1. Prepare all ingredients. Start by making the inside, so it needs to sit. Pass the meat through a meat grinder or use ready-made minced meat. I have a platter: beef and pork. You can only throw beef or pork, here it is optional.

2. Peel the onion, pass through a meat grinder or grate on a large grater. Add onion, salt and dark pepper to the minced meat to taste. Mix well. The minced meat should become neither dry nor watery. Beat the finished minced meat until it comes together into a single lump. Usually it doesn't take much time, you will feel it.

3. Cover with cling film and put in the refrigerator.

4. While the inside of the whites is “resting”, let’s start making the dough.
Pour the warm drink into a deep bowl, add soda and stir. It is better to take an infused drink, not the freshest one. My drink stood for 6 days in the refrigerator, fat content 3.2%.

5. Sift the flour through a sieve.

6. Add to the drink, knead into a soft and elastic dough. Add flour evenly, in portions. It will turn out homogeneous and of a suitable mixture, it will not be clogged. Knead the dough until soft. Different amounts of flour may be required. It depends on the manufacturer and the type of flour. In this case, it took me 240 g. The dough comes out soft, a little sticky. But it doesn't flow or slip. Add vegetable oil evenly. Continue kneading. You may need 2-3 tbsp. oils Knead the dough for approximately 5 - 7 minutes. This is how the dough should turn out - alive, just stretching elastic and smooth, not clogged with flour. Cover the bowl with film and leave to rest for 20-30 minutes.

7. Make belyashi specifically before frying, because the inside is wet. Grease the surface on which the whites will form with vegetable oil. I will use a silicone mat. Knead the “rested” dough a little and divide it in half. Put one part back under the film, cut the other into 4-5 parts. It all depends on what size you want the whites to be.

Fluffy whites with kefir - cook in a frying pan

From time to time you pass by a street tent and are seduced by the whiting smell... Here the desire to buy and eat arises. But it’s better to endure and cook them with your own hands in a frying pan, because these are not comparable to the “street” ones.

Why are belyashi made with kefir so good? Firstly, kefir dough is prepared quickly, there is no need to wait until it rises. During this period of time you can prepare the filling. Secondly, they turn out appetizing and juicy. Thirdly, they remain soft the next day.

At the moment I will show you the entire process of making them with step-by-step photos. Well, of course, I’ll share some cooking tricks.

Kefir belyashi without yeast with meat - step-by-step recipe

First, I’ll tell you how to cook them using yeast-free kefir dough. We will replace yeast with soda. And this way we will save time, because we will let the dough rest for only 15 minutes. And at the end we get an appetizing and juicy snack.

Ingredients:

  • drink - 0.5 l;
  • eggs - 2 pcs;
  • sugar - 2 tbsp;
  • vegetable oil - 30 ml;
  • flour - 800 g;
  • soda - 1 tsp;
  • salt - 1 tsp.
  • minced meat - 800 g;
  • medium-sized onion - 2 pcs;
  • garlic clove - 3-4 pcs;
  • drink - 4 tbsp;
  • salt, pepper, seasonings - to taste.

Manufacturing:

1. Pour the drink into a wide bowl and add eggs, soda, salt and sugar. Stir everything and then pour in 30 ml. vegetable oil.

2. The dough will bubble and now you can evenly add the sifted flour and knead the dough. There is no need to knead the dough for a long time; it should turn out soft and not stick to your hands. Cover it with film and let it sit for 15 minutes. Meanwhile, prepare the filling.

3. Grind the onion and garlic in a blender and later add them to the minced meat. As for minced meat, it is naturally better to create it yourself. But if you buy it in a store, keep in mind that it should be uniform and dense.

To make the whites juicy, also add 4 tablespoons of kefir.

Then add salt and pepper to taste.

4. The end result is an interior with meat like this.

5. Now take the dough and, having greased your hands with vegetable oil, roll it into a roll and divide into equal pieces. Take a piece of dough and flatten it into a narrow cake. Place the meat filling in the center of the flatbread and, gathering the edges of the dough into small folds, form the classically shaped whites.

6. Pour vegetable oil into the frying pan and wait about two minutes until it gets hot. The oil should cover the floor of the whitewash. Fry over medium heat until the minced meat is perfectly cooked. The dough will rise when frying and this is how they will turn out - airy and juicy!

