Caesar with Chinese cabbage and quail eggs

Required set of goods:

  • 400 gr. "Beijing";
  • 6 quail eggs;
  • 5 tbsp. olive oil;
  • 40 gr. cheese;
  • 1 tbsp. sugar;
  • 2 garlic cloves;
  • 2 tsp mustard with grains;
  • 2 tsp freshly squeezed lemon juice;
  • 2 slices of snow-white bread;
  • 1/2 tsp. dried basil;
  • 1 tbsp. 9% vinegar;
  • 3 tbsp. water;
  • 1 tsp Worcestershire sauce;
  • little salt and pepper.

  1. Place the boiled eggs in cool water and clean them later. In a bowl, mix vinegar with water, add chopped garlic clove, mustard, sweet sand. Dip the peeled eggs into the purchased sauce for a quarter of an hour.
  2. To make Caesar you need croutons. They can be purchased, but it is better to prepare them independently at home. Cut snow-white bread into small cubes. Peel the 2nd clove of garlic, chop it, mix it with dry basil and olive oil. Place the croutons in a hot frying pan and fry them, pouring oil and spices until they are beautifully browned.
  3. In the meantime, thinly chop the “Beijing”, put it in a salad bowl, sprinkle croutons from snow-white bread on top, as shown in the photo. Prepare the dressing separately. Whisk together Worcestershire sauce, pepper, salt and lemon juice.
  4. Pour the dressing over the salad, mix, and place the halves of pickled quail eggs on top and sprinkle with grated cheese. I think you will like this recipe for a delicious Caesar salad with cabbage.

Caesar salad with chicken, Chinese cabbage and tomatoes

We offer you a recipe for a restaurant Caesar salad. It can simply be created at home from a small set of products.

Ingredients for the base:

  • 1 chicken breast (450-500 gr.);
  • fork of Chinese cabbage (soft part);
  • 50 gr. parmesan;
  • 3-4 pcs. cherry;
  • croutons;
  • lettuce leaves for serving.

Ingredients for croutons:

  • 4 garlic cloves;
  • 1/3 of yesterday's loaf;
  • 5 tbsp. vegetable oil;

Dressing ingredients:

  • 2 yolks of soft-boiled chicken eggs;
  • 0.5. a small spoon of 9% vinegar;
  • 4 tsp freshly squeezed juice from 1 lemon;
  • 1 tsp French mustard;
  • 200 ml vegetable (olive) oil.

{Instructions} for manufacturing step by step:

  1. We start preparing Caesar salad with cabbage and chicken by preparing the meat. Wash the breast well, dry it and cut it into pieces. In a frying pan with vegetable oil, fry the chicken until golden brown, adding salt to the meat during the frying process.
  2. Cut off the crust from the bread and cut the flesh into cubes. Place them on a baking sheet in one layer and dry them in the oven over medium heat. To give the croutons a special flavor, we prepare a special fragrant oil. To do this, peel the garlic. We pass it through a garlic press and combine it with vegetable oil. To make the oil more aromatic, you can infuse it with garlic for a short time, about 2 hours. Before using, strain the oil.
  3. Pour half of the fragrant butter into a heated frying pan and brown the crackers in it.

Making salad dressing

  1. To prepare Caesar sauce, soft-boil two eggs, for this we cook for no more than 1.5 minutes after boiling. We clean the cooled eggs, carefully separate the yolk and white and place the yolks in a bowl. We also place table mustard with seeds, table vinegar, 200 ml of olive oil and lemon juice. Beat the mixture with a blender until smooth, seasoning with pepper and salt to taste. The sauce comes out rich yellowish in color and quite thick.
  2. When all the ingredients are ready, we begin to assemble the Caesar salad with cabbage and chicken. Place a few lettuce leaves on a serving platter. We roughly tear the Peking leaves with our hands.
  3. Next, distribute the chicken pieces and croutons. Arrange the cherry halves randomly. Sprinkle the salad with grated Parmesan and spread the delicious dressing on top. Serve the salad without delay, while the croutons and cabbage retain their own crunch.

Caesar salad with cabbage, chicken and vegetables

  • 230 gr. mayonnaise;
  • 3 tbsp. breadcrumbs;
  • 10 pieces. crackers;
  • 1 fresh cucumber;
  • 2 chicken fillets;
  • 1 bell pepper;
  • 1 large spoon butter;
  • 400 gr. Chinese cabbage;
  • 2 new testicles;
  • chicken seasoning;
  • little soy sauce.
  1. Wash the bird well and marinate it for 2 hours in a mayonnaise-like consistency with chicken seasoning and soy sauce. Fry the finished breasts completely in vegetable oil until lightly browned. It is very important not to dry out the meat so that it remains juicy on the inside. We cut four longitudinal strips from the fillet for salad design, and cut everything else into medium pieces.
  2. Rinse and dry the vegetables. We remove the seeds from the sweet pepper and cut the flesh into the same pieces as chicken. Cut the cucumber into half slices.
  3. Coarsely chop the Chinese cabbage, removing any hard seals.
  4. Remove the crust from the bread and cut the pulp into cubes. Dry the bread pieces with crusts in a dry frying pan. When the croutons are browned, place the butter in a frying pan and sprinkle with seasoning and salt. Let the croutons cool and turn the crusts into coarse crumbs.
  5. Cabbage, chicken and croutons are mixed in a salad bowl. Add cucumber with bell pepper. Mix everything, adding mayonnaise (100 grams per 1 serving).
  6. Place Caesar salad with Chinese cabbage and croutons in a heap on a plate, sprinkle with crumbs and grated cheese. Along the edges of the “slide” we lay out the previously left slices of chicken and quarters of boiled eggs.

