  4. We work again with a mixer, achieving a smooth, homogeneous and still liquid dough. Add flour evenly, continuing to beat the flour mixture.
  5. When the thickened mass stops giving in to the mixer, we begin kneading by hand. As a result, you need to get a fairly thick and crumbly shortbread dough that does not stick to your palms. Because flour comes in different properties, you may need a little more or less of it than indicated in the recipe - we rely on the condition of the dough.

In appearance it is very reminiscent of the familiar grated pie, although there were still differences. It comes out the crispiest, which is why, in my opinion, it really looks like a cookie.

Step-by-step production

Step 1:

Measure out the ingredients you need from the list. Be sure to sift the flour to saturate it with oxygen. The properties of baking will depend on this in almost everything. Remove the margarine from the refrigerator in advance so that it has time to soften.

Step 2:

In a separate container, mix eggs with sugar. It is not necessary to use a mixer, just shake the mixture with a whisk until the sugar crystals are completely dissolved. You can replace it with a sweetener, which is not subject to heat treatment.

Step 3:

Add a pinch of salt.

Step 4:

Whisk until light foam appears.

Step 5:

Place the softened margarine in a bowl and mix with a small amount of sifted flour. Grind into crumbs with your hands. Margarine can be replaced with butter, but in the traditional version of the recipe, margarine is used specifically.

Step 6:

This is the not-so-small crumb that comes out (as in the photo).

Step 7:

Add chopped margarine to egg mixture.

Step 8:

Add a packet of vanilla sugar. You can replace it with vanilla according to the instructions (on the tip of the knife). Be careful with the dose of vanillin; if you add more than necessary, the taste of the baked goods will be bitter.

Step 9:

Stir the mixture until smooth.

Step 10:

Separately mix the baking powder with a small amount of flour and add it to the dough, so it will be better distributed. You can replace it with baking soda (1 teaspoon) quenched with 3% vinegar (1 tablespoon). There is no need to combine it separately with flour. Add to the dough immediately. Add the remaining flour in portions. You may need a little more or less, depending on how much the dough takes. Focus on the desired thickness. It should turn out pretty cool.

Step 11:

Knead into a thick, soft dough. There is no need to knead the dough for a long time so that the margarine or butter does not melt and flow from the warmth of your hands. Gather the dough into a ball.

Step 12:

Divide into 2 unequal parts. Place the smallest one in a bag and place it in the freezer for at least 15 minutes.

Step 13:

Spread the second huge portion sparingly over the baking sheet with your hands. Lightly grease the bottom of the mold with refined sunflower oil or butter in advance.

Step 14:

Spread the dough into a narrow layer, forming low sides.

Step 15:

Lubricate the dough layer on top with some thick jam. It is better if it is sour (I took apple jam). If you only have liquid jam, you can strain it through a sieve. Do not add too much of it, otherwise it will leak out during the baking process.

Step 16:

Remove the second part of the dough from the freezer. Grate immediately over the pie using a large grater, covering the filling with crumbs.

Step 17:

In advance (10-15 minutes before baking), preheat the oven to 180 degrees. Bake the pie for approximately 30-40 minutes until golden brown. Baking time and temperature can be changed. Everything will depend on the characteristics of your equipment. When the top of the baked goods is browned, check the doneness with a wooden toothpick. Pierce the pie in several places, if it comes out without any raw dough sticking, it's done.

Step 18:

Remove the baking sheet with the pie from the oven. Let it cool. Cut into squares of similar size.

It is very simple to prepare, especially since every housewife has a jar of jam or jam in her supplies. This is perhaps the main ingredient needed, and the rest can literally be found in the refrigerator and on the kitchen shelf.

Ingredients for the dough:

  • 180 g butter
  • 450 g flour
  • 200 g sugar
  • 1 testicle
  • 10 g baking powder
  • vanillin packet
  • a pinch of salt

Ingredients for the inside:

  • 2 cups thick jam or jam
  • 1-2 tbsp. spoons of starch or dry jelly

Mix soft butter with sugar and grind until smooth.

Add the egg to the resulting mass and mix well.

In a separate bowl, mix flour, baking powder, vanillin and salt.

Add the dry mixture to the butter mixture and knead into a soft dough.

Divide the finished dough into two parts, put one in the freezer, and distribute the second in an even layer. There is no need to lubricate glass or silicone molds with oil.

Add a couple of tablespoons of starch or dry jelly to the jam and stir thoroughly.

Distribute the filling over the dough laid out in the mold.

We take the second part of the dough out of the freezer, grate it on a large grater and distribute it on top of the jam.

Bake Viennese cookies in an oven preheated to 200 g for 35-40 minutes, then, while they are warm, cut into squares or diamonds.

It will turn out even tastier if the inside of the jam is sour, combined with a sweet dough - it’s just great!

  • Cover the baking sheet with parchment paper. Spread the dough moderately over the paper. There is no need to press down the dough too much, otherwise it will turn out a little tough.
  • Spread jam onto the dough in an even layer.
  • Now use your hands to crumble the remaining chilled piece of dough over all surfaces of the cookies. Bake in an oven preheated to 150 degrees for 30 minutes. Then increase the temperature to 200 degrees and bake for another 5 minutes. Scoop lightly and cut into portions.
