For manufacturing we will need the following products:

Boil the rice until done.

Grate the carrots, chop the onion and fry in butter.

Combine rice, minced meat, carrots and onions.

Add the egg, salt and thoroughly stir the minced meat.

Form hedgehogs; they should be 4-5 cm in diameter.

Fry the hedgehogs on both sides in vegetable oil.

For the sauce, carefully mix sour cream, salt, pepper and flour in water.

Pour the sauce over the meatballs. Cover the pan with a lid and simmer over low heat.

After 20 minutes, our hedgehogs in sour cream sauce are ready.

Recipe for “Meat hedgehogs in sour cream sauce”:

Boil the rice until half cooked. To prevent the rice from boiling, do not cover the pan with a lid. Add salt during cooking. And be sure to wash the rice with cool water.

Salt and pepper homemade minced meat (pork + beef), add a mixture of Provençal herbs and an egg. Stir until smooth and knead the minced meat like dough.

Mix rice with prepared minced meat.

Form meat balls from the acquired mass and roll them in flour. Also sprinkle the board with flour in advance so that the “Hedgehogs” do not stick to the surface. I trust this process to the children. I'm starting to make the sauce myself.

Finely chop the greens (parsley, onion, basil, dill), garlic, add lemon juice, olive oil, sour cream. Stir. Add sugar, salt, pepper to taste. The sauce is ready and can be served with the main dishes. But I'm cooking further.

Place the frying pan on the heat, add the sauce and wait for it to boil.

Reduce heat and place meat balls in the pan. Simmer on one side for 5-7 minutes, then turn over to the other side and continue cooking for 5 minutes over low heat.

Surprisingly juicy, with a delicate sour cream taste and the spicy smell of Provençal herbs, hedgehogs in sour cream sauce prepared according to this recipe are suitable not only for a home dinner, but also for entertaining guests. Since these meatballs cook quickly enough and don’t require any special troubles, you still have time to cut the salad or prepare a side dish.

All the ingredients for the dish can be prepared in one frying pan; you don’t need to transfer anything anywhere. It is better to use a frying pan with high sides, so that there is space for sour cream filling.

The most delicious and juicy hedgehogs are obtained from mixed minced meat - beef and pork. If you use minced chicken, then to prevent the hedgehogs from coming out dry, it is better to add slightly twisted lard to the minced meat. We also add rice to this dish, the dish comes out filling and cheap. Children really like these soft meat balls.

  • Minced meat – 400 g;
  • Onions – 1 pc.;
  • Carrots – 1 pc.;
  • Garlic clove – 1 pc.;
  • Long grain rice – 2 tbsp;
  • Chicken egg – 1 pc.;
  • Salt – 0.3 tsp;
  • Dark pepper (ground) - a pinch;
  • Vegetable oil – 2 tbsp;
  • Wheat flour – 1.5 tbsp.
  • For sour cream sauce:
  • Sour cream – 0.5 cups;
  • Water – 0.7 cups;
  • Provençal herbs – 0.3 tsp;
  • Salt – 0.3 tsp.

Manufacturing

Peel one small onion and medium-sized carrots and rinse under water. Cut the onion into small cubes and grate the carrots on a medium grater. Finely chop the peeled garlic clove with a knife.

Heat a frying pan with a small amount of vegetable oil. First fry the garlic for about 20-30 seconds, then add the onion and carrots and fry for about 3 minutes. Remove the onions and carrots from the frying pan, being careful to leave all the oil in the pan, and cool.

Rinse the rice under running water until the water is no longer cloudy. Pour boiling water over the rice and leave for 5-7 minutes so that the rice steams slightly. Then drain the water from the rice or place the rice in a sieve.

In one bowl, mix minced meat, cooled roast and steamed rice.

Add one chicken egg, salt and a little dark ground pepper to the minced meat. Mix the minced meat thoroughly by hand.

We form small balls from the minced meat and roll each one in flour.

Reheat the frying pan in which the onions and carrots were fried and place the cooked balls on it. To prevent the hedgehogs from burning, you can add a little vegetable oil to the pan.

When one side is covered with a crust, turn the hedgehogs over to the other side and fry for another minute.

Now let's prepare the sour cream sauce. For it, it is better to use sour cream with a fat content of 20 or 25 percent. Mix sour cream with warm boiled water and stir everything until the sour cream dissolves. Add a little salt and fragrant spices to the sauce. Provençal herbs can be replaced with other favorite spices.

Pour sour cream sauce over fried hedgehogs. There must be enough sauce, and it must completely cover the hedgehogs, since during cooking the rice will absorb almost all the liquid.

Cover the pan with a lid and simmer the hedgehogs for about 20-25 minutes over low heat. If you want a dish with gravy, then it must be served immediately after preparation, since if you leave the hedgehogs for some time, the rice will absorb the remaining sauce.

Hedgehogs in sour cream sauce can be served as a separate dish or with a side dish of pasta or potatoes. Bon appetit!

Note to the owner:

  • To give the dish an even softer and creamier taste, it is better to fry onions, carrots and hedgehogs in butter, and sprinkle the dish with grated cheese before serving.

Ingredients:

  • chicken fillet – 300 g;
  • round rice – 70 g;

  • sour cream – 150 gr;
  • vegetable oil - 2-3 tables. l.;
  • salt, pepper - to taste.

How to cook hedgehogs from minced chicken with rice

For minced meat we need meat, onions and garlic. Peel the onions and garlic. Rinse the chicken fillet and dry the water with cardboard towels. For hedgehogs, you can use any part of the chicken, but fillet is the most convenient because it has no bones or skin.

Therefore, making savory cutlets will be significantly simplified. We will grind the meat, onions and garlic in a meat grinder, so immediately cut the products into medium pieces to make it easier to twist.

Grind the meat with onions and garlic in a meat grinder to create minced meat. Cook the rice until half cooked, drain the water and cool. Add rice to minced meat, lightly salt and pepper. You can use any spices to suit your taste, but salt and pepper are familiar seasonings and are often used.

To prevent the hedgehogs from falling apart, add a chicken egg to the minced meat and mix until smooth.

Form round hedgehogs with slightly moistened hands and fry until golden brown in a frying pan with the addition of vegetable oil. It is necessary to fry over high heat and very quickly, almost half a minute on each side.

Place the rosy hedgehogs in a baking dish and pour sour cream over them. If the sour cream is very thick, you can add a little water. The best choice for this recipe is not very fatty 15% sour cream.

Place the form with the hedgehogs in the oven to bake for 20-25 minutes. Set the temperature to 180-190°. The hedgehogs will be soaked in sour cream sauce and completely baked. Remove the finished dish from the oven and let it cool slightly.

Serve tasty and fragrant hedgehogs to the table. The most delicious side dish for them would be mashed potatoes. But you can also cook any pasta. Bon appetit!
