There are options with entrails to suit every taste, but first, I would like to talk about the traditional recipe for “Korovka” sweets at home. This recipe will allow you to get candy that tastes the same as in the store.
Ingredients:
- 1 glass of high fat milk;
- 1.5 cups sugar;
- 50 grams of butter;
- half a teaspoon of citric acid.
You see, the composition is quite ordinary. Before making it, you should also prepare the molds for the candies. Alternatively, these can be ordinary silicone molds for baking or ice. They are the most convenient to use and do not require additional lubrication. If you have an ordinary mold, you will have to slightly grease it with butter so that the candies do not stick. You can also take an ordinary huge baking dish. It’s just that later you will need to use a knife to cut the bulk into candies.
Manufacturing:
Take a saucepan with a thick bottom, pour milk into it, bring it to a boil and add sugar and butter. Then boil all these ingredients together, stirring thoroughly. When the mass has thickened and darkened slightly, add citric acid and mix everything well. Then, stirring, cook the mixture until it acquires a dark brown color. This takes approximately half an hour.
The readiness of the mass can be checked in the following way: drop a little syrup into cool water, then try to roll a ball out of it with your fingers; if the mass does not stick to your hands, then the base for the candies is ready. This means now you can pour our preparation into molds and put it in the refrigerator or freezer to cool for 5-10 minutes.
If you boil the mass longer, the candies will become one hundred percent hard, and we need a watery, creamy interior inside, like in childhood.

Creamy “Korovka” sweets, which are easier to prepare than usual
“Korovka” candies are a favorite delicacy of children and adults across our vast country. Homemade sweets are in no way inferior to factory-made ones. Let's try to create this together.
Crafting recipe
Sweets prepared at home will not leave anyone indifferent. The big plus about these recipes is that you choose the ingredients yourself.
Traditional recipe
To obtain sweets whose taste is no different from the sweets made at a confectionery factory, we will need:
- high fat milk - 250 ml;
- butter - 50 g;
- sweet sand - 240 g;
- citric acid - 1/2 tsp.
- Pour milk into a saucepan with a thick bottom and, bringing it to a boil, add sweet sand and add butter. The resulting substance is thoroughly mixed and boiled over low heat.
- When the mass thickens slightly and acquires a blacker color, add citric acid to it and mix well again.
- After this, stirring continuously, cook the mixture until its color turns dark brown. Usually this happens within half an hour.
- To make sure the final readiness of the product, you can pour a little hot mass into a bowl of cool water, trying to roll a ball out of it with your fingers. If the substance does not stick to your hands during all this, the cooking process can be considered complete. After this, the finished product is poured into prepared forms. The most ideal for this purpose for us are silicone molds created for baking or making ice, since they do not require additional lubrication. To prevent the sweets from sticking, regular molds need to be greased with a small amount of butter. Instead of molds, you can also use an ordinary baking sheet, greased with oil: in this case, the thickened cooled mass remains to be cut into small pieces using a sharp knife.
- The filled molds are sent to the refrigerator or freezer for 5-10 minutes.
Sweets with honey flavor
The least popular candies made with the addition of honey are:
- 250 ml 30% cream;
- 200 g sweet sand;
- 30 g cow butter;
- 3 tbsp. spoons of watery honey;
- ½ tsp. citric acid.
Step-by-step {instructions} for manufacturing:
- Heavy cream is poured into a thick-walled container - it will prevent the product from burning - and brought to a boil.
- Cow butter and sugar are added to the cream and, stirring continuously, cook over low heat.
- Noticing that the substance begins to turn brownish, add citric acid and watery honey. After carefully mixing the ingredients, continue cooking. Over the next half hour it will thicken and acquire a chocolate color.
- The finished mass is poured into molds greased with butter and allowed to cool at room temperature, then left in the refrigerator for 3 hours.
“Korovka” with cocoa added
To make this version of sweets, the housewife will need:
- milk of the highest fat content, at least 3.5% - 500 ml;
- sweet sand - 6 glasses;
- butter - 120 g;
- raw chicken eggs - 3 pcs.;
- cocoa powder and wheat flour - 2.5 tbsp. spoons.
- Pour milk into a saucepan with thick walls, beat in raw eggs and mix the mixture with a whisk.
- After pouring in the sweet sand, continue kneading until the sugar is partially dissolved.
- Taking a fine sieve, sift flour and cocoa powder through it. After adding them to the mixture, beat it with a whisk until a homogeneous mass is obtained.
- Putting the saucepan on the fire, quickly bring the mixture to a boil and reduce the flame to a minimum.
- Constantly stirring the mixture, boil it for 7 minutes, after which add the oil, previously brought to room temperature.
- The resulting mass continues to be cooked until it thickens and changes color, remembering that the hardness of the finished product depends on the duration of cooking: the longer it is, the harder the candy. For those who prefer soft candies, it is recommended to remove the pan from the heat immediately after the consistency thickens. To check the readiness of the semi-finished product, it is recommended to drop a drop of the hot substance onto a cool surface. The rapid hardening of the mass, which does not stick to the fingers, indicates that the product has been brought to final readiness.
- The hot mixture is distributed into molds and, after leveling the surface with a knife, cooled to room temperature. At this step, you can add filling to the candies: nuts or pieces of dried fruit - prunes, raisins, dried apricots.
- Chilled molds with sweets are sent to the freezer for 2 hours.

- 200 g sweet sand;

- a small handful of dried apricots and raisins.

- After mixing the cream and sweet sand in a thick-walled saucepan, place it on a burner with a low flame.
- Bringing the mixture to a boil, add butter and condensed milk. Stirring continuously, cook the candy mass for 20-30 minutes.
- After painstakingly squeezing the soaked dried fruits, cut them into very small pieces (you can chop them using a blender).
- Pour the crushed dried fruits into the creamy mixture and mix the mixture well.

I made it according to the recipe, but for some reason I didn’t see any thickening
Will not tell you who urgently needs honey and sugar in grams or ml
I saw the comments on this recipe very late – I wouldn’t have cooked it any other way. Crunchy candies came out and it was never a cow! After adding the lemon, I cooked it for only 10 minutes (instead of the indicated “at least half an hour”) when I suspected something was wrong. Well, that’s what it turned out to be – ordinary caramel. If you don’t add honey, you’ll still have those good old “oak” candies! The gourmands will probably like it, but damn it, I was hoping to get a COW, not this.. Py.Sy But, if you add seeds/nuts at the end, you’ll get great kozinaki.
What a delicious thing!Lovely cow!
And the lemon curdled my milk ((sorry about the products.
Hello! Thank you so much for the recipe! Made it, very tasty! Tell me, please, does the cow come out sticky? It turned out very sticky for me. And how long in total do you need to cook? Thank you!
Thank you very much! In the end, the real ones learned. viscous cows from youth! I’ve made it before and it came out fragile and crumbly. Almost everyone loves these, BUT, these are already dried cows, and the true, fresh ones were completely without a crust, one hundred percent viscous! Thanks again.
Thank you very much for the recipe, I tried to prepare it, I was afraid that it wouldn’t work out, but everything turned out very tasty
For some reason it doesn’t darken or thicken (Tell me why?
Terribly sweet with a catchy honey flavor. They don't even look close to a cow.
How will the layer for the cake work? Or will it not melt in the refrigerator? Thanks
Thank you very much for the recipe
I prepared it according to the recipe and it came out delicious and creamy. Toffee! I digested the sugar the fastest))
