Recipes for blueberry jelly - we cook from fresh, frozen and dried berries
Juicy blueberries with a bluish bloom and reddish-purple flesh are well known for coloring the hands and mouth. The taste is pleasant, sourish-sweet, slightly astringent. The berries are eaten fresh, most often with milk, they are used to make preserves, jams, syrups, jams, compotes and juices. And the most common dish to make is blueberry jelly.
What you need to know before cooking
This may be needed:
- Starch should be diluted only in cool water, otherwise lumps cannot be avoided. Potato jelly is ideal for making jelly.
- You can brew the drink from either fresh or frozen berries. There is no difference in taste. Moreover, you can even use dried ones. The only difference is that in this case it will take a little longer to manufacture.
- For greater health benefits, sugar can be replaced with honey, but it must be added to an already cooled drink. Natural syrup can also be used as a sweetener.
- If you prepare jelly from frozen blueberries, which have already been washed before freezing in the summer, then you should take them out a little in advance and let them thaw slightly. If you ate the product you purchased, be sure to wash it; in the process, the berries will defrost at the same time.
- When you don’t have a scale at hand, you can be guided by the fact that in a 200 ml glass there are 160 g of blueberries, and in a 250 ml glass there are 200 g.
Regular recipe (step by step with photos)
- 100 g blueberries (fresh or frozen);
- 100 g sugar;
- 3-4 tbsp. l. potato starch;
- 800 ml water.
Step 1. Prepare the berries: sort, wash.
Step 2. Squeeze out their juice using the comfortable method. It’s not difficult to create, you can even crush them with a spoon, they simply explode. And then strain through a sieve or several layers of gauze. Set aside the juice for now.
Step 3. Fill the cake with water, add 100-200 ml to dilute the starch. As soon as it boils, reduce the heat slightly and simmer for another 5-10 minutes. Remove from the stove. The broth can be left to steep slightly and cool, or strained immediately.
Step 4. Return the strained broth to the stove, add sugar. Stir.
Step 5. Just before boiling or when the first bubbles appear, pour in the diluted starch in a narrow stream, stirring constantly.
Step 6. Bring the almost finished jelly to a boil. Stir continuously. Afterwards you can let it simmer for another 1 minute.
Step 7. Remove from heat. Pour in the previously squeezed blueberry juice and stir. Serve chilled.
To avoid the formation of a film, the surface of the drink can be sprinkled with sugar. Although this is not a 100% guarantee, small unappetizing lumps of it can still occur.
Using the same recipe, you can prepare lingonberry or cranberry jelly. The last one comes out with a distinct but pleasant sourness.
With berries
- 100 g blueberries;
- 100 g sugar;
- 3-4 tbsp. l. potato starch (or 1-2 tbsp for the most watery mixture);
- 600 ml of water plus 100-200 ml for diluting starch.
- Sort and wash fresh or frozen blueberries.
- Boil water, add berries and sugar. Mix. After boiling, reduce the heat to low and boil the contents for another 10 minutes.
- Dissolve starch in cool water. Pour into the berry mixture in a thin stream. Boil. Then simmer over low heat for 1-2 minutes.
- Remove from stove. Serve chilled.
From dried berries
- 40 g dried blueberries;
- 150 g sugar;
- 2-3 tbsp. l. starch;
- 1.5 liters of water.
- Pour cool water over the fruits (add 100 ml to dilute the starch). Cook until softened, about 20-25 minutes.
- Strain the broth. Mash the berries with a spoon or wood pestle and return to the still hot liquid.
- Place the container with the contents on the stove and bring to a boil. Boil for 3-5 minutes.
- Remove from heat, strain. The cake will no longer be useful.
- Add sugar to the strained broth, adjusting the amount to taste.
- Return it to the stove and pour in the diluted starch. Stir while doing this all the time. Wait until it boils and remove from heat. Serve after cooling.
As with all recipes, the proportions for making blueberry jelly are arbitrary. To begin with, you can add a little sugar, wait for it to dissolve, test the drink (carefully so as not to get burned) and add more as needed. And the density can be adjusted experimentally, especially since, as almost all housewives note, it can vary from each starch manufacturer.
Blueberry jelly: production methods
Blueberries are quite often consumed and used in folk treatment (a process for alleviating, relieving or eliminating symptoms and diseases) . Blueberry jelly is perfect for those who have difficulties with the gastrointestinal tract.
The benefits of blueberries
Blueberries contain a lot of necessary parameters: tannins, potassium, calcium, sodium, malic acid, phosphorus and iron. The pulp of the berry is also beneficial for the human body. Doctors recommend cooking blueberry jelly first for people who suffer from diseases such as gastritis and ulcers. It perfectly and quickly copes with inflammation inside the stomach. Blueberry jelly will also help with diarrhea. This drink can quickly and forever fill you up, but it is quite high in calories. Therefore, it is not suitable as a diet (Diet is a set of rules for human consumption of food) or proper nutrition.
