I would like to share this delicious recipe for yeast pie with jam with you. The dough comes out airy, soft, spongy, savory and fragrant. The dough is prepared without one egg. The main thing is that all ingredients are at room temperature. Try it, the pie always turns out great.

Mix yeast and 1 tablespoon of sugar in warm milk.

Place in a warm place for 10-15 minutes so that the yeast starts to play.

Add salt, the remaining 4 tablespoons of sugar, vanilla sugar, melted butter and vegetable oil to the prepared yeast. Stir everything well until the sugar is completely dissolved.

Add sifted flour evenly.

Mix well every time. You should get a soft dough.

Cover it and place it in a warm space for 1-1.5 hours, so that the dough increases 2-3 times.

As soon as our dough has risen, we deflate it and put it on the table, greased with a little vegetable oil. Divide the dough into two equal parts.

From one part we roll out a circle, the diameter of which should be equal to the diameter of the mold (mine is 24 cm).

Carefully roll the circle of dough onto a rolling pin and transfer it to the mold (previously greased with vegetable oil; if the mold is silicone, then there is no need to grease it).

Lubricate with jam at room temperature.

From the second part of the dough we make a braid, lay it around the perimeter of the mold, thereby creating a side, and from the remaining dough we make any decorations on the surface of the pie. I made small braids and laid them on top.

Place our pie in a warm space for 20-25 minutes and turn on the oven at 180 degrees. Our cake has risen and the oven has warmed up. Let the pie sit for 35-40 minutes.

We check readiness with a torch.

Take the finished yeast pie with jam out of the mold and leave it on a wire rack until it cools completely.

Yeast pie with jam - incomparably warm pastries

If you need a recipe for cozy homemade pastries, then pay attention to this master class, which we prepared carefully and with photos. Thanks to it, you will bake an appetizing and savory pie with jam from yeast dough in the oven. Even if you haven’t dealt with yeast dough before, don’t worry: the recipe is so simple that even a beginner can handle it.

Ingredients for a 22 cm diameter mold:

  • milk – 120 ml;
  • testicle – 1 pc.;
  • dry active yeast – 8 g;
  • vegetable oil – 2 tbsp. l.;
  • sugar – 1 tbsp. l.;
  • salt - a pinch;
  • flour – 300 g;
  • thick jam - 3/4 cup;
  • egg - for lubricating the top.

How to make yeast pie with jam

Pour yeast, sugar and salt into a mixer bowl, add warm milk and mix.

Pour in the egg and mix.

Add about half of the sifted flour and mix.

Pour in vegetable oil and mix.

Then add the remaining flour a couple of tablespoons, mixing well each time. In order for the pie to come out tender and airy, the dough should not be “filled” with flour. At the end of the kneading, add it very little at a time, kneading well. The amount of flour may vary slightly - it depends on its parameters. We form a ball from the finished dough.

From it we separate a piece the size of half a fist and set it aside (this dough is for the stripes on top). Roll out the dough into a circle with a diameter of approximately 24 cm - slightly larger than the diameter of the baking dish. We transfer the rolled out dough into a baking dish greased with vegetable oil and splash it along the bottom, forming sides approximately 1.5 - 2 cm high.

Spread thick jam onto the dough. If the jam is not thick enough, first mix it with a tablespoon of breadcrumbs or a teaspoon of starch. Spread the jam sparingly over the surface of the dough.

Roll out the remaining piece of dough thinly, 2-3 mm. We cut it into strips approximately 0.5 cm wide, but the width of the strips can be larger, at your discretion. The main thing is that all the stripes are approximately the same width - this way the cake will look neater. Place strips of dough in a mesh pattern on the pie. We firmly attach the ends of the strips to the side.

Lightly beat the yolk of the chicken egg and, using a pastry brush, carefully brush the strips of dough on top and the side of the pie.

Place the pie pan in an oven preheated to 180 degrees C and bake for 20-25 minutes. About 15 minutes after the start of baking, we periodically look at the cake: if it starts to get very brown, cover the cake with foil or parchment. We check the readiness of the pie using a wood stick: if it comes out dry from the side of the pie, it is ready.

Remove the finished pie from the oven and leave it in the pan for 10 minutes. After opening the mold, transfer the pie to a plate and leave to cool to room temperature.

Depending on the type of interior, baked goods contain various types of benefits and, accordingly, vitamins. This is also vitamin (a low-molecular organic compound of relatively simple structure, necessary for all living things) C, B, PP, A, which are found in apricot, currant, strawberry jam, but all these types are certainly connected by pectin, minerals, beta-carotene and fiber . The effect of high temperatures does not affect these microelements in any way.

To make sweet yeast pies, jam is often used - it imparts a special, distinctive taste to an already relatively finished product. Yeast pies with jam are quite a versatile sweet - they can be prepared for a family tea party, and not a single big holiday can do without them.

Butter pie with apricot jam “Babushkin”

  • Premium flour – 30 g
  • Table salt – 0.5 tsp.
  • Sugar – 4 tbsp.
  • Instant yeast – 1 tsp.
  • Chicken egg – 2 pcs.
  • Cow's milk (room temperature) – 160 ml.
  • Butter (softened) – 70 g
  • Apricot jam – 3 tbsp.
  • Breadcrumbs – 2 tbsp.

