Recipe for “Duck with apples, baked in a sleeve”:

Coat the duck with marinade. Leave for several hours. I usually marinate in the evening and overnight (that is, in the dark) .

Cut the cored apples into 4 parts. Sprinkle with lemon juice. We stuff prunes and apple slices into the duck and sew it up so that the inside doesn’t fall out. Peel the potatoes and cut them into small pieces. Salt and season.

Place the duck in the sleeve and cover it with potatoes. Place in a preheated oven and bake for 2-2.5 hours.

After this, to get a crispy crust, we open the top at the sleeve and leave our duck to brown well. The time is taken arbitrarily, depending on how much you like the look of your bird.

I did not pour out the fat from the duck, but used it in preparing other dishes. It is so fragrant, it smells like an apple.

  • Duck (carcass) - 2.5 kg;
  • Russian mustard -2 tbsp. l.;
  • Brown sugar - 1 tbsp. l.;
  • Garlic - 3-4 cloves;
  • Mixture of ground peppers - 0.25 tsp;
  • A mixture of dry Provençal herbs - 0.25 tsp;
  • Vegetable oil - 2 tbsp. l.;
  • Salt - 0.5 tsp;
  • Sour apples - 4-5 pcs.

How to cook baked duck with apples in the oven in the sleeve

Wash the duck well. If the carcass is not gutted, remove all entrails. Inspect for any remaining feathers and remove them using tweezers.

Create a fragrant marinating mixture. Pour salt, brown sugar, ground peppers and dry herbs into a small bowl.

Add Russian mustard and grated garlic. Pour in vegetable oil.

Mix. The result will be a fairly thick paste.

Using a pastry brush or your hands, coat the inside and outside of the duck with the marinating mixture.

Place the carcass in a baking sleeve, secure one end of it with a clamp, and simply tuck the other end for now. In this form, leave the duck to marinate for at least an hour, but there is no need to put it in the refrigerator. If you have more time at your disposal, it will be perfectly possible to withstand the day, but in the cold. The longer it is, the more juicy and fragrant the duck with apples will turn out in the oven in a baking sleeve.

Just before putting them in the oven, peel the apples from skin and seeds and cut them into arbitrary pieces. Place inside the duck.

Sew up the hole using thread and a needle or secure with toothpicks.

It’s not difficult to check if it’s ready; just pierce the duck meat with a knife in the thickest part, on the breast. If the juice is clear, everything is perfectly cooked; if it is pink, you will have to cook longer. Serve immediately.
