Curd cookies “Envelopes”

Cookies that are ordinary in ingredients and production with a pleasant cottage cheese smell and a crispy crust.

Ingredients for “Curd cookies “Envelopes””:

  • Cottage cheese (it is better to take fatty cottage cheese, so that it is easier to mix into a homogeneous mass, without grains) - 1 pack.
  • Butter (or creamy margarine, I usually take margarine, butter - only if it starts to smell bitter) - 1 pack.
  • Salt (pinch) - 0.25 tsp.
  • Soda (can be replaced with baking powder) - 0.5 tsp.
  • Wheat flour / Flour (high grade) - 1 cup.
  • Sugar (for dipping the dough)

Recipe for “Curd cookies “Envelopes””:

Mix cottage cheese, margarine, salt and soda, add flour and stir again

Knead a soft dough (doesn't have to be sticky)

Roll out the dough and make circles

Dip in sugar and place on a baking sheet, sugar side up

Prepare the food.
Pour melted margarine into a deep bowl (do not melt it until it becomes watery, the dough will leak), a pack of cottage cheese, salt and baking soda. Mix thoroughly with a fork until smooth. Add a glass of flour and knead the dough. Tear off a piece of dough the size of an apple (or whatever is comfortable for you), roll it into a narrow layer with a rolling pin (approximately 2-3 mm, as it turns out.. the thinner, the tastier).
Using a mold or glass, cut out circles from the dough. Dip one side of any circle into sugar, then fold it in half and dip one side again, bend it in half again (we bend specifically the side that is in the sugar) and dip it again. A quarter of a circle came out with sugar on top. Place on a floured baking sheet. Place in the oven for 25-30 minutes. The oven must be preheated, so you need to turn it on in advance and set the temperature to 180 degrees.
During cooking, do not open the oven, because then the layers of cookies will stick together and there will be no beauty or taste.
I recommend setting the time to 20 minutes and see, if you don’t like “coals” like my husband, then 20-25 minutes will be enough. You can also add cinnamon to the dough if you like.
And I wrap the raisin in one cookie - this is our “lucky envelope”)) Bon appetit!

Curd “Envelopes” or “Kisses”, as well as “Ears” and “Triangles” have a delicate base and an excellent curd-sugar taste.

It’s not for nothing that our cookies have so many exciting names. The dough recipe and the process of forming these magical cookies is not a secret at all. I bet every housewife has it in her culinary notebook, inherited from her mothers and grandmothers. Let's compare?

For the test, products are taken from the list. Cottage cheese is used low-fat, and butter is softened or melted. The dough will take as much flour as needed - approximately 400-500 grams, depending on the fat content of the cottage cheese and butter.

The cottage cheese is ground through a sieve into a glass container.

Warm butter is added to it.

The products are painstakingly whipped using a mixer into a curd and butter cream. For aroma, you can add vanillin at this step if desired. I didn’t create this because I used vanilla curds.

Flour is added evenly to the curd cream.

Baking soda is quenched with boiling water or vinegar and added as a leavening agent.

The dough is kneaded well and formed into a bun. The bun for the envelopes should be moderately thick and flexible. After kneading, the dough is put into a cold space for 2.5 hours.

The finished dough is rolled out into small layers 3 mm wide.

Using a mold, round blanks for envelopes are cut out.

Alternately, any circle from below is immersed in sweet sand. For convenience, sugar can be scattered on a flat plate.

Then the circle is folded in half. The lower part of the crescent is already immersed in sugar. Then the crescent is folded again, and the 4th part of the circle is already immersed in sugar.

One by one, the dough is formed into circles and formed into sweet envelopes. The cookie blanks are carefully placed on a baking sheet, without pressing too close, with the sweet sprinkles facing up. Previously, the baking sheet is covered with baking paper, lightly greased with melted butter.

The envelopes are sent to the middle compartment of the oven preheated to 200°C. The baking time for “Envelopes” cookies made from cottage cheese is 15-20 minutes, depending on the power of the oven.

During the manufacturing process, our dessert pastries increase in size three times, turning into very appetizing airy “dumplings”. I would like to try them here. Yes, when hot, the cookies come off the baking sheet easier than when they cool.

Curd cookies “Envelopes in Sugar”

It’s not difficult to make cottage cheese cookies “Envelopes in Sugar”. The recipe is so simple that even a novice housewife can handle it. The ingredients we need can be found in everyone's kitchen. The dessert will be simply amazing!

Ingredients:

  • sugar - 4 tbsp,
  • butter - 100 gr.,
  • baking powder - 1.5 tsp,
  • cottage cheese - 250 gr.,
  • wheat flour - 200 gr.,
  • a pinch of salt,
  • chicken egg - 2 pcs.

