Ingredients:
- Frozen shrimp - 500-600 g;
- Fresh frozen shellfish - 300 g;
- Quail egg - 10 pcs.;
- or chicken - 2 pcs.;
- Onion - 50 g;
- Fresh medium-sized cucumber - 1 pc. (about 100 g);
- Lettuce leaves - 200 g;
- Dill - several sprigs;
- Mayonnaise - 100 g;
- Salt - to taste;
- Ground dark pepper (fresh) - to taste.
Squid and shrimp salad recipe
1. Preliminary step: fill a pan with cool water and immerse the eggs in it. Let it cook over medium heat. From the moment of boiling, cook for 10 minutes.
2. Defrost the squid, clean it from the entrails, remove the chitinous ridge.
3. Pour water into the pan, salt well and let it boil. Place the squid in boiling water. Wait 10-12 seconds, remove the pan from the heat, drain the water. Fill with cool water. Carefully clean and rinse the squid under running water.
Squids do not need to be cooked for a long time, otherwise they will become hard as rubber. 10-12 seconds is enough for the mollusk, which consists mainly of protein, to set and cook. Only fully defrosted seafood should be immersed in water, otherwise they may cook unevenly.
4. Remove the narrow transparent film; without it, the clam will be softer.
5. Cut the squid into thin strips.
6. Transfer to the deepest salad bowl.
7. Pour water into the pan, salt it, put it on the stove, turn on high heat. When the water boils, immerse the frozen shrimp in it, stir and immediately drain the hot water. Cool the shrimp, peel it and transfer it to the salad bowl with the squid.
Shrimp, like other seafood, should not be cooked for a long time. The pink color of the shrimp means that they have already been cooked after being caught. In other words, they can be thawed and eaten. But just in case, it is recommended to pour boiling water over the seafood. If you cook shrimp until they boil, they may become rubbery, but this depends on the quality of the product.
8. Peel the onion, chop it and add it to the salad bowl.
9. Iceberg lettuce is crisp, fresh and virtually tasteless. It gives the dish lightness, airiness and a beautiful appearance. If desired, you can replace it with Chinese cabbage. We wash the greens and tear them by hand. We leave some of the beautiful leaves for decoration.
10. If you are preparing a dish in winter, it is better to peel the cucumber (it may contain a lot of chemicals). Cut the cucumber into cubes and add to the shrimp and squid salad.
11. Wash and chop the dill.
12. Cool and peel the hard-boiled eggs; it is more convenient to do this under running water. Excellent rinsing to remove small shells. Cut it in half.