Sift 350 grams of flour, mix with 2 tablespoons of sugar, salt and add yeast, then create an empty space in the center of the mixture, beat one egg into it, beat a little and pour in the milk. Now you need to knead the dough with your hands for 7 minutes. Give him 10 minutes to rest under a dry towel.

“Rub” the butter evenly into the dough using a means of “pinching it off” and knead it into the dough. Next, cover the base of the pie with a towel and leave for 50 minutes, during which time the dough will triple in size. Afterwards, the baking needs to be lightly kneaded and left for another 30 minutes.

Then the dough should be kneaded and divided into 15 equal parts weighing from 35 to 40 grams; for this it is best to use scales. Roll out any piece into a ball and roll it into a rectangular layer. Grease any layer with a thin layer of jam and leave a gap for pinching, roll into rolls and tie in a knot.

For crumbs, mix 15 grams of butter, 30 grams of sugar and flour. Grind all components by hand.

The diameter of the pie dish should be 26 cm. Grease the bottom with butter and sprinkle with breadcrumbs, place “Knots” around the perimeter, mix with an egg beaten with water and sprinkle with crumbs. Bake the pie in an oven preheated to 180 degrees for 35 minutes.

Yeast pie with plum jam “Beloved”

  • Premium flour – 525 g
  • Cow's milk – 230 ml.
  • Butter – 35 g
  • Sugar – 2 tbsp.
  • Salt – 0.5 tsp.
  • Instant yeast – 1 tsp.
  • Chicken eggs – 2 pcs.
  • Vegetable oil – 1 tbsp.
  • Plum jam – 250 g

Melt the butter in a water bath. Mix sugar, salt and yeast and pour in warm milk, stir. Later add sifted flour and butter to the milk mixture. Knead the dough so that it does not stick to your hands and throw it under a dry towel in a warm place to rise for 3 hours and after any hour the dough must be kneaded.

Afterwards, divide the dough into two parts and roll out the first piece into a layer 0.5 cm wide. Place it on a previously oiled baking sheet so that sides 1 centimeter high are formed. Apply jam at room temperature to the laid out dough and spread moderately around the entire perimeter.

Roll out the second piece of dough into the same layer and cut into strips 0.3 centimeters wide, decorate the bottom layer with jam with them. Place the pie in a warm space for 15 minutes, and then bake in an oven previously preheated to 220 degrees for 20 minutes.

Yeast pie with cherry jam “Special option”

  • Premium flour – 400 g
  • Chicken eggs – 3 pcs.
  • Butter – 100 g
  • Cow's milk – 200 ml.
  • Instant yeast – 1 tsp.
  • Sugar – 4 tsp.
  • Cherry jam – 400 g

Melt the butter in a water bath and remove from heat. Add sugar, eggs, yeast and mix well. Add slightly warmed milk to the consistency. Then add the sifted flour and knead the dough so that it does not stick to your hands. Cover the dough with a towel and let it rest for an hour.

Divide the dough into two parts, creating one larger piece. Roll it out into a layer 0.5 cm wide and place it on a baking sheet that has been previously greased with oil. Spread jam on top moderately. From the second part of the dough, form any decorations to your taste and brush with beaten egg and water. Bake the pie in an oven preheated to 200 degrees for 35 minutes.

Yeast pie with cranberry jam “For tea”

  • Premium flour – 3.5 tbsp.
  • Butter – 120g
  • Fresh yeast – 30 g
  • Cow's milk - 1 tbsp.
  • Chicken eggs – 2 pcs.
  • Sugar – 3 tbsp.
  • Salt – 0.5 tsp.
  • Sunflower oil – 1 tbsp.
  • Vanilla sugar – 1 tsp.
  • Cranberry jam – 500 g

For the dough, you need to dilute the yeast in milk no higher than 45 degrees, add 3 tablespoons of granulated sugar and a teaspoon of vanilla sugar, salt and 1 cup of sifted flour. Knead to a homogeneous sour cream mixture. Leave under a towel in a warm place for 1.5 hours.

After the dough has grown two or three times, add two eggs and butter melted in a water bath, and then one and a half cups of sifted flour. Leave the dough in a warm place for another hour and a half.

On a cutting board sprinkled with flour, knead the dough well and divide it into two unequal parts. Roll out the larger one into a layer 0.5 cm wide and place it on a baking sheet previously greased with vegetable oil. The base must certainly have sides at least 2 cm high. Next, lay out the jam and distribute it moderately over the entire area of ​​the base.

We also roll out the second part of the dough into a layer of 0.5 cm and cut it into plates, from which we form various curls as you like. Bake the pie in an oven preheated to 220 degrees for 25 minutes.

Yeast pie with apple jam “Prostetsky”

  • Apple jam – 1 tbsp.
  • Chicken egg – 1 pc.
  • Butter – 165 g
  • Sugar – 4 tbsp.
  • Premium flour – 350 g
  • Instant yeast – 1 tsp.
  • Cow's milk - 1 tbsp.

Dissolve yeast in warm milk, add sugar, salt, jam, melted butter 150 g, egg. Mix everything together well and add the sifted flour. The dough mixture should look like pancakes. Leave in a warm place under a dry towel for half an hour to dissolve.

Place the dough in a previously greased form and place in an oven preheated to 200 degrees for 35 minutes.
