Pork stewed with sour cream: recipes with photos and videos
You can find this dish in a good restaurant. But what’s stopping you from doing a little magic to get the same luxurious dinner at home? Meat stewed in sour cream is a special type of pork that practically melts in your mouth. The sour cream sauce will soak and loosen until silky soft. You have two recipes. Photos and step-by-step descriptions below.
Pork stewed in sour cream and mustard
- pork (pulp) - 400 g;
- onion - 1 head;
- sour cream 10-15% - 200 g;
- grain mustard - 1 tbsp;
- flour - 1 tbsp;
- salt - 1 tsp;
- vegetable oil.
Quantity: 5-6 servings
Production time: 1 hour 30 minutes.
How to stew pork with sour cream and mustard
- Cut the onion into half or quarter rings.
- Pork - medium-sized pieces.
- Heat the oil in a frying pan and add the meat. If there is a lot of it or the frying pan has a small diameter, then it is better to do the preparatory frying in portions, otherwise the pork will immediately begin to stew in its juice and a crust will not appear on it.
- Fry until golden brown on all sides.
- Add onion. Cook for 2-3 minutes, stirring frequently.
- In a container with a volume of at least 0.5 liters, mix sour cream, mustard, flour and salt until a paste is obtained.
- Then we dilute it with slightly warm water to 0.5 liters.
- Pour sour cream sauce over pork. Reduce heat to low, cover with a lid and simmer, stirring occasionally, until cooked. We determine it by the softness of the meat. During this period of time the sauce will reduce slightly and thicken. If suddenly there is not much of it or it becomes very thick, add a little boiling water from the kettle and simmer for a couple of minutes.
Ordinary mashed potatoes, boiled rice or pasta go well with stewed pork as a side dish. All this mixes well with sour cream in the sauce.

Production time: 1 hour 40 minutes.
Stew pork in sour cream with mushrooms

- Pour oil into a frying pan and heat it up. Lay out the meat. Fry on all sides until crusty. Then remove from the pan.
- Throw the onion into this frying pan and fry it until transparent.
- Add the mushrooms and cook, stirring, until they are also cooked through.
- Return the meat to the pan. Salt, add garlic and thyme. Pour a glass of hot water. Close the lid, reduce the heat and simmer for 20-30 minutes.
- Meanwhile, in another small frying pan, fry the flour until slightly darkened.
- Pour 100 ml of cool water into it and mix thoroughly, breaking up any lumps. Add sour cream, simmer for a few minutes and get a thick sour cream sauce.
- Pour it over the pork and simmer without a lid for about 15 minutes.
For stewed pork, it is better to use tender parts of the carcass that do not require long-term heat treatment. Perfect options are the shoulder part, neck or slice.
Lovers of meat with prunes can add it to both recipes. Serve the finished dish together with a side dish or vegetable tenderloin in portions.
A great lunch for any season - only the composition of the salads changes. Bon appetit!

Pork in sour cream and garlic sauce
Pork cooked in sour cream with grated carrots comes out tender, very juicy and tasty. An unusual combination of ordinary vegetables adds a wonderful lightness to this hearty dish. This is one of the most common meat dishes, the preparation of which does not require much time and effort. Grated carrots add juiciness and nutrition to the dish, since carrots contain beta-carotene, which, in combination with sour cream, is perfectly absorbed by the body. Vegetable lovers can increase the amount of carrots. Garlic adds piquancy to the dish. Rice, buckwheat or pasta are perfect as a side dish. I prefer rice or buckwheat.

Recipe for “Pork in sour cream and garlic sauce”:
Let's prepare the products according to the list.
We cut the pork into small cubes, freeing it from excess fat layers (to reduce the calorie content of the dish).
Grate the carrots on a large grater.
Finely chop the onion and fry it in a saucepan in 2 tablespoons of vegetable oil until translucent. I use refined sunflower deodorized.
Add the pork slices to the saucepan and fry until the meat turns white (do not fry until browned).
When the water begins to evaporate from the meat, pass the garlic through a press and distribute it moderately on top of the meat. For those who like it spicy, you can increase the amount of garlic in the recipe. Next, add salt and pepper to taste, you can add seasoning for meat.
Then place the grated carrots on top and also distribute them moderately over the meat.
Place four tablespoons of sour cream in a huge mug, dilute it a little with some water and stir thoroughly with a fork, maybe add a little salt. Then pour the purchased sauce sparingly into a saucepan.
Close the lid, reduce the heat (I cook on a 4-4.5 electronic hob) and simmer for about 30-40 minutes. You need to watch the level of the sauce, it should not evaporate. If it starts to evaporate rapidly, reduce the heat. Simmer until the meat is done.

Pork stewed in sour cream
It's hard to imagine a real lunch without a roast meat appetizer. One of the most easy-to-prepare, hearty and juicy meat dishes is pork stewed in sour cream. Prepared in this way, it comes out tender, soft, fragrant, and can be mixed with any side dish. This dish is great to eat at any time of the year; it will decorate a festive table and is suitable for a home dinner.
Individual manufacturing
The most experienced chef probably understands how to deliciously stew pork in sour cream, but still, valuable advice will not hurt any housewife.
- The main secret of a tasty pork dish is the right choice of meat. For stewing, cuts with the least amount of fat are more suitable. In any case, a more tender dish will be obtained from the freshest meat from a young pig. If you see that pork fat has a yellowish color, it is better to take another piece where the fat is light in color.
- Before cooking, a piece of pork must be washed, veins and excess fat removed, and then cut. The size of the pieces depends on the recipe, but there is one generally accepted rule: the meat should be cut across the grain.
- When choosing spices, you can experiment, but without allowing yourself to deviate too much from tradition. Typically, all types of peppers are considered suitable for pork, including paprika, bay leaf, rosemary, garlic, nutmeg, marjoram, thyme, basil and the all-encompassing curry seasoning. Therefore, it is better to make compositions of 2-3 seasonings, adding them in moderation.
You can stew pork in portions or in small pieces, with or without vegetables. Most often it is stewed in a deep, thick-walled frying pan or in a cauldron. With all this, you need to make sure that the liquid does not evaporate, otherwise the meat will burn and become dry. You can also stew pork in the microwave using the “Stew” program.
