Now I propose to continue the topic of salads and talk about such a wonderful and popular dish as Caesar. The name of the salad leads us into a dead end and it seems that the birthplace of the salad is Italy, but this is not so. Caesar salad first originated in the United States (the United States of America is a state in North America) .

In the traditional recipe, the main ingredients of Caesar salad are white bread croutons, Romaine lettuce, Parmesan cheese and, of course, a specially prepared sauce, which includes almost raw eggs, olive oil, garlic, lemon juice and Worcestershire sauce.

At the moment there are many options. And we’ll look at a few now...

Caesar - the usual traditional salad recipe

The most common of all options is a salad prepared according to a traditional recipe. At the very beginning, the dish consisted of lettuce, cheese, eggs and olive oil. All other ingredients arose later. The traditional recipe uses romaine lettuce leaves. But you can use any that you have on hand.

Ingredients:

  • Romaine lettuce – 1 bunch
  • Chicken breast - 2 pcs.
  • Snow-white bread - 100 gr.
  • Parmesan cheese - 50 gr.
  • Garlic - 2 cloves
  • Dijon mustard - 2 tsp.
  • Egg - 1 pc.
  • Worcestershire sauce - 1 tsp.
  • Lemon juice - 1 tbsp. l.
  • Salt to taste
  • Olive oil – 130 ml

Manufacturing development:

  1. Cut the snow-white bread into cubes of any size.

2. First you need to fry the garlic, cut into slices. Add pieces of bread there and fry on all sides until golden brown. Pour the finished crackers into a bowl and let cool.

3. Chicken breasts need to be slightly salted and fried in olive oil on each side for approximately 7 minutes. The pieces should be slightly browned; if desired, they can be lightly peppered.

4. After the breast has cooled, cut it into small pieces.

5. For the sauce Break 1 egg into a blender, add 1 clove of garlic, pour in Worcestershire sauce, lemon juice and add mustard, approximately 100 ml of olive oil and beat all ingredients. It turns out to be a salad dressing similar to mayonnaise.

6. Wash the lettuce leaves and dry them with a cardboard towel. Place the leaves on the bottom of the salad bowl.

7. Then add shredded chicken to the lettuce leaves, sprinkle it on top with grated Parmesan cheese and add croutons. Pour over prepared salad dressing.

That's all! Our salad is ready, serve!

Recipe for salad with croutons and Chinese cabbage

The traditional method involves making a complex salad dressing. This option can be considered economical, because an easy-to-make mayonnaise sauce will be used. But this won’t make Caesar salad with Pekingese any worse.

Ingredients:

  • Chicken breast -300-350 gr.,
  • Beijing cabbage - 1 fork,
  • Tomato (fresh) – 1-2 pcs.,
  • Parmesan cheese – 30-50 gr.,
  • Snow-white loaf – 2-3 slices,
  • Mayonnaise – 150-200 ml.,
  • Garlic – 4-6 cloves,
  • Dark pepper - to taste
  • Salt - to taste
  • Olive oil.

Manufacturing:

2. Add olive oil to a hot frying pan and fry for 3-4 minutes on each side. Then let the breast cool.

3. Cut slices of snow-white bread into cubes. If desired, trim off the rind.

4. Heat olive oil in a frying pan and transfer the cooked pieces. Salt, pepper and dry the crackers until golden brown.

5. Peel the garlic and chop. Combine with crackers and stir well so that all pieces of bread absorb the garlic smell. Remove from heat and cool.

6. Meanwhile, prepare a sauce for the salad, but not the traditional one, but one based on mayonnaise. To do this, peel and chop the garlic (2-3 cloves) (pass through a press). Combine with mayonnaise and stir well.

7. When all the ingredients are ready, you can start assembling the salad. Wash, dry, and coarsely chop the leaves of Chinese cabbage (or “tear” them with your hands). Place on a plate to form a base.

Tip: to keep Chinese cabbage leaves crispy longer, before adding, place them in cool water for 10-15 minutes, then dry with cardboard towels.

8. Cut the tomatoes into small slices (or cubes). Place on top of the cabbage layer.

9. Cut the cooled meat into medium strips (or cubes). It is important that the pieces are not very small. Also “sprinkle” them on the salad.

10. Place mayonnaise sauce on top.

11. Then add garlic croutons to the salad.

12. Finally, sprinkle generously with grated Parmesan.

To keep the salad crisp and the croutons from getting soggy, stir it at the table and enjoy its light, refreshing taste.

Extremely tasty salad with chicken, egg and tomato

In this recipe, the usual and beloved Caesar with chicken and tomatoes is revealed from a completely new side - crispy slices of bacon, tender quail eggs and juicy cherry tomatoes... Fantastic.

