Recipe for delicious okroshka with sausage and sour cream on whey. This cool, fresh and immediately satisfying cool soup is most often prepared in the summer. The usual composition, quick production and always good results - quickly get to the kitchen!

The whey that will become the basis for homemade okroshka can now be purchased in the store, but I always advise you to create it yourself. This is the product that remains after making cottage cheese (recipes here and here). As they say, it’s two in one: homemade tender curd and fragrant whey.

The ingredients for okroshka are practically always similar, but for each family its own specific composition is the most beloved. So, I don’t put boiled potatoes in whey-based okroshka. Then, in my opinion, the cool soup comes out more tender and lighter. We have enough acid due to the whey, and there’s no need to add mustard for this recipe.

For those who like contrast, I also suggest trying the savory okroshka in mineral water with ham and radishes. I also have a regular recipe for okroshka with kvass - a special and refreshing soup with smoked sausage.

Making a dish step by step:

To make a tasty and refreshing homemade okroshka, we will need the following ingredients: whey, chicken eggs, boiled sausage, fresh cucumbers, sour cream, dill, green onions, salt and ground dark pepper.

Immediately set the chicken eggs (4 pieces) to boil hard - 9-10 minutes after boiling over medium heat. How to prevent eggs from bursting when boiled? Before all this, they should be at room temperature (take the eggs out of the refrigerator in advance), just like the water. In addition, when cooking, add a little vinegar or salt to the water.

In the meantime, you need to chop the boiled sausage (250 grams). Cut it into a fairly small cube - approximately like an Olivier salad.

Similarly, cut the freshest cucumbers (I have three fairly large pimply ones). If the skin is very hard, cut it off.

We chop excellent bunches of the freshest dill and green onions as finely as possible with a knife. There can never be too much greens in okroshka!

When the chicken eggs are cooked, cool them under cool water (about 3-4 minutes is enough), peel them and cut them into small cubes. I like to create this using a device like this.

We put the cooked products in a suitable size (I have a saucepan with a capacity of 4 liters) dishes.

Okroshka with whey - the best recipes

Traditional okroshka is prepared with kvass, but a store-bought drink called “kvass” is not at all suitable for these purposes. But you can replace it with ordinary whey, which costs a penny and is sold in almost any store.

The calorie content of this version of cool soup is approximately 76-77 kcal/100 g.

Traditional whey-based okroshka with sausage - photo recipe step by step

Okroshka according to the traditional recipe is prepared very quickly, and all its components are completely mixed together.

Ingredients

  • Sausage: 400-500 g
  • Potatoes: 5 pcs.
  • Testicles: 4 pcs.
  • Green onions: bunch
  • Young dill: bunch
  • Serum: 2 l
  • Medium-sized cucumbers: 3-4 pcs.
  • Salt: to taste

Before all this, let the potatoes in their jackets boil until fully cooked.

Boil the eggs separately for 10 minutes, then immediately place them in cool water for 5 minutes.

At this time, cut the sausage and cucumbers into medium-sized cubes.

Finely chop the onion and dill. Apart from them, you can also add parsley.

We clean the boiled and cooled eggs and carefully chop them. The easiest way to do this is to use a fork or a mashed potato tool.

And now it’s the turn of the potatoes. Immediately after removing it from the heat, you also need to put it in cool water for 1 minute, then the skin will peel off much easier. Cut the potatoes into cubes and add to the pan with the rest of the ingredients.

Now all that remains is to fill it all with cold liquid and add salt to taste.

Hearty and refreshing okroshka is ready. It is better not to keep it in a hot room, but to immediately put it in the refrigerator.

With chicken meat

To make 4-5 servings of okroshka with chicken you need:

  • whey – 1.5 l.
  • boiled chicken meat – 300-350 g;
  • small new cucumbers – 300 g;
  • green onions – 70 g;
  • radishes – 150-200 g;
  • boiled potatoes – 400 g;
  • hard-boiled eggs – 5 pcs.;
  • young dill - 30 g optional;
  • salt.

What to create:

  1. Wash the onion and finely chop it with a knife. Transfer to a suitable bowl, throw in a couple of pinches of salt, then mash with your hands.
  2. Wash and dry the young cucumbers. Cut them smaller. Transfer to the greens that have released their juice and stir.
  3. Wash the radish, trim the tops and roots, chop into thin slices or strips. Place in bowl with remaining ingredients.
  4. Disassemble the boiled chicken meat into fibers or chop it randomly with a knife. Place chicken over vegetables.
  5. Cut the boiled potatoes into cubes and throw them into a common pan.
  6. Remove the yolks from a couple of eggs. Grind them with 2-3 tbsp. l. whey. Chop the remaining whites and whole eggs and add them to the rest of the ingredients.
  7. Pour liquid over everything, add mashed yolks and mix.
  8. Add salt to taste. Chopped dill can be added if desired.

Okroshka recipe with whey and sour cream

For summer soup with sour cream you will need:

  • whey – 1.2 l;
  • low-fat sour cream – 250 g;
  • boiled potato tubers – 300 g;
  • doctor's sausage – 150-200 g;
  • greenish onion feathers - 50 g;
  • radishes – 100-150 g;
  • hard-boiled eggs – 4 pcs.;
  • new cucumbers – 300 g;
  • salt.

How to cook:

  1. Cut the washed radishes and cucumbers into small cubes. Transfer to a saucepan.
  2. Cut the potatoes and sausage a little larger. Place them in a bowl with chopped fresh vegetables.
  3. Chop the onion very finely and add it to the rest of the ingredients.
  4. Remove the yolks from 2 eggs and grind them with sour cream. Chop the others together with the whites and place them in a saucepan.
  5. Fill everything with liquid and add sour cream dressing.
  6. Add salt and let it brew for a little while.

On whey and mayonnaise

To make this okroshka more filling, you can add mayonnaise to it. Take:

  • radishes – 150 g;
  • new cucumbers – 300 g;
  • boiled eggs – 4-5 pcs.;
  • sausages without lard – 200-250 g;
  • boiled potatoes – 250-300 g;
  • green onion – 70-80 g;
  • salt;
  • mayonnaise – 150 g;
  • whey – 1.5 l.

Step-by-step production:

  1. Wash the freshest vegetables and herbs. Dry.
  2. Finely chop the onion and place it in the pan.
  3. Grate one cucumber there and add a little salt.
  4. Cut the remaining cucumbers and radishes into cubes.
  5. Grind other ingredients in the same way. Combine in one container.
  6. Pour in liquid and add mayonnaise. Stir and test for salt. Add salt as needed.

With the addition of kefir

To make such okroshka, take:

  • drink with fat content 2.5-3.2% - 1 l;

  • cucumbers – 300 g;

Process:

  1. Cut potatoes.

  5. For those who count calories, you can not add potatoes, but serve them separately.
  6. A cool dish will be most satisfying and tasty if you add not only sausage, but also boiled chicken meat.
