the grill or in a frying pan until soft.
Step 4 . Boil a kettle and pour boiling water into a large bowl. Quickly dip the rice paper into it, and then wrap a piece of eggplant in it, sprinkling it with nuts and herbs.
Ginger tea
4 tsp greenish tea
1 cm ginger root
700 ml hot water
Step 1. Peel the ginger and cut into very thin slices.
Step 2 . Place green tea and ginger in a teapot and add hot water. Leave for 5 minutes.
Wednesday
Pita with bean puree
1 can canned white beans
1 bunch of parsley
1 reddish pepper
Salt, pepper to taste
Step 1. Open the beans, drain the liquid into a separate bowl, and puree with a blender.
Step 2. Wash the peppers and herbs and chop finely. Mix with puree. If it turns out very thick, add bean juice.
Step 3 . Cut the pita in half and fill with bean puree.
Apple tea
1 apple (greenish)
1 cinnamon stick
Step 1. Cut the apple into small cubes.
Step 2. Place in a teapot, add cinnamon. Pour boiling water over.
Step 3. Leave for 10 minutes. Add sugar to the cup to taste.
Thursday
Fruit salad with cereal
½ cup oatmeal
1 tbsp. snow-white raisins
1 tsp cane sugar
Step 1. Pour boiling water over the raisin flakes (previously washed) and leave for 15 minutes.
Step 2. Peel and grate the carrots, cut the apple into small cubes, peel the tangerine and separate it into slices.
Step 3. Mix everything. Dilute cane sugar with 1 tbsp. warm water and pour syrup over salad.
Vegetable drink with bran
1 celery stick
3-4 cherry tomatoes
2 tbsp. oat bran
A few drops of Worcestershire sauce
Step 1. Rinse vegetables and herbs. Puree in a blender.
Step 2 . Add 1 glass of boiled water.
Step 3. Add bran, salt and sauce (optional). Mix.
Friday
Zucchini and apple fritters
1/2 small zucchini
1 greenish apple
4-5 tbsp. flour (buckwheat, millet or corn)
Step 1 . Grate the zucchini on a small grater, cut the apple into thin slices.
Step 2 . Dilute flour with a small amount of warm water, dilute baking soda in half a glass of hot water. Add to flour. Reach a watery mixture.
Step 3. Add zucchini and apple to the dough, mix. It should be as thick as sour cream. Add salt.
Step 4. Heat a frying pan with vegetable oil. Bake pancakes on each side for 1.5 minutes.
Herb tea
1 tbsp. dried St. John's wort
1 tbsp. raspberry leaves
Step 1. Rinse the kettle with boiling water and put the herbs in it.
Step 2. Let stand for 2-3 minutes, pour in a small amount of boiling water. Wait another 3 minutes.
Step 3. Fill the kettle to the brim, wait 5 minutes for it to brew.
Saturday
Potato cutlets with shrimp
1/2 tbsp. potato starch
1 tbsp. corn flour
Handful of small cocktail shrimp
Step 1. Peel and grate the potatoes. It’s not enough to squeeze out.
Step 2. Fry the onion in more oil. Place in grated potatoes, add starch and flour. Mix. Salt and pepper.
Step 3. Heat more oil in a frying pan and add a tablespoon of the potato mixture, forming it into thick cutlets.
Step 4. Place small shrimp on top of the cutlets, pressing them into the potatoes, but carefully.
Step 5 . Turn over. Fry on the other side, then reduce the heat, cover with a lid and simmer for 7 minutes. Serve hot.
Cocoa with soy milk
2 cups soy milk
Not enough hot water
Step 1. Heat the milk in a Turk or saucepan.
Step 2. Mix cocoa with sugar and dilute with hot water.
Step 3 . Pour into milk, stir, bring to a boil, skim off the foam.
Sunday
Rice cake with berries
1/2 cup lingonberries (thawed)
2 apples a handful of raisins
handful of walnuts
Step 1. Wash the rice, add boiling water and add salt. Cook until half cooked.
Step 2. Peel the apples and chop finely. Pour boiling water over the raisins and steam for 15 minutes.
Step 3. Place apples, raisins and lingonberries in a bowl, add cinnamon, stir.
Step 4 . Add rice, mix everything, put in a mold greased with vegetable oil, sprinkle with sugar. Flatten.
Step 5. Bake for 20 minutes at 160 C.
Greenish cocktail

Mushroom caviar
- Champignons - 0.5 kg;

Especially if you take a couple of pancakes and mix them with a huge amount of fruits or berries.
Yeast pancakes with honey and berries
- Water - 0.5 l.;
- Fresh yeast - 50 g;
- Vegetable oil - 100 g;
- Flour - 200 g (approximately);
- Salt on the tip of a knife;
- Sugar.

