Freshly brewed coffee is the favorite drink of a huge number of people. They especially love to use it in the morning, because it fills you with vivacity and energy. It also captivates with its tart taste. Coffee lovers have already gone so far as to use it in baked goods.
Namely, with its addition you get good pies. Moreover, they are completely ordinary in production and in the quantity of required ingredients. For example, we will give several recipes for coffee cakes.

- Chicken eggs - 3 pieces.
- Sugar - 220 gr.
- Butter - 80 gr.
- Baking powder - 14 g.
- Coffee - 140 gr.
- Salt - 1 pinch.
- Wheat flour - 200 gr.
First you need to sift the flour into a bowl, adding baking powder and one pinch of salt. Then you need to brew coffee and dissolve butter in it. In order to create this, we need to heat it to a temperature of about 80-90 degrees. Beat the eggs with a mixer until fluffy and add sugar little by little. The approximate whipping time is about 10 minutes. Next, add flour and carefully mix it all with a spatula. Add boiled and hot coffee with butter to the beaten eggs, then mix.
Pour the dough into a mold with a diameter of 22 centimeters and bake the coffee cake in the oven at 170 degrees for about half an hour. In order to check the readiness of our pie, we use a wood stick. After the pie is ready, we take it out and set it to cool, after which we sprinkle sweet powder and cocoa on top.
Kefir coffee cake
- Drink - 100 ml.
- Instant coffee - 3 teaspoons.
- Egg - 2 pieces.
- Sugar - 200 gr.
- Butter - 100 gr.
- Wheat flour - 150 gr.
- Baking powder - 15 gr.
- Salt - one pinch.
- For the cream you can use (optional):
- Sour cream - 2 tablespoons.
- Sugar - 2 tablespoons.
- Chicory - 2 teaspoons.
The butter needs to be taken out of the refrigerator so that it becomes as soft as possible. If you are not satisfied with this option, then you can warm it up slightly in the microwave, but do not forget to cut it into pieces. Keep the butter in the microwave for about 20 seconds, no more, and set the power to the lowest setting.
The bottom of the mold needs to be covered with a circle of parchment, then we grease the bottom with vegetable oil without aroma and turn on the oven so that it warms up. The required oven temperature is 180 degrees.
Pour the coffee into the drink and mix thoroughly. After this process, set the drink aside and begin beating the eggs with sugar. In order to beat the eggs very well, use a mixer and beat for about two minutes until fluffy. Pour the drink into the whipped mass and mix thoroughly. Next, add the oil and beat a little more with a mixer until smooth. Pour in flour, which must be mixed with baking powder and salt. Mix all this.
After everything is ready, all we have to do is put the dough into the mold and smooth it out. The pie is placed in the oven and baked at 180 degrees for about half an hour.
Coffee cake with cinnamon cream sauce
- Chicken eggs - 2 pieces.
- Sugar - 80 gr.
- Ground cinnamon - 0.5 teaspoon.
- Butter - 50 gr.
- Mayonnaise - 1 tablespoon.
- Wheat flour - 150 gr.
- Baking powder - 1 teaspoon.
- Ground coffee - 3 tablespoons.
- Salt - 1 pinch.
- Wheat flour - 1 teaspoon.
- Corn starch - 1 teaspoon.
- Sugar - 3 teaspoons.
- Ground cinnamon - 1 teaspoon.
- Water - 100 ml.
- Sour cream - 2 tablespoons.
