Hi all. Now I will share with you a recipe for Raffaello’s very favorite homemade sweets. To all lovers of coconut and these most delicate sweets, the production instructions are in this article for us.
My plans have long been to make a Raffaello cake, but because I’m not looking for easy ways, I also decided to create coconut candies to decorate this cake with my own hands.
I will share with you 2 methods of making these beauties, one option is very quick, the second one is a little longer. Try to create both. And then you will understand which option is closer to you.
How to create Raffaello sweets with your own hands at home, recipe with photos step by step.
- can of condensed milk (380 g)
- pack of butter (180 g)
- coconut flakes (100 g for mass and 40 g for sprinkling)
- almonds (30 pieces)
for the most difficult option
- + special case wafer for candies (approximately 60 halves)
- + snow-white chocolate 100 g
Beat butter at room temperature in a mixer until it thickens and turns white.
Add room temperature condensed milk there! If there is a difference in temperature, the oil may come out in grains. Mix our ingredients. You can mix with a mixer at low speed. I would like to point out that condensed milk must not be bad! Read the ingredients, it doesn’t have to say “with vegetable fats.”
If, nevertheless, the mass has separated, then warm it slightly in a water bath, and then beat again.
Add 100 grams of coconut flakes to this mixture.
Mix and place our mixture in the refrigerator to harden for 6-8 hours. I usually clean at night (that is, in the dark) .
After cooling, the mass should simply mold, like plasticine. You may need a slightly larger amount of coconut shavings, so both the shavings and the degree of thickness of the condensed milk vary. The main thing is to get a measured mass at the output, from which you can simply roll into balls.
Next, we actually make our coconut candies. Place a nut in the center.
Personally, I didn’t peel the almonds; in my opinion, they taste better with the skin. But, if you want to peel, then you need to pour boiling water over the almonds and repeat this procedure after 10 minutes. This way the skin will quickly come off. Then, you need to dry the nuts in a dry frying pan or in the oven at 100º for 20 minutes.
Then we roll the balls.
Roll them in coconut flakes.
Option 2. A little more complicated.
In almost all stores you can find these wafer bases for candies.
We put our nut filling inside these hemispheres.
Then we combine them and dip them in melted chocolate.
Next, again, into coconut flakes. That's it, coconut candies a la Raffaello are ready.
Honestly, even though the candies themselves contain that wafer, I actually liked the first option more.
After the candies are molded, you need to give them a little time to cool. Keep them in the refrigerator for 30 minutes.
If it seems to you that there is a lot of butter in the recipe, then you can safely reduce its amount. My family didn't find the sweets greasy.
This amount makes approximately 30 pieces. The quantity, of course, depends on the size of the candies themselves.

Not long ago I found out a very simple recipe for Raffaello at home with my own hands. These homemade chocolates that literally taste just like Raffaello. These sweets can be used to decorate a cake or simply serve as a separate dessert. This recipe is very simple, and it’s quick and easy to prepare.
Ingredients
For the Raffaello recipe at home, you will need the following ingredients:
- corn sticks – 100 g;
- condensed milk – 2-3 tbsp;
- almonds - 10 nuts;
- coconut flakes – 20 g.
The portion given to us yields 10 Raffaello sweets.
Candy making process
First prepare the corn sticks. I have corn sticks with vanilla flavor. I put them in a plastic bag and crush them with a kitchen hammer. You can also grind them with a rolling pin or twist them through a meat grinder.
Place the crushed corn sticks in a bowl.
Then add condensed milk. I first add 2 tablespoons. And later I add another 1 tablespoon. At first it will seem that this condensed milk will not be enough. But that's not true. Continue kneading and you will see that after 3 minutes the mass will thicken and become homogeneous. But if the candy mass is very dense, you can add a little condensed milk.
Formation of rafaello
Once you combine corn sticks with condensed milk, you can start forming candies. To do this, prepare the almonds right away. I will use roasted almonds with the skin on. The nuts are very tasty and not bitter. If desired, the almonds can be peeled and dried again in the oven. The easiest way to form candies is with wet hands and a moistened teaspoon. That’s why I first wet my hands and spoon in water. Use a spoon to scoop up a little mass and form into a ball. Then place an almond in the center and wrap the whole mass around it. In other words, the nut should be inside. Transfer the finished candy to a plate. And in this way continue to form the candies.
Now roll each candy in coconut flakes on all sides.
Place the finished candies in the refrigerator for 1 hour to stabilize.