Ingredients:

  • Chicken breast fillet - 3 pcs.
  • Smoked bacon slices - 6 pcs.
  • Quail eggs - 12 pcs.
  • Cherry tomatoes - 16 pcs.
  • Rye bread - 100 g
  • Mixture of lettuce leaves (frisse, romaine, radicchio, and iceberg) - 250 g
  • Parmesan – 30 g
  • Thyme sprig - 1 pc.
  • Garlic clove - 2-3 pcs.
  • Salt
  • Pepper

For refueling

  • Natural yoghurt – 250 g
  • Fish or soy sauce - 3 tsp.
  • Worcestershire sauce - 3 tsp.
  • Balsamic sauce - 1 tsp.
  • Garlic clove - 5-6 pcs.
  • Basil leaves - 20 g
  • Olive oil - 1 tsp.
  • Salt

Manufacturing:

1. Wash and dry 3 chicken fillets. Rub well with salt and pepper on all sides and season with thyme.

2. Heat a little sunflower oil in a frying pan. Add a couple of cloves of garlic and fry the fillet on each side (3-4 minutes) until golden brown.

3. While the fillet is fried, prepare the croutons - cut the bread into cubes, add the croutons to the chicken, mix them well with the frying juice, and place in an oven preheated to 180'C for 15 minutes.

4. Meanwhile, place the quail eggs in boiling water and leave to cook for about 5 minutes. Cool in cool water and cut in half.

5. Remove the finished chicken fillet from the oven. Checking the crackers. If they are not crispy enough, put the crackers back in the oven and let them dry some more.

6. Place slices of smoked bacon on a dry, heated frying pan and fry on each side for 2-3 minutes.

If you keep them on the fire a little longer, you'll end up with bacon chips. These crispy slices will add some playfulness to your salad.

7. Now wash the cherry tomatoes and cut them in half.

8. Take 250g of natural yogurt, 4-5 cloves of garlic, two huge handfuls of basil leaves and a pinch of salt. Place all ingredients in a blender and blend. This is the base.

9. Add olive oil, Worcestershire, fish/soy and balsamic sauces (not to be confused with balsamic vinegar). Whisk again and taste.

10. If the sauce seems bland to you, correct it by adding garlic and/or salt. We need a slightly salted dressing. If you don’t have any sauces on hand, no big deal, you can limit yourself to one soy sauce (then be careful not to overdo it with salt!) and a few drops of lemon juice.

Thanks to the yogurt, the sauce turns out to be very tender and not very high in calories. But you can replace it with mayonnaise or a consistency of mayonnaise and sour cream in equal proportions.

If we talk about a real Caesar salad with chicken, then it must contain only chicken breast, lettuce, croutons, Parmesan cheese and independently prepared sauce.

But we don’t always have enough time to prepare crackers and sauce at home without the help of others. That’s why it’s quite common to buy crackers in a store, and use ordinary mayonnaise instead of sauce.

So forgive me if some recipes do not seem prepared for you according to all the canons of the genre. I come from the need to whip up a simple salad to add contrast to my daily menu without increasing my time in the kitchen.

Traditional Caesar salad recipe with chicken, croutons and cheese

But we will start, after all, with the “correct” recipe, and then decide for yourself whether you like this option, and whether Worcestershire sauce and Dijon mustard are sold in your nearby store.

Ingredients:

  • Snow-white bread - 150-200 g (quarter loaf)
  • 2 chicken breasts
  • 1 tsp Dijon mustard (if you can’t find it, ordinary canteen will do)
  • Olive oil - 100 ml for sauce and a couple of spoons for frying
  • Parmesan cheese – 150 gr
  • 2 cloves garlic
  • 1 chicken egg
  • Beijing cabbage 2-4 leaves
  • Worcestershire sauce - 1 tbsp
  • 1 tbsp lemon juice
  • Salt to taste

Manufacturing:

We start by making croutons. To do this, cut the bread into cubes about 1 by 1 cm in size.

Then pour a little olive oil into a heated frying pan, add one finely chopped clove of garlic and future croutons.

Fry the bread over medium heat, stirring constantly until it is browned on all sides. This will take 10 to 15 minutes.

When the crackers are ready, transfer them to a plate with a cardboard napkin to absorb excess fat.

Wipe the pan with a napkin, pour in a small amount of olive oil, heat over low heat and add chicken breasts. Lightly salt.

Fry them on both sides over low heat for 7 minutes on each side.

Then wait until they cool slightly and cut into medium-sized cubes.

Now let's move on to making the sauce.

How to Make Real Caesar Salad Dressing

Let's start with the fact that to make a unique dressing you just need Worcestershire (Worcestershire) sauce. This is a complex ingredient that contains 25 different products. But the complexity of its production is not only in the different composition, but also in the fact that after production it must “ferment” in an oak barrel.

It’s impossible to replicate this at home, so if you want to prepare a traditional Caesar, then try to find real Worcestershire sauce, because its taste is inimitable.

It is Worcestershire sauce that makes Caesar one of the most popular salads in the whole world.

So let's continue. To make the dressing, we need to break one egg into a blender bowl, add one clove of garlic, Dijon mustard, Worcestershire sauce and olive oil.

Beat the mixture with a blender until smooth.

After whipping, the dressing acquires the appropriate milky color.

All that remains is to collect all the ingredients together.

Place the leaves of Chinese cabbage torn by hand into a salad bowl.