Mix the egg, sugar, salt and cinnamon in a deep bowl. Then you need to add melted butter and mayonnaise to this bowl. In order for the butter to be the way we need it, in other words, soft, it needs to be taken out of the refrigerator in advance. Add wheat flour with baking powder and mix until the mass is homogeneous. Brew coffee in 0.25 cup of boiling water, give it time to cool and pour the cooled coffee into the dough, mix. Pour the dough into a mold that needs to be greased; the diameter of the mold should be 18 centimeters. Put it in the oven. You can check the readiness of the pie using a dry match.
While the pie is being prepared, you can start making the sauce for it. Mix all the necessary ingredients, not including sour cream, in a saucepan and set to heat. The mass should be slightly thick. The sauce needs to be cooled, and then you can add sour cream to it, then mix it well.
When the pie is ready, all we have to do is pour the sauce over it and let it flow freely over the pie. This dish will need to be refrigerated for half an hour to give the sauce time to harden.
Chocolate-coffee cake
- Wheat flour - 200 gr.
- Sugar - 200 gr.
- Brewed coffee - 200 ml.
- Vegetable oil - 100 ml.
- Cocoa - 4 tablespoons.
- Baking powder - 1.5 teaspoons.
- Lemon juice (you can use vinegar in the same proportion) - 1 teaspoon.
- Salt - 0.5 teaspoon.
- Vanilla extract - 1 teaspoon.
First you need to mix the flour with sugar, baking powder and salt well. Salt is needed to really bring out the flavor. Next, add cocoa powder and mix thoroughly. The next step is to add vanilla extract along with lemon juice to the dry ingredients, you can also use one spoon of vinegar instead of lemon juice. First pour in the coffee, then the vegetable oil. Now we need to mix the dough very carefully so that not a single lump forms or remains.
Next, pour the dough into the mold and place in the oven at 175 degrees for half an hour. It is imperative to keep in mind that the cake should be a little wet on the inside, and to achieve this effect you should not keep it in the oven for a very long time. When you pierce the inside of the cake, you should see wet crumbs remaining on the toothpick. After the cake is ready, do not rush to remove it from the mold, let it cool in it for about 10 minutes.
Chocolate coffee pie with cherries
- Wheat flour - 100 gr.
- Sugar - 90 gr.
- Freshly brewed coffee - 100 ml.
- Chicken egg - 1 piece.
- Butter - 120 gr.
- Cherry - 200 gr.
- Baking powder - 15 g.
- Bitter chocolate - 120 gr.
- Cocoa powder - 15 gr.
- Salt - one pinch.
First we need to pour freshly brewed coffee into the pan and then put butter and sugar into it. Melt it all over moderate heat. Before removing the pan from the heat, do not forget to add grated or finely broken chocolate. Stir everything until dissolved. Next, add cocoa powder, flour, baking powder, and a pinch of salt into the chocolate mass. All ingredients must be mixed until smooth. Then add the egg and mix thoroughly again.
Prepare the baking dish as follows. We line the bottom of the mold with paper, and only later pour half of the purchased dough into it. Place cherries on top and then fill with the second half of the dough. The pie should be baked at 190 degrees for about 30-40 minutes. You can check the readiness of the pie using a wood stick.
Kefir coffee cake
Kefir coffee cake with sour cream turns out very tasty. It is quite simple to make. Try making the pie and you won't regret it.

