There are no eggs in the refrigerator, but you really want to bake pancakes? Not a failure! A recipe for pancakes with kefir will help you out - without eggs and yeast.
Despite the fact that the pancakes are prepared without eggs, they are thin, tender and soft. The secret is in using kefir, soda and brewing with boiling water. That’s why they turn out openwork, “spongy”.
You can serve with jam, honey or condensed milk - any of these additives will be delicious! The structure of these pancakes is porous, so they will absorb the sweet sauce like a sponge.
Ingredients
- 2.5% drink – 0.5 l
- wheat flour – 2 tbsp.
- sugar – 2-3 tbsp. l.
- salt – 0.5 tsp.
- soda – 1 tsp.
- water (boiling water) – 150-250 ml
- vegetable oil - for greasing the pan
Manufacturing
Pour the drink into a bowl. Add salt and sugar to it immediately. Stir.
Add 1 cup of flour. Stir so that there are no lumps.
Then add the remaining flour - 1 more glass or a little less. Look at the mixture, because the drink and flour are different for everyone. The mixture should make the dough look like very thick sour cream (or like pancakes).
Boil a glass of water in a kettle or saucepan. Take a teaspoon of soda. And holding a spoon with soda over the dough, extinguish it with boiling water (do not pour out all the water, you will see a lot of foam from the slaked soda). Mix the dough quickly.
Continuing to stir, gradually pour in the remaining boiling water from the kettle. In this way, the dough will turn out choux. It should turn out as watery as an ordinary pancake. Leave for 5 minutes to allow the dough to stand and the soda to “extinguish.”
Heat a frying pan (preferably cast iron). Grease with a drop of oil and pour in a portion of dough (about half a ladle).
Bake until golden brown on both sides. In total I got 14 pieces, the diameter of the pan is 20 cm.
When ready, place in a stack and coat with butter. To keep them soft longer, you can cover the top with a lid or a deep bowl.

If you suddenly want pancakes, but you find that there is not a single egg in the refrigerator, don’t worry! Pancakes can be baked without eggs. For such pancakes, you can use a drink or milk; water is also suitable as a lean option. The thickness of the pancakes must be adjusted by the amount of flour.
Now we are baking pancakes without eggs using kefir.
We will need a drink, soda, flour, sugar, salt and sunflower oil.
Heat half the kefir and pour it into a bowl, add soda, flour, sugar and salt. Stir so that there are no lumps.
Pour in the remaining drink and stir again.
Then pour in sunflower oil. Leave the dough for 15 minutes and you can fry the pancakes.
Grease a frying pan with sunflower oil, pour in half a ladle of dough and distribute moderately. Fry until the surface of the pancake tightens and does not stick.
