Shrimp fried in white wine
Shrimp fried in snow-white wine is a Portuguese version of a dish in which the taste and smell of seafood is complemented by garlic, lemon juice and spices. The finished version can be an amazing appetizer for dry white and rose wines, as well as light beer.
Any shrimp is suitable: from small to tiger. With all this, it is not necessary to clean them; you can fry them as is, then the smell will be even richer. A method that has proven itself to be excellent is when almost all the shrimp are cleaned, leaving only the tail, but 2-3 unpeeled carcasses are added to the frying pan, which enhance the smell of seafood.
It is very important to choose the right wine. Snow-white, certainly dry wines with medium and high acidity are suitable. For example, Chardonnay, Riesling, Gewürztraminer and others. The drink should be natural, mid-price. Cheap wines can spoil the taste of shrimp with chemical additives, and there is no point in overpaying for exclusive brands, because there is practically nothing left of the wine itself in the finished sauce.
In addition to dark pepper, the following are mixed with shrimp in the wine: basil, oregano, cloves, ginger and rosemary. But here it is important not to overdo it with spices, choosing no more than 2 at a time, or better yet, absolutely one spice. Butter will soften the taste and emphasize the smell.
Recipe for fried shrimp in wine
Ingredients:
- shrimp – 500 g;
- wine – 200 ml;
- garlic – 2 cloves;
- olive oil – 2 tablespoons;
- lemon juice - from half the fruit;
- butter – 15-20 g (optional);
- fresh herbs - to taste (optional);
- salt, pepper, other seasonings and spices - to taste.
Manufacturing development
1. Defrost shrimp. Peel the garlic and cut into small pieces, do not crush.
2. Heat a frying pan with vegetable oil, add garlic. Fry over medium heat for 1-2 minutes, stirring occasionally. The oil must be saturated with garlic.
3. Lay out the shrimp in one layer, it is better so that the carcasses do not touch each other. Fry on both sides until the water has completely evaporated and the color changes (the shrimp flesh will have a light reddish tint).
4. Add salt, pepper, other seasonings and spices. Pour in wine and lemon juice, stir lightly, cover the pan with a lid.
5. Simmer shrimp in wine for 8-10 minutes until the liquid evaporates. If desired, add chopped herbs, cover with a lid, remove from heat and leave for 1-2 minutes.
6. Serve the prepared shrimp in wine sauce warm; they are perfectly mixed with snow-white bread and the freshest vegetables.

Next, prepare the creamy sauce for the shrimp.
Heat the butter in a saucepan, add flour to it and mix well so that there are no lumps.
Next, add salt, spices, dry oregano and table wine to the future sauce, continuing to stir well.
While stirring the sauce, pour in the cream in a narrow stream and simmer over low heat until the cream sauce thickens. Then we add peeled shrimp to the creamy sauce, but not all of them. A handful of boiled shrimp needs to be tossed in for a lovely dish design.
After mixing the shrimp with the sauce, remove the saucepan from the heat.
Boil the spaghetti in plenty of salted boiling water with the addition of vegetable oil, cook for as long as indicated on the package.
Drain the finished spaghetti in a colander, when the liquid has drained, transfer the pasta to a dish, pour cream sauce on top and garnish with shrimp.
Shrimp in garlic-wine sauce
A very playful and tasty recipe for a light dinner. Cook rice in 12 minutes, and shrimp even less. The sauce turns out to be very rich, exciting and perfectly complements the delicate taste of the shrimp.
Ingredients for Shrimp in Garlic Wine Sauce:
- Shrimp (large) - 10 pcs.
- Garlic - 2 teeth.
- Greens (cilantro, parsley) - 1/3 bunch.
- Rice (Basmati TM “Mistral”) - 1 package.
- Butter - 30 g
- Dry snow-white wine – 200 ml
- Salt (to taste) - 1 pc.
- Dark pepper (to taste) - 1 piece

Recipe for Shrimp in Garlic Wine Sauce:
Boil the rice in boiling salted water until tender.
Peel the shrimp from the shell, rinse, cut along the back and remove the black strip.
Chop the greens very finely and peel the garlic cloves.
Melt butter in a frying pan.
Place the shrimp in the oil and squeeze the garlic through a press. Add herbs, salt and dark ground pepper. Fry everything together for almost 2 minutes.
Pour in the wine and reduce it by half over high heat.
Place the cooked rice in a round pan, next to the shrimp and sauce. Garnish with lime slices.