20 minutes before making the pie, mix the drink with coffee so that the coffee is completely dissolved.
Whisk sugar, eggs and melted butter.
Add soda to your coffee drink.
Add the drink and flour to the beaten eggs, beat everything thoroughly.
Line the pan with parchment paper and grease the edges with vegetable oil.
Bake the kefir pie in an oven preheated to 180 degrees for 40 minutes.
For the cream, mix sour cream, sweet powder and coffee. Let it sit in the refrigerator for 15-20 minutes until the coffee dissolves.
Divide the shortbread into two parts, grease them with sour cream, and place them on top of each other.
Decorate the top of the pie with grated chocolate.

A soft coffee cake made with kefir is a good way to improve your day if you haven’t had a good day in the morning. It's funny to say, but this fragrant bliss is made from just 6 main ingredients. They're pretty much all over your fridge! Eggs, a drink, a piece of butter, a little flour and sugar, and a few spoons of instant coffee - this is a simple set.

Some people drink coffee to cheer themselves up, while others simply enjoy it, slowly, sip by sip, sipping the hot, fragrant drink. No matter what group of coffee lovers you belong to or don't like it at all, you simply have to experience this excellent coffee cake. It is prepared with kefir, with the addition of a small amount of butter, and it comes out very tasty, I can tell you. Naturally, this is not an ordinary pie, in the sense that there is no exact boundary between the dough and the inside. And it’s hard to call it an ordinary cupcake. The cake comes out smelling, moderately sweet, finely porous and not dry. Just the thing to cheer you up in the morning until the evening!
How to make excellent coffee cake with kefir - recipe with photos and step-by-step description:
It’s better to remember that you are going to make a pie in advance - you need to take the drink, eggs, and butter out of the refrigerator. Let them naturally warm up to room temperature. This will take about 1-1.5 hours.
Pour the drink into a glass, pour instant coffee into it. Any drink will do - fatty or low-fat, fresh or a couple of days out of date. Instead, with the same success, you can use other fermented milk products with approximately the same density and density - natural yogurt, buttermilk, fermented baked milk, etc. As for coffee, there is no need to save on it. The better the coffee, the tastier and more aromatic the cake will be, this is understandable. I usually put instant coffee in the dough with the addition of natural coffee - it turns out incomparably.
Stir the coffee into the kefir and let it disperse as much as possible into the water. If there are undissolved particles left, it’s okay, the dough will be mixed a couple more times and will become virtually homogeneous. Set the coffee drink aside for now.
To beat eggs with sugar, you will need a mixer or food processor, in the latter case, a blender with a whisk attachment. You won’t be able to beat the mixture perfectly by hand. Remove the eggs from the shell and place them in a deep container. Pour all the sweet sand there. You can immediately add vanillin. Crystalline vanillin is simply replaced with vanilla sugar or, much better, natural vanilla extract.
Beat the contents of the bowl with a mixer until the sugar dissolves and the eggs turn into a fluffy, dense, light foam. The mass will turn out quite watery, but airy, with an abundance of small bubbles.
Add oil. You see, it is completely soft, but not liquid. To speed up the softening process, you can cut the stick of butter into the smallest pieces. You can also soften it in the microwave. Turn on the device at minimum power (“ Microwave radiation, ultra-high frequency radiation - electromagnetic radiation, including the decimeter, centimeter and millimeter range of radio waves) ” mode) for 30 seconds, after a short break, repeat the function. This way you can control the thickness of the oil and not overheat it to a watery state.
Then pour in the coffee-kefir mixture.
Beat with a mixer at low speed. The mass will turn out somewhat heterogeneous due to small grains of oil. You can continue to beat until the fats are completely combined with the liquid, but this is not necessary - after adding flour, the dough will become completely smooth.
Sift the flour into a separate bowl, add baking powder (about 3/4 of a regular 10-gram bag will be useful). Stir.
Add flour and baking powder to watery ingredients.
Mix the dough thoroughly. If the dry mixture does not disperse well, the cake will turn out with small lumps of flour or large uneven pores (if the baking powder is not mixed well). The finished dough will be smooth, shiny, not thick, and not runny, with a pleasant coffee color and smell.
Choose the shape in which you will bake the cake. There are no special requirements for its configuration - I baked both in a muffin tin with a hole in the center and in an ordinary round springform pan. This time I had a silicone rectangular muffin and bread pan. If you prefer to bake in an alloy, apply a French shirt before adding the dough. To do this, grease the inside of the container with a thin layer of cool butter and sprinkle with flour. Shake off excess flour and pour out of the pan. You can also line the bottom and walls with baking paper - whatever you like.
Place the pie in the preheated oven. Bake according to the personality of your own oven - there is no single formula. In a gas oven I baked at 180 degrees (if the Chinese temperature indicator didn’t prick, of course), in an electric oven I baked in the “Top-Bottom” mode at 170 degrees. The production time is also a personal thing. Look into the oven 30 minutes after start. If the pie is frankly raw, check the readiness a second time no earlier than after 10 minutes. The usual test of readiness is to pierce it with a toothpick. There is no raw dough - the pie is ready. Cool it slightly without removing it from the mold. Later, remove the baked goods and place them on a wire rack.
Now you can cut the cake and indulge in the delicious coffee pleasure. Just like ordinary ingredients, the baked goods come out delicious and fragrant. Soft, finely porous, slightly wet texture - this handsome guy came out, virtually without any difficulty on our part. Take a piece!
Decoration is up to you. You can simply sprinkle the cake with sweet powder mixed with coffee. You can push yourself and prepare coffee or chocolate glaze. I simply sprinkled a handful of baked granola on top.

Recipe 1

- glass of water;
- 3 tbsp. l. coffee beans or three tsp. ground natural coffee (you can use freeze-dried instant coffee, but then the smell and taste will not be as colorful);
- 270 g flour;
- 150 grams of prunes;
- 150-170 sugar;
- two tablespoons of natural honey;
- tsp baking powder (baking powder) or baking soda.
- First you need to brew strong coffee. To do this, pour ground coffee into a Turk, pour in water, put the container on the fire and keep it on the stove until foam forms, after which remove.
- Immediately add sugar and honey to the coffee, stir until they are completely dissolved.
- Take care of the prunes: you need to thoroughly wash them, and then pour hot water for 5 minutes if they are too hard. Then cut the dried fruits into pieces and remove any seeds.
- Add prunes to a mixture of coffee, honey and sugar.
- Next, add flour and soda into the liquid, stirring the mixture evenly and intensively.
- Lightly beat the dough with a blender, but do not overdo it, otherwise the cake will turn out very dense.

