Potato babka is a national Belarusian treat, which has become popular in almost all countries thanks to its usual production. It is also called a peasant dish: nourishing, tasty, energizing for the whole day. There are many recipes, but potatoes always remain the basis; they are mixed with meat, lard, mushrooms, and served with sour cream sauce.
How to cook potato babka?
Belarusians say that the most delicious potato babka comes with lard and mushrooms, but you can put them separately. For mushrooms, it is better to take chanterelles or snow-white ones; forest mushrooms impart a unique smell. It’s more convenient to cook in pots or a casserole dish; almost everyone uses an oven tray. Experienced chefs advise eating this dish only when it’s hot; later it loses its taste. But there are tricks thanks to which potato granny retains its characteristics even when cool:
- After rubbing, the potatoes quickly turn blue and lose their taste. To prevent this from happening, you need to add an onion.
- It is recommended to squeeze the grated pulp slightly, otherwise the starch will be felt differently.
- The treat remains soft for a long time if you pour half a glass of milk into the potatoes.
Potato babka in Belarusian
The Belarusian babka is an invention of housewives who could rely more on potatoes than on any other vegetables.

- meat – 200 g;
- onions – 2 pcs.;
- hard cheese – 100 g;
- butter – 50 g;
- eggs – 2 pcs.;
- flour – 1 tbsp. l.;
- garlic – 2-3 cloves.
- Chop the meat and onion, fry, add salt and pepper.
- Grate the potatoes and squeeze a little.
- Crush the garlic, add to the pulp along with flour, salt, spices, mix.
- Add half the meat.
- Place the rest of the roasted meat on a greased baking sheet and cover with potatoes.
- Bake for 1 hour.
- 10 minutes before the end, sprinkle the potato babka with grated cheese.
Potato babka with milk
Potato babka in the oven is the most common recipe. It is considered the most delicious, since the oven is analogous to the oven where this dish was first prepared. It can also be called an ordinary casserole, the main thing is to grind the potatoes to a puree; some ladies use a meat grinder rather than a small grater.
- potatoes – 2.5 kg;
- onions – 2 pcs.;
- lard – 150 g;
- milk – 100 ml;
- eggs – 2 pcs.;
- flour – 1 tbsp. l.;
- soda – 0.5 tsp.
- Grate the potatoes together with the onion, squeeze, beat in the egg.
- Pepper, salt, add flour and soda, mix.
- Fry the onion with lard and add to the mixture.
- Add milk, stir.

Potato babka in a frying pan - recipe
They jokingly say that potato babka in a frying pan is an invention of lazy or very busy housewives, when the family asks for potato pancakes, but is too lazy or doesn’t have time to bother. For the recipe, it is better to take brisket, or half and half with lard. Among the spices, potatoes “love” dill, caraway seeds, thyme and turmeric. You can also put your beloved ones.

- Potatoes – 16 pieces.
- Meat (pork) – 350 gr.
- Flour – 2 teaspoons.
- Onions – 2 pieces.

1. Chop the onion, peeled in advance, and fry it with bacon until golden brown.
2. Cut the meat into small cubes and fry it with butter in a frying pan.

- Mushrooms – 120 grams new or 30 grams dried.
- Onion – 2 pcs.
- Oil – 2 tablespoons.
1. Grind our potatoes on a small grater until they become porridge.

3. Let's start making minced mushrooms with onions.

Method of action:
- Cut the bacon (or pork) into small cubes or bars. Fry in a frying pan, transfer to a dish, leaving the rendered fat.
