In fact, Berezka salad can be called any salad that is decorated with a hint of this symbolic tree for Russia. In other words, it may contain completely different products. And the names may vary: Birch, Birch Grove. But, usually, the list of ingredients contains more common, “salad” products. Like chicken, potatoes, onions, cheese, carrots, eggs, tomatoes, peppers and so on.

The most important ingredient is prunes. With its help, the same stripes are “drawn”, by which it is easy to identify this tree. In general, in a number of different cases it can just as easily be replaced with dark olives or black olives.
Typically, Berezka salad recipes present a puff version. Because in this form the dish looks the most careful, it is easier to decorate, smooth, give size and shape. At the chef's request, the birch tree on the surface is made either in the form of a whole tree with a trunk and crown, or in the form of a trunk with black olive lines. At the same time, the snow-white trunk is painted with ordinary mayonnaise, and the crown with green onions, fresh dill or parsley.
The traditional version may vary from location to location, but almost always has the following composition: chicken fillet, onions, boiled eggs, mushrooms, pickled cucumbers, fresh herbs, spices and, obviously, prunes. Mushrooms are fried in vegetable oil. They can be fresh or pickled. First the chicken is laid out in layers, topped with fried mushrooms and onions, cucumbers, whites, and yolks. Layered salad “Snow White Birch” with chicken and prunes
A fascinating recipe for a layered salad of chicken fillet, fried mushrooms and prunes with onions. Hard-boiled chicken eggs add nutritional value, and cucumber adds a note of freshness.

First, I prepared the ingredients for the “Snow White Birch” puff salad with chicken, mushrooms and prunes: I measured out the required amount, washed the meat, vegetables, herbs, and peeled the eggs (I already had them hard-boiled).
Next, I put a small ladle of water on the fire to cook the meat. As soon as the water boils, I throw the chicken fillet into it and wait until it boils. I keep chicken meat in boiling water for no more than 5 minutes. Then I remove the ladle from the heat, salt the water, cover the meat with a lid and set aside for 30 minutes. So the meat comes out very juicy.
I cut the onion into half rings.
Pour a little oil into a heated frying pan and fry the chopped onion in it.
Meanwhile, I cut the mushrooms into slices.
I add them to the fried onions.
And now I bring them to the appropriate degree of roasting. At the end I add a little salt.
I cut the chicken fillet into careful strips - so that they do not fall apart, I cut the meat across the grain.
Next, I cut the prunes into cubes. I put a few pieces aside - they will be useful for design.
I grate the egg white separately.
And separately the yolk.
I cut the cucumber into cubes.
For convenience, I put everything in containers. I'm starting to assemble the salad. Since I don’t have a rectangular shape, I want the puff salad to look like a log. I took a square shape to lay out the layers in it twice, and then combine them.
So, the first layer is prunes.
The second is fried mushrooms. I do not salt these layers or soak them in sauce.
3rd – fillet strips.
But I already spread mayonnaise on the meat layer - low-fat fillet becomes even tastier with it.
Next come the grated yolks.
Behind them I place chopped cucumber. I definitely add some salt.
At this step, I slowed down, carefully removed the form and, side by side, repeated everything from the beginning. I still got birch logs! In general, you may end up with a completely rectangular shape, or you will completely decide to create everything in an ordinary salad bowl. It will turn out literally just as wonderful - no doubt about it.
Now, without a form, I carefully lay out the grated egg whites.
I salt and grease them with mayonnaise.
All that remains is to arrange it: I cut the leftover prunes into strips.
I lay them out on a snow-white layer.
Just before serving, I decorate the “Snow White Birch” puff salad with chicken, mushrooms and prunes with parsley leaves. Look how the birch tree turned out - it’s both nice to look at and delicious to eat!

Boil the chicken in salted water until tender, separate the meat from the bones and chop finely.
Boil the mushrooms in water for 10 minutes and discard in a colander (there is no need to boil the champignons).
Hard boil the eggs.
Soak the prunes in warm water and leave for 10-15 minutes.
Then drain the water and dry the prunes. Finely chop the onion.
Cut the mushrooms into cubes or strips.
Fry the onion in vegetable oil, then add the mushrooms and fry together for 7-10 minutes, add salt and pepper.
Advice. If you take wild mushrooms, you need to fry them together with onions for 7-10 minutes (boil the mushrooms in advance); If you take champignons, you don’t need to boil them ahead of time, but fry them together with the onions for 15-20 minutes, until the mushrooms are ready.
Cut the chicken fillet into strips.
Set aside 3-5 prunes for decoration and cut into narrow strips.
Cut the remaining prunes into cubes.
Grate the eggs on a large grater.
Cut the cucumbers into narrow strips.
Lay out the salad in layers, pouring mayonnaise on any layer:
1st: prunes
2nd: mushrooms with onions
3rd: chicken meat
4th: eggs
5th: cucumbers
Decorate the top of the salad with strips of prunes in the shape of a birch trunk.
