From time to time, to make something tasty for tea, you don’t necessarily have to be an experienced cook, have a lot of free time and a huge amount of ingredients. There are recipes for regular, high-quality baked goods that take almost 25-30 minutes to prepare. And this recipe is one of them.
Shortbread cookies with vegetable oil are a delicious and ordinary cookie that will always help out when guests are on the doorstep and there is nothing for tea, not even chocolate.
Why vegetable oil? Almost everyone, for monetary reasons, uses margarine instead of butter to make shortbread cookies. But this is not completely normal: margarine is quite harmful to health and in the future even more money saved at the moment will be spent on restoring health. That’s why I chose vegetable oil, which has a positive effect on the family budget. In fact, this is the cheapest cookie recipe ever. The cost of 1 kilogram does not exceed 110-120 rubles (as of 2019). You can’t buy these in the store, because the cookies on sale are more expensive, but the most important thing is that at the moment it is virtually impossible to buy cheap cookies without margarine or confectionery fat. Serious problem. But most people don't think about what they eat. Hence the health problems. But we think about our health. And although it is impossible to say about cookies that they are healthy, at least we minimize the dangers and reduce the degree of harmfulness of food. Still, from time to time I want to treat myself to a tasty treat for tea.
The ingredients of these cookies are so simple and accessible that most likely you already have them and the shortbread cookies can be prepared right now.
Ingredients
- egg 1 pc.
- sugar 60 g
- vegetable oil 40 g
- flour 150-160 g
- baking powder 1 teaspoon
- salt 1 pinch
- vanillin to taste
I used refined sunflower oil, without aroma or taste
This amount of ingredients yields approximately 260 g of cookies.
Manufacturing
We prepare all the necessary ingredients. It is better that the egg is not cool, otherwise the sugar in it may not completely dissolve. Therefore, we lower the egg from the refrigerator into a mug of hot water for about three minutes.
In a suitable container, beat the egg with sugar (60g), vanilla (1/2 teaspoon) and a pinch of salt with a mixer. You need to beat for 2-3 minutes so that the sugar dissolves one hundred percent and the mass becomes light and fluffy.
Add 40 g of vegetable oil and mix well until smooth.
Sift 150 g of flour and baking powder (1 teaspoon) into a separate bowl. Mix with a whisk or spoon. If the dough is not thick, then add another 10 g of flour. The flour itself is different with different qualities, so it is normal to make adjustments.
Add the watery part of the dough to the bowl with flour and baking powder. Mix until a homogeneous dough forms. The most convenient way to do this is with a mixer with dough hook attachments. The dough comes out a little sticky, but quite thick.
Line a baking tray with baking paper or a silicone mat. Next, we divide the dough into several equal parts - our future cookies. I got 10 pieces, and the cookies themselves turn out to be quite large, like gingerbread cookies. Therefore, you can create 15 or 20 cookies. Roll into balls and place on a baking sheet. If desired, the balls can be pressed flat with your fingers, but then the cookies will not be as thick and voluminous and you will not get such beautiful cracks. If the dough turns out a little sticky, then you can put the dough on a baking sheet with 2 spoons, then wait 5 minutes until the dough has set slightly and roll the pieces into balls.
Bake in an oven 180°C for 20 minutes . If you have made a lot of small cookies, the time can be reduced to 15 minutes.

You can actually eat it right away as soon as it cools down a little. When warm, it is crispy on the outside and soft on the inside, and when it cools, it becomes moderately crispy and truly crumbly, which is actually what we expect from shortbread cookies. Bon appetit!

I really love and often cook shortbread cookies and pies from shortcrust pastry. Usually margarine or butter is used to make them. I highly respect the extreme and, most of all, love it. But if you often cook with it, it will be a little greasy (in every sense of the word). Much has already been said about margarine and spreads, but I think it’s worth recalling that the transgenic fats they contain lead to an increase in the level of “disgusting” cholesterol (Insoluble in water, soluble in fats and organic solvents.) in the blood (internal environment of the body humans and animals) , disrupt the normal functioning of cell membranes, contribute to the development of vascular diseases, etc. That’s why I completely excluded these “products” from my own kitchen. Now I make shortbread dough using vegetable oil. Completely harmless, tasty and healthy. And what’s important is even cheaper and faster than with margarine! And a few more words about margarine. Margarine lovers are most likely to develop angina pectoris, myocardial infarction, arrhythmia and cardiac failure. It was invented in France to feed the army and the poor - a cheap product for sandwiches and frying. All this happened at the end of the century before last, people had different ideas about food and life. I would like to warn you that products made from this dough are a LITTLE tougher than those made from margarine or butter, but it’s worth ruining your vessels for the sake of the small difference.

