And the sauce can be varied by adding vegetables, mushrooms and various seasonings. In addition, meat can be prepared using various methods: stewed in a frying pan or in a slow cooker, baked in a mold, in pots. Any side dish goes perfectly with the dish.
Beef in sour cream - recipe with mushrooms
The spicy smell of mushrooms perfectly complements the taste of beef, and the combination with sour cream gives the dish a delicate creamy taste.
- Beef (sliced) – 400 gr.
- Mushrooms – 250 gr.
- Onion – 2 pcs. (medium heads).
- Sour cream – 200 gr.
- Salt and ground pepper - to taste.
- Vegetable oil – 2-3 huge spoons.
- Wash a piece of meat, dry it slightly, cut off the films, if available. Cut into strips approximately 1cm wide, random length.
- Pour a little oil into a perfectly heated frying pan and place the meat pieces. Lightly fry the slices until they form a crust.
- Cut one onion into half rings and add to the meat. Continue to fry until the onions are lightly golden. Salt the dish, add your favorite seasonings or just ground pepper.
- When the onion is ready, add a little water to it. Simmer the meat and onions over low heat for 40 minutes.
- While the contents of the frying pan are stewing, prepare the sour cream and mushroom sauce. Wash, dry, peel the mushrooms, cut them into thin slices. Place on a heated frying pan. Simmer over high heat until the liquid evaporates.

- Beef – 800 gr.
- Sour cream – 250 gr.
- Onion.
- Garlic – 3-4 cloves.

- Wash the piece of meat, cut it into not very thick strips.
- Peel the onion and cut into quarters of rings. Peel the garlic cloves, pass through a press, crushing them into pulp.

- Slicing – 300 gr.
- Onion – 1 pc.
- Mushrooms (champignons) – 250 gr.
- Mustard – 1 small spoon.
- Sour cream – 4 huge spoons.
- Salt, pepper - a pinch.
- Vegetable oil – 2 tablespoons.
- Peel the mushrooms and onions. Cut the champignons into slices and the onion into half rings.
- Place the mushrooms in a perfectly heated frying pan and fry them until the juice has evaporated.
- When the champignons become dry, pour vegetable oil into them and add onions. Fry the vegetables until a beautiful golden color (if you have a 2nd frying pan, then the first 3 steps can be done in parallel with frying the meat, this will save time). Transfer the prepared mushrooms to a bowl.
- Wash the beef, cut into slices approximately 1 cm wide. Place in a frying pan in very hot oil, fry over high heat until golden brown. Then pour in about 1/3 cup of water or broth. Simmer the meat for 40 minutes, reducing the heat to low.
- After this time, combine the meat with mushrooms, sour cream and mustard. Salt, season with pepper, add seasonings. Simmer the dish for 15-20 minutes until the sauce thickens.
Beef Stroganoff in sour cream - recipe with potatoes
Beef baked with potatoes and cheese will be a beautiful dinner for you and your family.
- Slicing – 600 gr.
- Potatoes - kilogram.
- Onions – 2 heads.
- Sour cream - a glass.
- Greens - a small bunch.
- Cheese – 100 gr.
- Salt, pepper - to taste
- Cut the washed and dried slices into slices approximately 1 cm wide. Beat back slightly. Cut the broken pieces into not very long cubes.
- Peel the potatoes, wash and dry. Cut the tubers into circles or semicircles 3-5 mm wide.
- Chop the onion into half rings and finely chop the greens.
- In a bowl, mix the meat with half the onion, herbs and sour cream. Salt and add ground pepper.
- In another bowl, mix potato mugs with the second half of sour cream, onion and herbs. Also add pepper and salt.

The only drawback of beef is that this meat takes quite a long time to cook, but even this process can be speeded up if you first marinate the beef in any favorite marinade.
Beef in sour cream - general principles of production
Naturally, it is best to use beef loin (pulp) for making second courses; pieces with bones can be used for making soups.
It is best to get young beef or veal, but if you get the meat of an old animal, it can be used to make jellied meat or ground into minced meat.
If the meat is of high quality, then the dish will turn out truly tasty, satisfying and fragrant.
Before production, the meat is painstakingly washed, dried and cut according to the recipe - these can be huge portions or small pieces.
In some versions, the meat will need to be beaten, in others it will be quite simple to marinate.
You can use any marinade for meat: sour cream, mustard, based on oil and soy sauce. Just don’t use lemon in the marinade, its acid can make the beef harsh.

• 220 ml meat broth;
• 80 grams of sour cream;

Manufacturing method:
1. Thoroughly wash the beef and cut into longitudinal strips. Usually, for beef stroganoff, the meat is cut 1.5 cm wide and 7-8 cm long.
2. Place the pieces of meat in a deep bowl, add salt and pepper, cover the bowl with cling film, and put the meat in the refrigerator for three to four hours.
3. In an enamel saucepan, melt half the indicated amount of butter, add flour, mix well.
4. Pour in the broth, after boiling, add salt, tomato paste, mustard, and ground pepper. After boiling again, pour in sour cream, bring to a boil, then simmer over low heat until thickened.
5. Heat the remaining butter in a frying pan, add the pieces of beef, stirring, and quickly fry on all sides over high heat.

• 40 g butter;

• three glasses of water;

Recipe for “Beef in Garlic Sour Cream Sauce”:
Preparing the meat. We remove all films, veins, etc.
