I’ve been wanting to make lentil soup for a long time: I bought lentils, but I couldn’t get around to it or the weather wasn’t cooperating. In the heat of 30 degrees, I prefer homemade kvass, not soup.

But it's getting cold here. For some days now +12 +15 – it’s time to cook a delicious warming soup with lentils – fragrant and satisfying.

You can cook lentil soup in anything - in a saucepan on the stove, in a slow cooker, in a kettle over a fire. You can cook the soup from reddish or green lentils in meat broth from pork, chicken, beef or lamb, or you can cook a lean, vegetarian soup

I have greenish lentils. Its difference from the reddish one is that the appearance of the finished dishes is not so flashy and solemn, and it is recommended to soak it in order to reduce the cooking time.

This is not a problem for us. We will cook green lentil soup.

  • 1.5 liters of water
  • 200 g lentils (1 cup)
  • 1 PC. carrot
  • 1 PC. onion
  • 3 medium potatoes
  • 3 tbsp. spoons of vegetable oil
  • Salt, pepper, spices to taste (reddish and dark ground pepper, cumin, mint)
  • 1 lemon or citric acid

Lenten Green Lentil Soup Recipe:

Soak the lentils for 3-6 hours, or better yet overnight (that is, in the dark) .

Add water in a ratio of 1:3. For 1 cup of lentils – 3 cups of water.

In the morning, drain the water, discard the lentils in a colander, and wash the lentils under running water.

Boil water in a saucepan, add lentils and cook for 7-10 minutes without salt.

Then add the grated carrots and cook for another 5-7 minutes

You can sauté onions and carrots in vegetable oil and add them to lentil soup in this form if you like them fried. I don’t like them, so I put them in the soup in their original form.

Peel the potatoes, cut into cubes, finely chop the onion

Place in a saucepan with lentils and carrots.

At this stage you need to add salt.

Cook until the potatoes are ready, about 15-20 minutes. 5 minutes before readiness, you can add dill, parsley or other favorite herbs.

Add 3 tables. spoons of vegetable oil.

You can add freshly squeezed lemon juice. Or you can simply put a slice of lemon on everyone’s plate in portions.

We also add spices about 3 minutes before the lentil soup is ready. Spices - to your taste: reddish and dark ground pepper, cumin, mint, or spices for soup or chicken.

Paprika in particular goes well with this soup.

Spices can also be put on the plate, especially if not everyone in the family shares your taste for spices - a good agreement. The taste of the soup will not be affected by this.

Lemon, I think, is a must in this soup. It makes the taste of the soup brighter and richer, as in canned fish soup, and also enhances the taste of all spices.
