The unusually tasty homemade liqueur with chokeberry, which we will prepare now, does not necessarily need to be left for weeks and months - you can taste it the next day! Fabulously fragrant, pleasantly sweet with a gentle sourness, beautiful, light and completely without the aftertaste of alcohol. It simply smells like cherries, even though there are no berries in this drink.
In fact, I have little doubt whether it is liqueur or liqueur, because the amount of sugar in these two drinks is almost the same. Maybe experts will tell you... In any case, the current recipe differs from all other fruit and berry liqueurs that are on the website - we will not infuse the raw materials on an alcohol base for a long time and stubbornly.
The most basic thing for making the most delicious homemade chokeberry liqueur is a mature chokeberry, a sufficient amount of cherry leaves and high-quality vodka. Naturally, you can use diluted alcohol, if available. The strength and sweetness of the finished drink can be adjusted to your own taste without any problems - according to my proportions, it turns out to be a very light (about 15 degrees, but I’m not entirely sure of the numbers) and not cloying liqueur.

Making a dish step by step:
To make this fragrant and very tasty homemade liqueur, we will need the following ingredients: vodka, drinking water, chokeberry, cherry leaves, sweet sand and citric acid.
We remove mature chokeberries from the branches, sort them out, thoroughly wash them and place them on a sieve.
After this, transfer it to a saucepan or stewpan. We wash the cherry leaves (try to pick beautiful ones that are not spoiled) and add them to the mountain ash.
Fill the contents of the dish with water (cool or boiling water, as you wish) and place on medium heat.
Bring the berries to a boil and simmer over low heat for almost a few minutes. After this, cover the saucepan with a lid and let it cool completely at room temperature. When the berries, leaves and water have cooled, put the saucepan in the refrigerator overnight (that is, in the dark) (8-10 hours).
During this period of time, the berries and cherry leaves will give the water their own color, taste and smell.
Place the contents of the dish onto a sieve or colander to drain the broth into a deep container. Squeeze the berries and leaves with your hands to get all the liquid.
Pour the berry broth back into the saucepan, add sugar and citric acid. Place on medium heat and, stirring, allow the sugar and lemon juice to dissolve completely. No need to boil. Let the berry base cool to room temperature.
Then add vodka and mix everything.
Homemade chokeberry liqueur with cherry leaves is ready - pour it into bottles for storage. Seal tightly and store at room temperature in a dark place. It is best to let the liqueur brew for about 2 weeks, but you can drink it right away (I recommend refrigerating it before drinking). In total, from the indicated amount of ingredients used, I get 1.6 liters of a fragrant drink.

Chokeberry liqueur. Traditional recipe
The usual drink recipe does not require much effort. But the ease of production does not in any way simplify the rich, unique taste. An indisputable plus is that it is immediately ready for tasting and does not require time to infuse.
Useful:
- Chokeberry berries – 2 kg;
- High-quality alcohol – 1 l;
- Sweet sand – 800 g.
Manufacturing stages:
Place the berries in a saucepan of bubbling water for half a minute. Later grind it and combine the resulting juice with sweet sand. Next, combine the syrup and alcohol. The ratio of liquids is taken 1:1. But, if desired, the alcohol content can be increased or decreased.
The finished chokeberry liqueur with vodka is distributed into a glass container. The bottle must be tightly closed to prevent air from entering.
Should be stored in the refrigerator or other cool place. The degree of homemade liqueur reaches 22 revolutions. Storage is allowed for 2 years.
Aronia liqueur with cherry leaves

Next, vanilla sand and the juice of 1 citrus are sent into the pan. The resulting broth needs to be cooled, then left in the refrigerator. He must “rest” for a day.
Then the syrup must be filtered through gauze (a medical system of cells and intercellular substances united by a common origin, structure and functions) , combined with diluted alcohol, and bottled. Homemade liqueur is infused for approximately 3 months. Alcohol strength – 12 revolutions. Shelf life – 2 years.
Spiced liqueur
If you add spicy seasonings to chokeberry liqueur, you will get a velvety, viscous, catchy alcoholic drink, dense, with both sourness and bitterness. And the spicy smell will help you relax. Real taste for connoisseurs of natural products.
Useful:
- Berries – 2 kg;
- Alcohol – 0.7 ml;
- Pure water – 0.5 ml;
- Sugar – 1 kg;
- Lemon – 1 piece;
- Honey – 4 tbsp;
- Vanilla sugar – 16 g;
- Cloves – 5 pcs.
Manufacturing stages:
Place the berries in a jar of a suitable size. We combine them with alcohol, sugar, cloves and vanilla sugar. Seal tightly and shake the filled container a couple of times. Leave in a dark place with a low temperature for about three weeks. From time to time, once every few days, the vessel with liquor should be shaken to mix the components.
After 20 days have passed, strain the infusion. Soak the berries in 500 ml of water and leave for several hours. Then add this water to the infusion. Stop infusing again for 14 days.
The next step is to add honey and juice of 1 lemon. Pour the purchased chokeberry liqueur into a clean glass container. Keep the drink for 6 months. To obtain transparency, the liquid should be filtered from time to time.
The strength of liqueur prepared at home is 12-14 revolutions. Use within 2 years.
Homemade liqueur with orange zest
If you add orange zest to the recipe, the taste will sparkle with new and exciting notes. In addition, the taste of alcohol is not completely felt. Anyone can enjoy this basic recipe.