Step-by-step production:

Step 1. To begin, you need to knead the cottage cheese and salt well with a fork until you get a homogeneous mass. You can use a mixer, so the mass will be as airy as possible.

Step 2. Add butter to the mass given to us and continue to mash with a spoon or use a mixer. You also need to add chicken eggs. The mass must be homogeneous.

Step 3. Sift flour with baking powder through a sieve and add to our homogeneous curd mass. You need to sift the flour so that it is saturated with air. The dough will bake better later.

Step 4. Knead the dough with your hands, roll it into a ball and put it in the freezer for 10 - 15 minutes. The dough should become elastic; later it will be easier for us to work with it.

Step 5. Take it out after 15 - 20 minutes, let it stand at room temperature for 5 minutes.

Step 6. Then roll it out on a table sprinkled with flour. You should get a narrow layer (approximately 3 - 4 mm). We try to roll it out perfectly so that there is no such thing that in some places the layer is thicker and in others thinner.

Step 7. Take a culinary ring or glass and cut out circles.

Dip one side in sugar, fold it in half and again dip it in sweet sand, then fold it in half again. Next you need to crush our envelope and dip it in sugar again.

Step 8. We perform such manipulations with each circle.

Step 9. Cover a baking sheet with baking paper and lay out our treat.
Bake for 15 - 20 minutes at 200 degrees. Let's take out our wonderful dessert and make our family happy!

When the cookies are hot, they are soft. Once it cools slightly, it will become crispy. By following all the steps and proportions in production, the cookies will turn out perfect. This is the usual recipe you have just learned.

Curd dough envelopes with entrails

An instant recipe for the most delicious envelopes made from curd dough with jam and chocolate insides. Yes, in general, it doesn’t matter at all what kind of internals! I had little peach jam left after the almond muffins and a jar of cherry.

But no matter what filling you choose, it must be thick and not spill, otherwise CHEF! EVERYTHING IS LOST!

The curd and shortbread dough is kneaded in a matter of minutes and we only need 3 ingredients for it, and not a gram of sugar from them.

This is that inconvenient moment when you are convinced of the truth of the rule: the simpler, the better.

This dough comes out very plastic and easy to work with: it is very easy to roll out and mold.

And in the end, it turns out to be tender, crispy envelopes that simply melt in your mouth.

In general, everything is perfect in this test.

Well, I don’t think it’s worth mentioning the usefulness of cottage cheese, of which there is a lot here.

And if your spouse or children don’t love cottage cheese, just don’t tell them what these envelopes are made of. In real life they would never guess that there is cottage cheese in there.

That's it, I won't advertise these masterpiece envelopes anymore. Just make them and see for yourself: they are beautiful!

Curd dough envelopes

Ingredients:

  • flour - 300 gr.
  • butter, cool - 175 gr.
  • cottage cheese - 250 gr.
  • egg for lubrication - 1 pc.
  • cherry or any other jam - 300 g
  • chocolate paste – 300 gr.

Manufacturing:

1. Sift flour onto a work surface or into a large bowl. Top with cool diced butter and cottage cheese.

2. Mix all the ingredients, kneading with your hands, and carefully knead into a homogeneous elastic dough. If during kneading the dough sticks to the work board, dust the surface with flour and knead again. Knead until the cottage cheese is one hundred percent dissolved in the dough.

3. Form the dough into a ball, wrap it in cling film and place it in the refrigerator for at least 30 minutes.

4. Preheat the oven to 190º. Take the chilled dough out of the refrigerator and roll it out with a rolling pin into a narrow rectangular layer 2 mm wide.

5. Trim the uneven edges and cut the layer into squares measuring 10x10 cm and place 1 teaspoon of jam or chocolate spread in the center of each square.

6. Lightly beat the egg and, using a brush, brush the edges of each square around the perimeter.

7. Fold any square in half, connecting the corners in such a way that a triangle emerges.

8. Place the envelopes on a baking sheet covered with parchment and brush with the remaining egg.

9. Bake the cottage cheese dough envelopes in a preheated oven for 20-25 minutes. Place the finished envelopes on a wire rack and cool.

10. You can serve the curd envelopes still warm or cool, sprinkled with sweet powder. (Don’t forget that we didn’t add any sugar to the curd dough)

This recipe is designed for about 20 fairly large cottage cheese envelopes. You can reduce the size of the squares to 8x8 cm and get 30 small envelopes.

The same envelopes made from curd dough can be used for salted entrails, such as cheese, ham, etc.
