This year is very apple-y, in our small garden the branches of the apple trees are simply breaking due to their large number. Naturally, as a cook, I want to embody them all, so I am in a hurry to prepare a lot of dishes with their role. It's Sunday, which means baking day. Now I would like to share with you a spiritual recipe for apple buns made with raw compressed yeast.
In our garden, a snow-white filling grows, as is clear, this is an early variety of apples; they are not huge, but at the same time they are very juicy and tasty. As you have already figured out, I will now make buns from these, although in principle you can replace them with any apples that you have.
For production you will need:
- Flour -650 gr.
- Chicken eggs - 3 pcs. (2 for dough, 1 for greasing buns)
- Margarine -100g.
- Raw compressed yeast -30 gr.
- Milk - 1 glass.
- Salt - 1 teaspoon.
- Sugar-3 tablespoons.
- Apples -3-4 pcs.
- Vegetable oil to grease the baking sheet.
Dissolve yeast in warm milk, add sugar, salt (Although they say that it is better to add salt at the very last moment, this is how the yeast interacts, but to be honest, I didn’t feel much difference) Break a couple of eggs, add soft margarine. And only later sift the flour through a sieve. We knead the dough, at first it seems that the dough is sticky and even liquid, but with the quality of kneading it will harden, your hands will become clean, and the dough will be elastic. Kneading takes approximately 20 minutes. We transfer the dough into a plastic bag and forget about it for about 40 minutes; in principle, you don’t have to use the bag, you can cover it with cling film or even put it in a pan, the main thing is that there are no drafts. During this period of time, the dough will increase significantly in size. During this period of time, prepare the apples and wash them under running water. You can peel them, but I wanted a large filling, so I cut them quite large and sprinkled them with sugar.
Once the dough has risen, you need to knead it, put one side of the dough on the other a couple of times. Later divide it into portions. As you have already seen, I don’t like to go small, a big bun makes my mouth happy. I love it when I take one and eat it with cool milk. Therefore, from the amount of dough I will make about 10 buns, although here you can create many times more. I roll out any piece into a wide strip, where I put the filling in a row. I roll the inside of the bun into a roll and make a couple of slits on top for decoration. Once the buns are formed, turn on the oven; it is important to bake only in a very well-heated oven. Coat all the buns with beaten egg, place them on a baking sheet and let them rest for another 10-15 minutes. It is also very important that the baked goods are fluffy; there is no need to rush here.
Bake for about 15-20 minutes at 180 degrees.

Preparing the dough with yeast
Sift the flour, measure out 2 cups and mix with the yeast. Add milk. Knead the yeast dough. Place it on the table and knead. If it is still very sticky, add the remaining flour little by little. According to the mixture, the dough for buns must be soft; you should not fill it with flour, otherwise the baked goods will be hard.
Place the well-kneaded yeast dough in a bowl, cover with cling film or a clean cotton towel. And place the bun dough in a warm space to rise for about one hour. During this period of time it will increase in volume by 2.5-3 times.
When the dough has risen, you can begin to form the buns. There is no need to knead it during the proofing process. Lightly dust the work surface with flour or, better yet, grease your hands with vegetable oil. Roll out the dough thinly with a rolling pin. Cut the dough into squares approximately 10x10 cm. Place a spoonful of apple inside in the center of each square and secure the reverse edges of the square diagonally. This way you will get an envelope with apples inside. Before baking, brush any envelope with beaten egg or milk; this will give the apple buns the most beautiful appearance. The shape of the buns can be different, at your discretion: envelopes, balls, braids, combs, roses, rolls, buns. And there are also a huge number of forms of buns, it all depends on your imagination.
Place them in a warm place to proof for 15-20 minutes. Bake at 180 C° for 15 minutes, when the yeast buns with apples become appetizingly fried on top, they are ready. But do not keep the baked goods in the oven for a long time; check the readiness with a wooden stick, toothpick or skewer. Otherwise, instead of tasty and fragrant buns, you will get stale crackers.