- Berries – 1 kg;

- Vodka or moonshine – 0.5 ml;

The syrup is prepared using 2 methods:

If you have a sufficient number of berries, I advise you to create rowan liqueur at home using one of the proposed recipes.
Unlike similar tinctures, liqueurs do not sit for 1-2 months, but are drunk immediately after production. But the process itself takes longer, because the rowan berries (especially the reddish ones) give up juice reluctantly, so you have to help. For any of the recipes, fresh, ripe, juicy rowan is required, collected at the end of the season after the first frost. The berries must be separated from the branches and carefully sorted, removing unripe, small and spoiled fruits.
Instead of vodka, alcohol diluted to 40 degrees or perfectly purified moonshine without aroma is suitable. Lovers of woody notes use cheap but natural cognac as an alcoholic base. Sugar can be replaced with watery honey (add approximately 60% of the amount of sugar), but it is better not to heat the honey syrup above 40 °C to preserve the beneficial substances.
If sediment or turbidity occurs in finished drinks, filtration through cotton wool will help.
Aronia liqueur
Ingredients:
- chokeberry berries – 2 kg;
- vodka (alcohol, moonshine) – 1 liter;
- sugar – 800 gr.
Recipe
1. Pour boiling water over the berries or place them in a colander in boiling water for 30 seconds (method 2 is more effective).
2. Pass the scalded berries through a meat grinder and squeeze out the juice with gauze folded in 2 layers.
3. Add sugar to the juice and stir.
4. Dilute rowan syrup with vodka. The recommended proportion is 1:1, but you can change the ratio to get the liqueur of the desired strength.
5. Pour the finished drink into bottles (preferably dark glass) and seal tightly with a cork.
Store chokeberry liqueur in the refrigerator or basement, maintaining a steady temperature of 5-7°C. Strength – 18-22%. Shelf life – 2 years.
Reddish rowan liqueur
Ingredients:
- reddish rowan berries – 1.5 kg;
- sugar – 1 kg;
- vodka (alcohol, moonshine) – 1 liter;
- water – 1 liter;
Recipe
1. Mix sugar and water in a saucepan and bring to a boil. Cook over medium heat for 5 minutes, occasionally skimming off the white foam from the surface. Remove sweet syrup from heat and cool to room temperature.
2. Scald the berries with boiling water, then grind through a meat grinder. Squeeze the juice out of the purchased “minced meat” (squeeze the pulp dry).
3. In a separate container, mix the freshest rowan juice, sweet syrup and vodka. Stir until the water becomes a homogeneous mixture.
4. Pour the finished homemade liqueur from reddish rowan berries into bottles. Store the drink in the refrigerator or basement. Shelf life – 2 years. Strength – 11-14%.
Chokeberry liqueur with cherry leaves
Cherry leaves in the composition enrich the taste with new notes.
Ingredients:
- chokeberry – 1 kg;
- cherry leaves – 200 gr;
- vodka (moonshine, alcohol 40%) – 1.5 liters;
- sugar – 1 kg;
- water – 1 liter.
Recipe
1. Scald the rowan berries with boiling water, grind the berries through a meat grinder, squeeze out the juice.
2. Boil water, add cherry leaves to the boiling water, simmer over low heat for 20 minutes, stirring occasionally. Cool and strain the purchased broth through cheesecloth (do not squeeze too much).
3. Add sugar to the decoction of leaves, boil again, cook over low heat for 20 minutes, skimming off the foam.
4. Mix rowan juice with sweet syrup and vodka.
5. Pour the liquor into bottles. Close tightly. Strength – 12-14%. Shelf life away from direct sunlight is up to 2 years.

- Chokeberry - 3 kilograms.
- Sweet sand – 500 gr.
- Vodka – 1 liter.
The berries are scalded with boiling water to soften and passed through a meat grinder or blender. The purchased puree is squeezed through cheesecloth to separate the juice, which is subsequently mixed with sweet sand. The mixture is infused for a couple of hours until the sugar is completely dissolved and berry syrup is obtained. After this, vodka is added, and the liqueur is considered ready. If desired, it can be infused in a cold place, but not for more than one week.
Reddish rowan liqueur

- Reddish rowan - 1.5 kilograms.
- Vodka – 1 liter.
- Water – 1 liter.

First you need to prepare sweet syrup. To do this, sugar is mixed with water and brought to a boil over low heat. After boiling, the syrup simmers for about 10 minutes and is removed from the heat. The foam formed during cooking must be constantly removed.

A liqueur made from chokeberry and cherry leaves will have deep woody notes and high astringency. To make it you will need:
- Chokeberry – 500 gr.
- Water – 1 liter.
- Vodka – 500 ml.
- Cherry leaves - from 50 to 100 pieces.
- Citric acid – 1 tablespoon.
- Sweet sand – 500 gr.
Berries with leaves and sweet sand are mixed in water. The ingredients are placed in a saucepan with a thick bottom and brought to a boil over low heat. After bubbles appear, keep the mixture on the stove for another 5 minutes. At the last minute, citric acid is added and thoroughly mixed. The purchased syrup is combined with vodka. The purchased product is infused in a dark, cold place for 2 weeks. After this, it is ready for use.
Useful tips
When choosing alcohol and its quantity for reddish rowan liqueur, it is worth considering that the berry itself will be less sweet than black and more tart. Therefore, you should not take strong alcohol or moonshine. Vodka is perfect. But it’s best to mix cognac with reddish rowan.
When adding leaves, they must be carefully cleaned of dust and washed. You should not collect leaves from plants located near the road or simply in a polluted environment. They absorb all harmful substances and then transfer them to alcohol.
To preserve the original taste of the drink, it is better to use glass containers. It does not interact with the alcohol component and is available for use. It is strictly forbidden to store liquor in iron cans.