If you cut the leaves with a knife, their edges will quickly begin to wilt and darken, spoiling the appearance of the salad.

Add chicken, half of the prepared dressing and stir.

Grate the cheese on a small grater directly into the bowl with the salad, add croutons, pour in the second half of the sauce and mix again.

Salad ready. Bon appetit!

If you are not going to eat the salad right now, but are preparing it for a festive table, then do the last step with croutons and cheese before serving the salad. This way the cheese won’t stick together and the crackers won’t get soggy.

Caesar with chicken and cherry tomatoes: a regular step-by-step recipe

This recipe is already closer to those products that are most often found in our refrigerator, and to make it you don’t have to travel to several hypermarkets in search of suitable ingredients.

You don’t have to use cherry tomatoes, you can use regular ones that are meatier, but they just won’t turn out as great.

Ingredients for 4 servings:

  • Snow-white loaf – 0.5 pcs
  • Chicken breast - 2 pcs
  • Salad – 1 head
  • Parmesan cheese – 50 gr
  • Cherry tomatoes - 8-12 pcs.
  • Olive oil (refined) for frying

For the sauce you will need:

  • Eggs - 2 pcs
  • Unflavored olive oil (refined) - 150 ml
  • Lemon juice - 1 tbsp
  • Reddish wine vinegar - 0.5 tsp
  • Table mustard - 1 tsp
  • Onions - 1/2 pcs
  • Garlic - 2 cloves
  • Parmesan cheese – 150 gr
  • Salt - 0.5 tsp
  • Sugar - 1 tsp
  • Ground dark pepper - a pinch

Manufacturing:

Cut the loaf into small cubes, place on a baking sheet covered with baking paper, sprinkle with olive oil and place in the oven preheated to 200 degrees for 5-7 minutes.

Lightly salt the chicken breast and fry in a frying pan with olive oil for 7 minutes on each side. Let it cool at room temperature and cut into thin slices.

We tear the lettuce leaves from the fork, rinse and dry with a towel.

For Caesar, it is better to take only the upper greenish parts of the leaf, so that it does not come out too “herbal”

Next we prepare the sauce. To do this, you need to boil the eggs so that the yolk remains raw.

Place raw eggs in a plate of warm water for a few minutes to keep them warm and prevent them from cracking during cooking.

Place the eggs in boiling salted water for exactly one minute. Then we put them in cool water and let them cool.

Finely chop the onion and garlic, place in a comfortable bowl and grind with a blender.

Next, add all the ingredients for the sauce (vinegar, lemon juice, eggs, salt, sugar, etc.), not counting cheese and butter, and beat with a blender until smooth at highest speed.

When you break the eggs, you will see that the yolk has flowed out, and some of the white remains on the walls of the shell. Scrape it off with a spoon and also put it in the glass where you mix the sauce.

After mixing, place the blender at the bottom of the glass and pour olive oil on top. Without lifting the blender, we begin to turn it on with pulsating movements so that the oil is moderately mixed with the sauce.

Pour the mixture into a deep plate with grated Parmesan, stir with a spoon and the Caesar sauce is ready.

This sauce can be stored in the refrigerator for up to 3 days.

We collect the ingredients together. For each serving of salad, mix the ingredients separately - it will be more attractive.

It is best to combine the ingredients just before serving, so that the crackers do not soften and the sauce does not spill.

Place a torn lettuce leaf (2-3 pieces) on the bottom of the bowl and add 3-4 spoons of sauce. Mix.

Add a couple of handfuls of crackers, chicken breast, grate a little Parmesan and mix again.

Place the salad on a plate, sprinkle another handful of croutons on top and add 3-4 tablespoons of sauce, spreading it over the entire area of ​​the salad.

We decorate the dish with cherry tomatoes (you can cut them in half, or you can throw them whole) and the salad is ready.

How to cook Caesar salad with mayonnaise and quail egg

And now the most incorrect, but most often made Caesar with mayonnaise. A quick addition to the sauce. Real gourmets will say that this abuse of salad is not allowed under any circumstances, but let's be honest: who wants to waste a lot of time searching for ingredients for the sauce and making it, if you can just use mayonnaise?

I'm all about simplifying recipes. But what you really shouldn’t do is use store-bought flavored crackers. They completely kill the taste of the salad.

The quail egg will serve as decoration for the dish. You can take regular chicken and cut it into slices.

Ingredients for 1 serving of salad:

  • Half a chicken breast
  • 4 boiled quail eggs
  • 5 cherry tomatoes
  • 8 lettuce leaves
  • 2 slices of bread
  • Slice of lemon
  • 25 g parmesan
  • Half a clove of garlic
  • 2 tablespoons mayonnaise
  • 2 tablespoons sunflower oil
  • pinch of dark pepper
  • 2 pinches of salt
  • pinch of sugar

Let's create the sauce and make sure that this process saves a lot of time compared to other dressings from previous recipes.

Squeeze the juice from a lemon slice into the mayonnaise, add the pepper and squeeze the garlic through a garlic press.
