Kefir shortbread

Kefir shortbread

For the recipe you will need:

  • flour – 520g
  • testicle – 2 pcs.
  • butter (or ghee) – 90g
  • sugar – 1/2 cup
  • soda – 1/2 tsp.
  • drink – 250g
  • salt - a pinch.

Making recipe:

Remove the butter from the refrigerator in advance. The butter for making shortcakes must be soft. Combine butter and sugar in a bowl, whisk and beat in eggs.

Pour in the drink. Add baking soda. Stir the ingredients until smooth. There is no need to quench soda in vinegar, kefir will be enough.

Add sifted flour in portions and knead the dough.

Gather the resulting soft dough into a ball, put it in a plastic bag and let it “rest” for at least half an hour.

For ease of rolling, divide the dough in half. Roll out the first half into a layer approximately 6-7 mm wide.

Cut out the cakes with a wavy edge cutter. If there is no mold, use a mug or glass of suitable diameter. Do the same with the remaining dough. Combine the scraps, roll them out again and cut out the cakes.

Transfer the cakes to a baking sheet.

Chop the raw peanuts a little with a knife and sprinkle them on the flatbreads, pressing them lightly into the dough. Instead of peanuts, you can sprinkle the cakes with sugar or grease them with yolk diluted with 1 tbsp. spoon milk and water.

Bake the cakes for no more than 20 minutes in an oven preheated to 180C until golden brown. The kefir shortbreads came out crumbly, fragrant and very tasty.

Kefir shortbread instead of bread

My husband is categorically against store-bought bread with yeast and it is not clear with what composition. In extreme times, store-bought bread is simply terrible and you don’t feel like eating it at all. This is what always pesters me: bake your own cakes, they are 100 times better than bread. So I bake.

And now I’ll tell you a very simple recipe on how to bake cakes instead of bread using kefir with eggs and soda. I am attaching the usual recipe with photos step by step, everything is as simple and straightforward as possible. The taste is good, no harm. You can also easily bake homemade bread with your own hands in the oven - just look at the step-by-step photo recipe, everything is simple and accessible.

Ingredients:

  • 200 g of kefir (it is better to take not the freshest);
  • 0.5 tsp soda;
  • 1 testicle;
  • salt 1 tsp;
  • as much flour as he takes (I never measure);
  • little oil for frying and 1 spoon into the dough.

We buy a drink - I usually ask, give me an older one, not the freshest one, it’s better suited for baking. It doesn’t matter what fat content, I took 1%.

Pour the drink into a bowl, quench the soda in it, if it is perfectly sour, if not, quench the soda with vinegar. Add salt, add oil.

Add sifted flour little by little and stir. When the dough stops sticking to your hands, but is soft and elastic, let it rest for a while.

Then divide the dough into equal two parts. Cut into pieces.

Either roll it out with a rolling pin, or simply flatten it into a circle with your hands. Pierce a little with a fork.

The frying pan should already be warmed up by this time. Pour almost a spoonful of butter into it, and put the cakes to bake.

We close the lid, reduce the heat, and they are slowly baked there (not fried in oil, but specifically baked).

When you turn it over, you can add a little more butter so that the second side is perfect.

And so on until you overcook everything. Place evenly on a plate.

When I tried the first cake, it seemed a little bland to me. Then I crushed a clove of garlic, added a spoonful of olive oil and salt to it, mixed it, and began to grease each flatbread with a brush. Immediately a light smell of garlic began to move through the kitchen (I love it!), the taste became more exciting, you can experience it too.

But such flatbreads can simply be spread with jam for tea and sour cream; in general, they are not bad in any form.

Cooked by Olga, bon appetit!
