When I was little, before the holidays, my grandmother baked homemade bread, pies and buns with poppy seeds, apples, cottage cheese and a variety of innards. Home comfort, hot stove in the kitchen and mesmerizingly blazing firewood. Fresh homemade cakes and fresh milk complemented the happy chaos of early youth.

Usually, we don’t think about and don’t specifically differentiate between poppy seed buns and pies with poppy seeds. In fact, this is not particularly important, especially in childhood. I always thought that a pie is when it has a lot of tasty interior, at least half the size of the pie itself, like in cheesecakes. But buns with poppy seeds are a very soft dough with a small amount of inside.

The most delicious poppy seed buns are made from rich dough. Baking is considered to be various additives to the dough, which significantly improve the taste and nutritional value of baked goods. As baked goods they use various milk products, fats, sweet ingredients, eggs, a variety of dried fruits - raisins, dried apricots, nuts, etc. Butter dough can be yeast or unleavened.

To bake poppy buns, you need a poppy seed. Once upon a time, my grandmother grew poppies in the garden, and it did not bother anyone until a certain mass social problem arose. At first the poppy simply disappeared at night, then it was completely forbidden to sow it. In general, it could be purchased, as they say, “for glasses,” and cheaply.

Butter buns with poppy seeds - soft yeast dough, slightly poppy insides and short-term baking. Despite the apparent difficulty, the dough is prepared simply, and the poppy seed buns bake quickly like kefir muffins.

Most homemade baked goods are made using wheat flour. The dough can be different - unleavened, as for buns with sesame seeds, or flaky, as for apple strudel, but you always need flour of the highest quality. We bake muffins with poppy seeds and buns from perfectly risen yeast dough with the addition of quite a huge amount of muffin, so it turns out tastier.

Ingredients for poppy seed buns

  • Wheat flour up to 4 cups (520 g)
  • Poppy seed 100 g
  • Instant dry yeast (for flour) 5 g
  • Milk 250 ml
  • Testicles 2 pcs
  • Butter 150 g
  • Sugar 3 tbsp. l.
  • Salt, vanilla spices

How to make buns with poppy seeds

  1. Before preparing the buns, you need to remove the eggs, butter and milk from the refrigerator in advance so that they warm up to room temperature. It is better to sift the flour through a sieve in advance to avoid lumps, remnants of grain shells and other relics. In addition, sifting saturates the flour with air, which is beneficial for the dough.

Wheat flour, poppy seeds and baked goods

Mix dry ingredients - flour, sugar, salt and yeast

Add butter, milk and egg to flour

Knead soft dough

The dough should rise perfectly in a warm place

Steam poppy seeds in boiling water - they should swell

Grind poppy seeds and add sugar

Finished poppy seed bun interior

Roll out the dough into a rectangle with a rolling pin

Spread the poppy seed filling onto the dough

Roll the dough with the inside into a roll

Cut the folded dough into buns

Leave the buns for half an hour until they rise

Brush the buns with egg and place them in the oven

Bake the buns until cooked and nicely browned.

Buns with poppy seeds

Development of production of delicious poppy seed pastries.

Since these are poppy seed buns made from yeast dough, the recipe provides a detailed description of how to make it. I tried not to forget about the rules for working with poppy seed baking in general. Ingredients

  • milk 250 ml,
  • wheat flour 500 – 600 g,
  • dry yeast 18 g (fresh 50 g),
  • egg 2 pcs.,
  • vegetable oil 2 tbsp. l.,
  • salt ½ tsp,
  • sweet sand 200 g,
  • butter 95 g.
  • poppy 180 g,
  • milk 200 ml,
  • sugar 2 tbsp. l.,
  • vanilla sugar 1 sachet,
  • egg 1 pc. (for greasing buns)

Manufacturing

Making any kind of baked goods, including buns with poppy seeds, begins with making a base - yeast dough.

Yeast dough. Pour warm, but not hot milk into a bowl (temperature within 38 - 40 °C), add 1 tbsp. l. sweet sand with a slide and dry or fresh yeast. Stir thoroughly with a spoon.

For rich yeast dough we use only premium wheat flour. Sift it through a sieve and add 2 tbsp. l. into the dough. Mix so that there are no lumps. Cover the dough with a linen napkin and leave it in a warm space to rise for 20 - 30 minutes. If the room is cool, you should pour hot water into the pan and place a bowl of dough on top so that the bottom of the bowl does not touch the water.

In a warm environment, yeast fungi begin to actively divide. If everything is done correctly, the yeast is fresh and of high quality, then the dough will become covered with bubbles and increase in size a couple of times.

When the dough is ready, prepare the pastry. Melt the butter in the microwave or on the stove.

Beat 2 eggs into a separate bowl and combine them with a glass of sugar.

Beat the eggs with sugar with a mixer until the sweet sand is completely dissolved. Then, without ceasing to beat, pour in the melted butter in a narrow stream, and then lightly salt (about half a teaspoon of salt).

Pour vegetable oil into the dough.

Now, for the convenience of kneading the dough, pour the eggs beaten with sugar and butter into a deep bowl. And we’ll send the dough there too. Let's mix everything.

Add flour evenly to the prepared mass and knead the yeast dough.
To prevent the dough from sticking to your hands, moisten your hands with vegetable oil from time to time. We will knead the dough for 15 minutes.

The rich yeast dough comes out smooth, elastic and does not stick to your hands. Let's give the finished dough a round shape, cover the bowl with a napkin and send it to a hidden warm space for 1 - 1.5 hours.

During this period of time, the dough should rise perfectly.

When the yeast dough has risen, knead it a couple of times to release the carbon dioxide bubbles, cover the bowl with a napkin and send it back to a warm space so that it rises again.

Interior for buns with poppy seeds. While the dough is rising, prepare the poppy seed filling. Add poppy seeds to bubbling milk and boil over low heat for 5 minutes. Then remove from heat, cover the bowl with a lid and let the poppy seeds brew for 1 hour.

After this, strain the poppy seeds through a sieve and press down with a spoon to remove the remaining milk to the last drop. Even if you remember that there is no milk in the poppy seed, you should still strain it. Residual water may settle the dough.

Our great-grandmothers ground poppy seeds for buns and rolls in a mortar, now you can create this using an immersion blender.

Place the strained poppy seeds in a dry bowl, add sweet sand and vanilla sugar to it and grind into small crumbs with a blender. If you don’t have a blender, you can grind the poppy seeds a couple of times through a meat grinder or skip this step, but with ground poppy seeds, the baked goods come out much tastier.

Form and bake buns with poppy seeds. Meanwhile, the dough has already risen for the second time, and we need to knead it and divide it in half.

Place some of the dough on a countertop sprinkled with flour and roll it out into a narrow layer 3–5 mm wide. The thinner the dough is rolled out, the more layers the finished buns will have. Just don’t overdo it so that the dough doesn’t tear when rolling.

Spread the poppy seed filling moderately on top and roll it up.

Cut the roll into 7 - 8 buns. We do the same with the remaining dough. I have 15 buns 4–5 cm wide. You may have a different number, depending on how you roll out the dough and cut the roll.

Line a baking tray with baking paper and place the buns. Let's place them in a warm space to proof for 20 - 30 minutes. When the buns have risen, brush the tops with beaten egg.

We will bake buns with poppy seeds in an oven preheated to 180 0C for 20-25 minutes, until the top is browned. The times are approximate because everyone's oven is different.

Remove the finished baked goods from the oven and cool. Bon appetit!