Almost all nutritionists advise consuming it in reasonable quantities and not overusing it. You can prepare blueberries for the winter or dry them for the summer. In both cases, it will be a good option both for health and for quenching thirst. In winter, with the help of compotes made from such berries, you can strengthen your immune system and eliminate various health problems. In the summer, compote or blueberry jelly will be a good salvation on hot days.
Traditional recipe: blueberry jelly
Any housewife understands how to cook blueberry jelly. True, if this happens for the first time, you must adhere to traditional manufacturing.
For the recipe you will need: blueberries - 200 or 250 g, starch - 4 tbsp, sugar, citric acid - a pinch and water - 2 l.
Blueberries need to be thoroughly washed with warm water and simmered over low heat. Add sweet sand and citric acid - this will give the drink a special rich taste.
When the water boils, strain the broth, grind the berries in a blender and throw back into the pan. Starch must be diluted separately in cool boiled water.
The decoction with crushed berries should simmer for about 10 minutes over low heat, then starch is added. It needs to be poured in slowly so that lumps do not form. After the water boils again, the pan must be removed and the broth allowed to brew. It is not prohibited to strain the water with berries after cooking, but it is not at all necessary to do this. When the fresh blueberry jelly has brewed and cooled to room temperature, it is poured into special molds. It’s time to add various fragrant seasonings: vanilla, cinnamon or cloves. Instead of sugar, you can put honey.
Frozen blueberry jelly
Preparing such jelly is very simple and straightforward. The drink will preserve all the vitamins (a group of low-molecular organic compounds of relatively simple structure and varied chemical nature) found in the berry, and with the help of starch you can feel how the jelly can turn out tender and soft.
For this recipe you need quite a few ingredients: frozen blueberries - 200 or 250 g, sugar or honey - 150 g, starch - 4 tbsp. l., water – 2 l.
Fundamentally! Blueberries must be defrosted in advance. Otherwise, it will lose all useful characteristics.
Place water on the stove, add blueberries and sweet sand, bring to a boil (15 minutes). In a separate bowl, dilute the starch in cool boiled water, then strain to remove any lumps that have formed. While constantly stirring the broth, you need to pour in the starch in a narrow stream. Boil for about 2 more minutes and remove from heat. Kissel is best drunk chilled. The drink can be made watery or thick, it all depends on the amount of starch.
How to properly prepare blueberry jelly for diarrhea?
In folk medicine, this jelly is used not only as a preventive measure to improve health, but also as a good remedy for diarrhea. This happens thanks to the starch contained in it. It gets rid of toxins (Ancient Greek toxin (toxikos) - poisonous - poison of biological origin) and harmful substances that “attacked” the stomach. For the healing to be effective, the drink must be prepared correctly.
For this you will need: blueberries - 200 or 250 g, sugar - 200 g, starch - 4 tbsp. l., water – 2.5 l.
Place a saucepan with water on the fire and bring to a boil. Add blueberries, sugar and cook it all for about 20 minutes. The starch must be diluted in cool water until it becomes sour cream and poured into the broth in a narrow stream, stirring constantly. Cook for no more than 2 minutes, remove the pan from the heat and let cool to room temperature.
Contraindications
Before you start drinking this drink, you should seek professional advice from a doctor. Blueberries, like almost all other foods, have negative traits. There are several circumstances prohibiting drinking blueberry jelly:
- Urolithiasis disease.
- Cholelithiasis.
- Increased acidity in the stomach.
- Personal intolerance to berries.
- Diseases (disorders of normal functioning, performance) of the pancreas.
- If a person has a disease such as oscalaturia, drinking jelly is also prohibited. This is a disease in which all salts beneficial to the body are excreted together with urine.
Also, if you consume this drink in excess, you can get constipation, gastritis and ulcers. It should be used for diarrhea in courses and in the correct doses.
Kissel for children
Almost all mothers know firsthand that such a decoction is very useful for their children. It can be given for the treatment and prevention of diseases of the organs of vision, as well as for diseases of the gastrointestinal tract. This drink will also be useful for strengthening the immune system. If the baby does not have an allergic reaction to the berry, it is possible and even necessary to give jelly.
Children under one year old need to cook jelly without adding sugar, honey or fragrant seasonings. Its ingredients should consist only of starch and blueberries themselves. The drink should be made as watery as possible. When the child is older, the starch is made thicker. The decoction should be prepared every time so that it is always fresh. It is best for the child to drink the jelly after he has had lunch and only when it is warm. Children under one year old should be given it two or three times a week and only once a day.
Fundamentally! If the baby tries it for the first time, the mother needs to strictly monitor the baby’s condition. It is prohibited to brew a drink for children from semi-finished products!
Blueberry jelly is useful for both adults and children. Its use in a reasonable amount will help strengthen the body and eliminate all diseases (disturbances in normal functioning, performance) associated with the gastrointestinal tract. If there is at least one of the contraindications, you should immediately exclude the drink from the diet so that the reverse effect does not occur or other diseases do not worsen.

How much water should I put in the pan? According to the recipe, there is only 1 glass of water and, as I understand it, it is poured together with starch.