How to cook delicious fluffy whites with yeast

For now, let’s prepare belyashi with minced meat with a hole in the center. Why is the hole needed? It is necessary so that the minced meat does not come out half-baked when cooked. By the way, I highly recommend adding a lot of onions to the minced meat - the more, the better.

Ingredients:

  • 300 ml. kefir;
  • 0.5 tsp soda;
  • 1 tbsp. Sahara;
  • 2 tbsp. with a heap of flour;
  • 20 g compressed yeast or 7 g dry yeast.
  • 1 tsp salt;
  • 2 testicles;
  • 100 ml. refined vegetable oil;
  • 500 g flour.
  • minced pork and beef;
  • onion;
  • salt;
  • ground pepper.

Manufacturing:

1. To make the dough, mix the drink, soda, sugar, flour, compressed yeast well. The dough should be thick and now you can leave it for 10 minutes. During this period of time, she will develop a foamy cap. The dough is ready and you can make the dough.

2. After this, add eggs, vegetable oil, salt to the dough and mix everything. Add sifted flour evenly and knead the dough. Then put it in a bowl greased with vegetable oil and leave for 1 hour.

3. To make the inside, mix the minced meat with finely chopped onion on a grater or in a blender. It will give off smell and juiciness to the dough and insides. Season with salt and pepper to your own taste. Mix well and beat lightly to saturate the minced meat with oxygen.

4. Form the dough into a thick “sausage” and cut it into equal pieces.

5. Roll any piece into a flat cake with a rolling pin and then put the filling in the center. Let's form whites with a hole in the center. To do this, gather the edges of the dough into the center with an accordion, gluing them together.

6. Pour oil into the frying pan so that the whites are cooked in it and not fried.

The oil must warm up perfectly.

A reaction occurs, the mass foams, which means the soda is extinguished. The drink should be slightly sour. Otherwise, the soda will be felt in the finished dough - and it will not be so fluffy. Break two eggs into a bowl and whisk with sugar and salt.
There is no need to create a fluffy mass and wait for everything to dissolve - this is a quick recipe for kefir dough without much effort. Pour the foamed drink into the mixture, mix until evenly distributed.
Add flour, knead soft and elastic dough.
Add it evenly, in portions - this is the secret of the correct dough. It will turn out homogeneous and of a suitable mixture, it will not be clogged. Add vegetable oil to the finished dough in two additions, thoroughly kneading afterwards.
Place the kefir dough in a cup, cover with film, and let it rest for 20-30 minutes.
Let's prepare the filling.
Cut the onions into small cubes: this way they won’t stand out too much. You can twist it through a meat grinder with a large mesh. Salt the onions, add dark ground pepper: everything to taste.
We knead it until it reaches juice with our hands; if you put it through a meat grinder, you don’t need to. It will turn out juicy anyway. Due to the fact that we salted the onions, the salt will be moderately distributed throughout the minced meat. Add minced meat (you can make it yourself from any meat) and mix.
If the meat is quite dry, be sure to add ice water: for juiciness. We beat the minced meat, throwing it into a cup: in this way the inside will become homogeneous. Take the rested dough.
Because the dough is sticky, we use vegetable oil when cutting (the flour will burn in the oil when frying). Divide into 2 parts. From one half we begin to sculpt whites, dividing them into small balls in advance, depending on what size you want to create whites.
Spread out a piece of dough, not very thinly in the middle.
The edges should be thin. Place the minced meat filling in the middle and level it out. We connect the edges to the center, forming a whitewash. Leave a small hole in the middle. Using gentle pressure, make the belyash flat: this way it will fry faster and less oil will be needed for frying. Fry in a frying pan with a huge amount of vegetable oil: it must reach the middle of the white meat.
The oil must be heated perfectly, but not to the point of smoking, of course! Place the belyashi with the hole facing down, fry over low heat until golden brown on one side, then turn over and fry on the other.
Pour a teaspoon of vegetable oil from the frying pan into the hole: this way the inside will be juicy and fried better.
Place the fried whites on paper towels to absorb excess oil.
Place them in a saucepan if desired: they will remain warm for some time and become softer on top. We fry all other whites using the same method.