You can create a regular and frisky coffee pie using kefir.
The list of ingredients is as follows:
- half a glass of natural kefir (any fat content possible);
- 2 testicles;
- three tsp. coffee (you can use instant coffee);
- half a pack (about 100 g) of butter;
- a glass of sugar;
- a glass of wheat flour;
- ½ tsp. baking powder or baking soda.
- It is better to take the drink out of the refrigerator in advance so that it is at room temperature before production begins. You need to dissolve the coffee in it so that not a single lump remains. To do this, you can use a blender or mixer.
- Next, beat the eggs together with sweet sand so that you get a practically snow-white mass.
- Now combine the kefir-coffee mixture with the egg-sugar mixture, mixing everything with a mixer (select the minimum speed).
- Slowly add flour to the mixture, kneading the dough. Also add butter, but it must be soft, so it is also better to take it out of the refrigerator in advance. At this step, baking powder or soda, quenched with boiling water or lemon juice, is added to the dough. Stir everything again with a mixer to achieve a sour cream mixture.
- Grease the mold with butter, pour the dough into it and place in an oven preheated to 180 degrees for approximately 45 minutes. You can check readiness with a toothpick.
- The usual coffee and kefir pie is ready!
Recipe 3
Instead of a pie, you can create a unique coffee cake. Here's what you need for this:
- approximately one and a half cups of wheat flour;
- a glass of sugar;
- 3 tsp. instant coffee;
- tsp soda;
- 2 testicles;
- 130-150 g butter (can be replaced with margarine);
- a glass of milk;
- large spoon of 9% vinegar
- 100 ml water;
- tsp coffee;
- two tbsp. l. sweet sand.
To make cream:
- a stick of butter;
- a can of condensed milk;
- two or three huge spoons of coffee.
- First you need to prepare the dough. In one deep container, combine the crumbly ingredients, not counting sugar, and specifically soda with coffee and flour. In another container, you need to beat the softened butter with sugar, and then add the eggs one at a time, continuing the whipping process. In a third container, mix milk with vinegar until the mixture curdles (this is what you need specifically). Next, combine all three ingredients and beat. The dough is ready; it must be baked in a springform pan at 180 degrees for about forty minutes.
- While the biscuit is baking, start soaking. Dissolve sweet sand with coffee in water, bring this drink to a boil or just warm it up thoroughly.
- Next, prepare the cream by mixing and whipping soft butter, coffee and condensed milk using a blender or mixer.
- When the biscuit is ready (the match remains dry after piercing the dough with it), take it out and cool, and then cut it into shortcakes.
- Pour generously of slightly cooled warm soak over any shortbread, and then coat the first one with cream, place the second one on it, and also coat it with cream. If you have a third shortbread, put that in as well. Now coat the cake on all sides in a thick layer.
- Place the cake in the refrigerator for at least an hour and serve later.
Recipe four
Try making the pie in a slow cooker, if you have one. List of required ingredients:
- about 250 g flour;
- two testicles;
- a glass of sour cream (the thicker and fattier, the better);
- three tablespoons of water;
- three tbsp. l. coffee (instant, preferably freeze-dried);
- six to seven tbsp. l. sweet sand;
- tsp soda;
- slightly oil.
For sour cream glaze:
- three huge spoons of sour cream;
- 5 medium spoons of sweet powder.
- First, beat the sugar together with the eggs. It is necessary to beat for at least 2 or three minutes so that after the end of the process the airy foam comes out.
- Heat the water and completely dissolve the coffee in it.
- Next, add sour cream, coffee and soda to the egg mixture, stir gently.
- Add flour evenly, stirring everything carefully. Beat the mixture at low speed with a mixer or blender.
- Grease the bowl with oil, pour the dough into it and cook the sponge cake in baking mode for at least 50-60 minutes.
- Prepare sour cream glaze by mixing sour cream with sweet powder.
- Spread the top of the finished cake with glaze and serve.
Recipe 5th
A delicious pie made from coffee and bananas.
- two or three testicles;
- a little more than half a glass of sugar;
- half a glass of milk;
- 230-240 g flour;
- a packet of vanillin;
- a couple of tablespoons of instant coffee;
- 70-90 g butter;
- half tsp soda;
- large ripe banana.
- Beat the eggs with sugar to form foam. Add soft butter to the egg mixture, pour milk there and beat everything. Now add flour in parts along with coffee and vanilla. Also add baking soda dissolved in vinegar or lemon juice.
- Peel and cut the banana into small rings or cubes (you can puree it using a blender) and add to the dough.
- Place the dough in a greased pan and place it in an oven preheated to 170 degrees for forty to fifty minutes.
- Banana coffee cake is ready!
