Banana cookies
Fresh homemade banana cookies are a simple, fragrant and delicious tea pastry. Especially the kids will be happy. When I was little, the last thing I could think of to bake for tea was banana cookies. The reason is ordinary - bananas were a significant drawback, and no one would have thought of turning them into baking.
The recipe for cookies with bananas is not homemade, it is, rather, a baking option with the addition of fruit to the dough, which has its own subtleties and aspects. From time to time we bake macaroons, as they do in the East. Nuts, almonds, various dried fruits are added to the dough - like in biscotti, and almost always a lot of spices, sugar and flavorings.
To bake delicious banana cookies, you need overripe bananas. The cookies come out soft, not crispy. In my childhood, when my grandmother baked cookies, she added apple puree from Antonov apples and soda to the flour, due to which the baked goods came out fluffy. True, the taste of soda was somewhat annoying. At the moment, instead of soda, they use baking powder or ammonium, and cookies with bananas come out with the taste of bananas.
Because cookies with bananas come out soft, it’s practically a sponge cake, it’s completely possible to bake thin shortcakes, or cut into thick layers - the base for a cake. Taking into account that the cookie dough is not very dense, baking shaped products is problematic. But you can use a silicone mold with shaped cells, like for the French Madeleine cookies - madeleines.
Banana cookies are made from plain flour, butter, eggs and sugar. Instead of water, use puree made from peeled bananas.
Banana cookies are neither crispy nor crumbly. It is soft and more like a small bun. Pairs perfectly with sweet tea or cappuccino. The dough for such cookies does not require long-term preparation and standing; it is prepared by simply mixing the ingredients one by one and baked in 10-15 minutes. If desired, you can add nuts, grated chocolate, and raisins to the dough.

How to make banana cookies
- If you are planning to make cookies, overripe bananas will come in handy. Not just mature, but very mature. Usually, bananas in stores are slightly underripe. In general, from time to time there are overripe ones, but only rarely. You need to purchase several bananas in advance and place them on the windowsill, but not in direct sunlight. In a certain number of days, the fruits will “reach” a suitable condition, become soft and fragrant.

Banana Cookies Recipe:
Grind the bananas in a blender together with sugar until pureed. Add flour, salt, baking powder and butter, stir and knead the dough.
Place the dough in the refrigerator for 30 minutes.

Lenten banana cookies with honey (banana gingerbread)
If you have one ripe banana and a spoonful of honey, bake lean banana cookies, you won’t regret it!
The cookies are light, savory, soft like gingerbread, with a subtle, wonderfully tropical aroma, offset by warm honey notes. Banana cookies are a regular baked item for any day, so I only decorate them with sweet powder. But if you add nutmeg, cinnamon, cloves to the dough and cover the cookies with icing (you can see the icing recipe here), then they will turn into true gingerbread cookies. Compound:
- Ripe banana - 1 piece
- Sugar - 100 gr
- Honey - 1 tablespoon
- Vegetable oil without aroma - 120 ml (about 100 g)
- Soda - half a teaspoon
- Lemon juice - 3 tablespoons

How to prepare delicious soft fragrant banana cookies (lean banana gingerbread) for any day according to the usual recipe

You may need more or less flour depending on the size of the banana; I used 260 grams. The dough should be very soft, the mixture is visible in the photo.

Grease your hands generously with oil. Pinch off pieces of dough, form balls the size of an apricot and place on oiled parchment at a small distance from each other. I got 27 gingerbread cookies.

Bake banana gingerbreads at 180 degrees until warm, use your own oven as a guide (in mine they were ready in 15 minutes). Don't dry it out! The gingerbread cookies should remain very soft.