From the given layout we get 2 servings of salad, which is best eaten right away.

Caesar with squid, tofu and cabbage

This unusual Caesar salad with Chinese cabbage and croutons with the addition of squid and tofu is suitable for both a festive lunch and a quiet meal at home.

The following products will be useful:

  • 2 tubes of squid;
  • 2 tsp freshly squeezed lemon juice;
  • 30 gr. croutons from snow-white bread;
  • 200 gr. tofu cheese;
  • 10 sheets of “Beijing”;
  • 2 tsp table mustard;
  • 1 garlic clove;
  • little olive oil, pepper and salt.

  1. Making squid is a simple matter. We defrost the tubes using a gentle method. Later, scald with boiling water and remove the skin. Place the cleaned carcasses in boiling water and cook them for no more than 5 minutes. If cooking takes longer, the seafood will become hard and tasteless. Cut the cooled squid into thin strips.
  2. Cut the bread into cubes, brown it in vegetable oil until golden brown.
  3. We rinse the leaves of Chinese cabbage, dry them and roughly tear them with our hands. Cut tofu cheese into medium cubes.
  4. In a salad bowl, mix croutons, squid and cabbage. Add cheese there too.
  5. Separately grind mustard, chopped garlic, pepper with olive oil. Whisk the sauce, season the almost ready-made Caesar salad with Chinese cabbage, and sprinkle with the freshest herbs.

Caesar salad can rightfully be called a classic of the culinary Olympus. This dish is a frequent “guest” on ceremonial tables. Caesar salad is included in the menu of both famous restaurants and ordinary cafes.

Naturally, ordinary housewives also prepare Caesar salad. True, in order to create a “real” Caesar salad, you need products that are not always available in our food pantries. But you can always find a replacement for them. So, our dish uses white cabbage, which can completely replace the Iceberg salad. This particular ingredient is most often used for Caesar.

In addition to white cabbage, the proposed recipe uses boiled chicken. Typically this should be chicken breast or fillet. Our Caesar salad also includes croutons. We cooked them ourselves, in a frying pan.

In a “real” Caesar, great attention is paid to dressing. We decided to offer the best option - take regular mayonnaise. It’s great if you have olive mayonnaise on hand. He is unsurpassed for our Caesar.

How to prepare a regular Caesar salad with white cabbage is described in the recipe below. And so that cooking does not cause you any difficulties, we accompanied each culinary step with a photo. Good luck to you in making an ordinary, but very tasty Caesar salad!

Step by step recipe

In our recipe, such a salad component as chicken is already boiled, so we’ll start implementing the recipe by preparing croutons. For crackers, it is better to use a snow-white loaf or bread. The loaf (bread) should be a little stale. Otherwise, when cutting bread slices, you risk getting a huge amount of crumbs. So, cut off the crusts from the bread slices. Cut the bread slices into cubes on a cutting board.

Grease the bottom of the pan with very little vegetable oil. When the pan is hot, add the bread cubes. Fry the crackers, stirring them occasionally. The crackers should be toasted on each side. You can create croutons for salad in the oven. Choose the option that suits you. Let the finished croutons cool, and we move on to cutting out the other ingredients for the Caesar salad.

Take white cabbage. Since the top leaves may be damaged, we remove them from the fork. Transfer the cabbage to a cutting board. Shred the cabbage very thinly. If you are not completely able to do this finely, then you can chop the cabbage using a special vegetable cutter. Place the cabbage tenderloin in a bowl and immediately season it with salt. It is recommended to knead the chopped cabbage with your hands so that it becomes juicy. The taste of the salad will only benefit from this procedure.

The next ingredient for our Caesar is boiled chicken. Cut the chicken fillet (breast) into cubes. Transfer the chicken cubes to the cabbage.

Let's start chopping hard cheese. This recipe uses Dutch cheese. For grinding, it is recommended to use a grater with small cells. Transfer the resulting cheese shavings to the salad ingredients in a bowl. Leave a little cheese to decorate the salad.

Add homemade crackers to the bowl.

All ingredients are collected in a bowl. Season them with mayonnaise. As stated above, it is better to take olive.

Gently mix the salad ingredients with a regular spoon. Taste it, if salt is not enough for you, then add this spice to the salad.

Caesar is the most popular salad. The main ingredients are considered to be lettuce, Parmesan cheese and croutons. And the most important thing that describes a specific taste is a special Caesar sauce. There are a huge number of salad options. Any restaurant will offer its own modification of this dish. And here’s what amazed me: two years ago I had the opportunity to try Caesar salad with white cabbage . Recently, the “happy option” repeated itself. Again with cabbage. And no cheese. And with pork. And it's delicious! I remembered the ingredients and repeated them at home! Everything is simpler than usual, here is the recipe:

Ingredients:

  • 300 g pork
  • 300 g white cabbage
  • 100 g wheat crackers
  • 200 g Cherry tomatoes
  • 220 g Caesar dressing
  • 1 tbsp. vegetable oil

A la Caesar salad with cabbage:

Pour vegetable oil into the multicooker bowl and turn the multicooker on to the “frying” mode. While the bowl is heating, cut the meat into pieces, approximately one and a half to two centimeters. Place the meat in a bowl.
