Answers to frequently asked questions
A novice housewife may have questions while making baked halibut; without receiving the correct answers, she can hardly count on an ideal result.
In our country, halibut is sold frozen in the form of carcasses (usually gutted and without heads), steaks or fillets. When choosing a product, you need to imagine in advance what dish it should turn into. To bake completely, you will need carcasses weighing 1-1.5 kg. If the fish weighs more, you will still need to cut it into steaks.
When purchasing, they pay attention not only to the shelf life of the product, but also to other reasons. It is not recommended to receive fish covered with a thick layer of ice - it is usually artificially frozen. The presence of snow, water, or pieces of ice in the package should also make you think. All this indicates incorrect storage of the product. It is possible that the fish was defrosted and frozen more than once. This has a bad effect not only on the organoleptic qualities of the product, but also on its safety.
An essential step in preparing fish for baking is defrosting it. Halibut must be removed from the freezer in advance and placed in the main chamber of the refrigerator, where it should be kept until completely thawed. It is not allowed to expose the product to a sharp temperature change, otherwise it will lose a lot of water and become narrowed and loose. Trying to speed up the process using a microwave or warm water will not lead to anything great.
If you have a carcass with the head and not gutted, it must be scaled, decapitated and gutted. Gutted carcasses are easy to clean.
When cleaning halibut, be sure to remove the fins. It is not allowed to bake fish with them, because they have a sharp, specific smell that can ruin any dish.
Next, the carcass is washed and dried with a towel. If necessary, cut the fish into fillets or steaks.
If you have already prepared fillets or steaks, all you have to do is defrost them, rinse them and pat them dry with a napkin, after which you can start cooking.
To preserve the juiciness of the fish, it is often baked in foil. If you remove the foil some time before it’s ready, the fish will have time to brown and look appetizing.
From time to time, before baking, halibut is marinated in lemon juice, soy sauce, or simply rubbed with salt and spices. Thanks to this, it also comes out the most juicy.
It is important not to exceed the recommended baking time for halibut, otherwise it will dry out.
Halibut mixes well with potatoes, cauliflower, broccoli, tomatoes, sweet peppers, onions, carrots, zucchini, and mushrooms. It can also be served with a side dish of rice. Halibut is often baked immediately with potatoes or other vegetables, as well as mushrooms. Such dishes are often served without a side dish.
Baked halibut is a tasty and necessary appetizer that can decorate a festive table. Neither a gourmet who loves to eat deliciously, nor a follower of a healthy diet who appreciates healthy and not very nutritious food will refuse such a treat.

How to cook halibut fillet in the oven
Ingredients:
- Halibut – 3 pcs. (total fillet weight is about 700 g)
- Onions – 1 pc. big
- Carrots – 1 pc. average
- Lemon juice - to taste
- Salt - to taste
- Dark pepper - to taste (freshly ground)
- Butter – 1 tbsp.
- Chicken egg – 1 pc.
- Sour cream – 150 g (15%-20% fat content)
- Greens - optional
Manufacturing:
For the dish, I used frozen halibut fillet without skin. The fillet is covered with an icy “glaze,” and to get rid of it, I took the fish out of the freezer in advance. And to speed up the process of thawing the fish from the ice, you can put it in a bowl and fill it with water. The ice will quickly leave the fillet and you can begin the marinating process.
So, the fish is completely defrosted, and you will have to work with it carefully, I would even say kindly. The fact is that when the ice crust completely comes off the fillet, the fish may break.
Wash the halibut fillet carefully and dip it in a cardboard towel.
Cut the fish into pieces. My fillet was quite huge, in the end there were 3 pieces. If the fillet is small, you can cut it in half or throw it whole if the size is completely small.
I recommend marinating fish with the smallest set of spices and seasonings. The standard is salt, pepper and lemon juice. Halibut is a very warm and fatty fish; there is no point in filling its taste with unnecessary herbs. It’s better to add onions and carrots or create a sour cream filling.
I'll show you two methods for making halibut fillets in the oven. This is halibut fillet with vegetables in a parchment envelope and fish in sour cream filling and, by the way, also with vegetables.
Cut a huge onion or two medium ones into thin rings. To do this, I used a special grater, the rings came out very thin, it couldn’t be done with a knife. I grated the carrots the same way, as thinly as possible. Why is it necessary to create such a clipping? Yes, because the fish cooks quickly, 20 minutes - and it’s ready, but the vegetables may not be ready yet, so I recommend that you create the slices as thin as possible.
While we are cutting vegetables, our fish pieces are soaked in salt, pepper and lemon juice.
Cut a square of parchment paper measuring 40 by 40 cm. Place vegetables on one part of it, sprinkle lightly with salt, and maybe pepper.
Place the halibut fillet on the vegetables.
Cover with vegetables and arrange pieces of butter. Why creamy and not vegetable and olive? It’s just that with this oil, fish and vegetables will melt in your mouth, and the taste will be the creamiest. Naturally, if desired, the butter can be replaced with vegetable oil, quite insignificantly, just sprinkle it on the fish.
Cover the fish and vegetable filling with the loose part of the parchment and roll the edges into a tube.
Then twist the remaining free edge, making a tightly closed envelope.
It is very convenient to create such envelopes before guests arrive. Roll it up, put it in the refrigerator, and when guests are on the doorstep, quickly pop the halibut fillet into the oven, 20 minutes - and the treat is ready.
For another option for making halibut, we will need 1 egg and 150-200 grams of sour cream.
Create a filling from eggs and sour cream, everything is simple - shake and you’re done, don’t forget to add salt and pepper, you can add dried basil.
Grease a clay mold (glass is also suitable) with a piece of butter, place the vegetables on the bottom, and place the halibut fillet on them. Fill with filling.
Cover the pan with foil and place in the oven along with the envelopes.
The cooking time for both dishes is the same - 20 minutes, literally the same temperature - 180 degrees. You should not open the envelopes while stewing, but you can remove the foil from the pan 5 minutes before the end of cooking.
If the fish in sour cream filling must be served on a separate plate, then you can do it differently with the envelope. Serve an envelope to guests or household members, making a cross-shaped cut in it. The fillet will be in its juice, the vegetables will be soft and fragrant. You can take the fillet out of the envelope and serve it with a side dish; to do this, simply unwind the envelope.
A side dish for halibut fillet baked in the oven can be boiled rice, potatoes, stewed vegetables, or just a bowl of salad with fresh vegetables. Garnish the dish with the freshest herbs (onion, dill, parsley sprig) and enjoy the delicate taste. Bon appetit!