Buns
Crispy buns are valuable not only for their taste, but also for their smell. Scones with jam, cinnamon and freshly squeezed juice are perfect not only for quick breakfasts, but also for slow weekend meals.
Puff pastries with sugar and cinnamon
- Puff pastry - 1 pack;
- Sugar - 2 tbsp. l.;
- Cinnamon;
- Vegetable oil - 1 spoon.
Unroll the puff pastry. Grease the surface with vegetable oil and sprinkle with sugar and cinnamon. Roll the dough into a tube and cut into pieces 2 cm wide. Bake the purchased rolls in a preheated oven for 15 minutes at the highest temperature until golden brown.
Yeast buns with raisins (frozen)
- Warm water - 0.5 l;
- Fresh yeast - 50 g;
- Vegetable oil - 100 g;
- Sugar - 100 g;
- Salt - 0.5 tsp;
- Flour - 0.5 kg;
- Raisins - 100 g.
Dissolve the yeast in warm water. When they foam, add all the ingredients and knead into a soft dough. Let the dough rest for a while. Roll out the dough 1 cm wide, grease the surface with vegetable oil, sprinkle with sugar and raisins. Fold the dough, wrapping the sugar and raisins inside. Cut the purchased roll into pieces 3 cm wide. Place the rolls on a cutting board covered with baking paper and freeze. In the morning, take out the required number of buns and place them in the oven at 50 degrees. When the buns rise, increase the temperature to 180 degrees and bake until browned for 20-30 minutes.
Salads
The quickest and most common way to have breakfast is, naturally, a salad. It can be eaten as a separate dish or as a beautiful addition to any breakfast, and not only during Lent.
Fruit and berry salad
Cut any fruit into small pieces and serve in portions. For example, apple, banana, kiwi, grapes.
Fresh cabbage and cucumber salad
Cut the fresh cabbage into strips and mash with your hands. Cut the cucumbers into slices. Chop the dill. Salt and season with vegetable oil.
Carrot and apple salad
Grate the carrots on a small grater. On a large grater - peeled apple. Add a spoonful of vegetable oil and sprinkle sugar on top.
Mousses
You can prepare the desired dessert using semolina porridge. Cook sweet semolina porridge in water or soy milk. In a blender, beat the porridge and berries together, for example, a handful of raspberries, blueberries, you can add a peeled banana, juice and lemon zest. Decorate the mousse with a couple of whole berries and mint leaves.
Pies
The pies are baked in advance and served for breakfast. You can also take a piece of pie with you to work or college for a snack.
A pie with cabbage
Preparing lean yeast dough. Let's let him come up. During this period of time we prepare the filling. Stew the cabbage, fry the onions and carrots separately, and combine everything together. Salt and pepper to taste. Divide the dough into two parts, put the filling on the first, cover with the second half. Grease the top with vegetable oil and pierce it in several places with a fork. Let the cake rise and put it in the oven for 40 minutes at 180 degrees.
Fish pie
Preparing lean yeast dough. Let's let him come up. Cut 1 kg of fish fillet into pieces, add salt and pepper to taste. Finely chop the onion. Place pieces of fish on one part of the dough, sprinkle onions on top and sprinkle with vegetable oil. Cover the top with the second part of the dough and pinch the sides of the pie. Grease with vegetable oil, pierce with a fork in several places and put in the oven. The cake is baked for 40 minutes at a temperature of 180 degrees.
Apple and Cinnamon Pie
Prepare lean yeast dough as in the recipe for buns with raisins. Let the test come up. Peel and core 1 kg of apples, cut the apples into small pieces. Place apples on one part of the dough and sprinkle them moderately with sugar and cinnamon. Cover the pie with the second part of the dough. We pinch the edges of the pie on the sides. - Vegetable oil - 100 g;
- Banana - 1 pc.;
- A handful of nuts;
- A handful of raisins;
- Apple - 1 pc.;
- Cinnamon.
Peel the banana and mash it into a puree with a fork. Peel the apple and grate it on a large grater. We combine all the ingredients and pour the purchased dough into a mold lined with baking paper. Bake the gingerbread for 30 minutes at 180 degrees.

- Baking powder - 1 pack;
- Margarine - 0.5 packs;
- Applesauce - 200 g;
- Cocoa - 4 tbsp. l.;
- A handful of nuts.
Grind margarine with flour. Combine all ingredients and mix thoroughly. Place the dough in a mold lined with baking paper. We bake the gingerbread for 30-40 minutes at a temperature of 180 degrees.