- Wheat flour / Flour - 3-3.5 cups.
- Chicken egg - 2 pcs
- Vegetable oil - 1 cup.

- Yogurt (or cream, or any fermented milk product (optional ingredient)) - 0.5 cups.

Recipe for shortbread dough with vegetable oil:
Mix flour with vegetable oil (I use sunflower oil) and carefully rub into crumbs with your fingers. It's simple and fast, at least my 3-year-old daughter coped with it without effort
Add eggs, curdled milk (to soften the finished products, otherwise it will be a little harsh), sugar, soda, slaked with vinegar. I didn’t have time to photograph this moment - my assistant put everything together very quickly). Knead the stiff dough. For convenience, I roll it into several small balls.
Unlike dough made from margarine or butter, this dough does not need to be put in the refrigerator, but you can immediately make products from it. I spread a small piece of dough into the baking pan with my hands, making small sides. I added the filling (I had grated currants, they were a little sour, so I sprinkled a little sugar on top).
Grate the shortbread crumbs on top of the grater, covering the entire filling. It rubs quite easily. no effort required!
I used the remaining dough to make cookies. There is no need to grease the baking sheet; just to be on the safe side, I sprinkled it with a little flour.

Until recently, I was sure that shortbread cookies could only be made using butter. It turns out that this is not the case. Out of curiosity, I prepared shortbread cookies in vegetable oil and they amazed me with their structure. It turned out tender, melting in the mouth, it is simply indistinguishable from ordinary shortbread cookies. I also note that the dough for making shortbread cookies, mixed with vegetable oil, should not be kept in the refrigerator before cutting and is not allowed, because it “salts”, in other words, the vegetable oil comes out. Therefore, immediately after kneading, the dough must be cut into pieces and baked. Be sure to make shortbread cookies in vegetable oil and you will love them as much as I do!

Take a deep bowl. Mix in it, using a whisk, egg, sugar, vanillin, salt.
Add vegetable oil and rub thoroughly. It is important that a homogeneous mass is formed and the oil does not flake off.
Pour flour, starch into the egg-butter mixture and add baking powder. Stir with a whisk and then knead the dough with your hands.
The shortbread dough comes out soft, manageable, smooth, and should not stick to your hands. Round it up.
Roll out the purchased dough into a roll approximately 25 cm long.
Using a knife, cut the dough roll into 15-16 pieces. The approximate weight of one workpiece is 27 g.
Form cookies from each piece. I used a special cookie stamp. You can shape it to your liking.
Turn the oven on 180 degrees. Cover a baking sheet with parchment paper and place the prepared cookies on it at a small distance from each other. Place the baking sheet in the preheated oven for 13-15 minutes. Consider the individuality of your own oven.
Remove the finished shortbread cookies from the oven. It has a smooth, ruddy color.
Remove the cookies from the paper and place them in a vase. It can be served either slightly warm or one hundred percent chilled.

It was also created for those who, due to various circumstances, have excluded butter and margarine from their diet. The cookies come out crumbly and fragrant, and taste no different from a product made with margarine.
- Break chicken eggs (3 pcs.) into a deep bowl.
- Add table salt (a pinch), sweet sand (180 g), vanilla sugar (to taste) to the bowl. Beat the mixture with a mixer into a thick mass with foam on top. Pour vegetable oil (100 ml) into the mixture. Beat with a mixer for approximately 1-1.5 minutes until smooth.
- Rinse the lemon (1 piece) thoroughly and remove the zest from the citrus fruit using a small grater. Add the zest to the mixture in a bowl. Pour wheat flour (370 g) into a sieve mug, sprinkle baking powder (1 tsp) on top of the flour. Stir baking powder into flour. Sift the flour mixture in small portions into the bowl with the watery part, mix with a mixer at low speed.
- When the dough is too thick for the mixer, remove it from the bowl onto a floured countertop (on a silicone mat) and knead the dough with your hands.
- When the dough is ready, grease the countertop and hands with vegetable oil to prevent the dough from sticking.
- Roll out the dough into a narrow layer 5-7 mm wide.
