One beautiful morning I wanted shortcakes with cold milk, and I decided to look for a recipe and came across this one, the shortcakes turn out soft and tasty.

Ingredients for “Milk shortbread according to GOST”:

  • Butter – 95 g

Recipe for “Milk shortcakes according to GOST”:

Beat butter at room temperature with sugar until smooth. It's great to scramble an egg. Divide into 2 equal parts, set aside one part, it is needed for greasing the shortcakes.

Add milk and half an egg to the butter. Beat into cream. Add baking powder, stir.

Add flour and knead into a smooth, non-sticky dough. Dust the table with flour. Roll out the layer 6-7 mm wide. Cut the cakes with a diameter of 9.5 cm (I have them with a diameter of 8 cm).

Transfer to a baking sheet lined with parchment. Lubricate with egg.

Gather the remaining dough into a ball, knead it, and roll it out again.
do this until you have used up all the dough. Bake in an oven preheated to 180C. Until golden color.

Serve with cool milk. Bon appetit!

Those who were born and raised in the USSR (Union of Soviet Socialist Republics, also the Soviet Union - a state that existed from 1922 to 1991 in Europe and Asia) , remember with pleasure school canteens, where they could treat themselves to tender and savory milk cake. Almost everyone tries to reproduce baking at home, but they don’t know the recipe. During the times of complete Russian shortage, people lived economically, so baked goods were often made with margarine.

The cakes came out deliciously tender and sandy. At the moment, the dough is kneaded with sour cream, kefir, and milk. That beloved cake from youth, which the adult part of the population misses, was baked according to GOST. For modern housewives, recipes for famous baked goods are still vital today. The dessert is prepared from the most ordinary goods, very quickly. If you decide to bake, invite the kids to have a fun and useful time, and at the same time remember your own childhood.

Milk cakes - the usual recipe according to GOST

Bake the cakes according to the recipe developed in accordance with GOST of Russian times, and an island of youth with that unforgettable taste will appear on your table. Help yourself, and remember the happy, now distant moments, when everyone was healthy and happy.

  • Milk – 100 ml.
  • Sweet sand – 200 gr.
  • Flour – 420 gr.
  • Butter – 100 gr.
  • Testicle.
  • Vanilla sugar - a small spoon.
  • Baking powder - ½ small spoon (or baking soda - 1/3 spoon).
  • Yolk of 1 egg + teaspoon of water - for lubrication.

Sift the flour, mixing it with baking powder at the same time.

Pour milk into the saucepan, add sweet sand and vanilla sugar.

Place on the stove. Bring the milk syrup to a boil over moderate heat. Once the sweet crystals have dissolved, the syrup is ready. Don’t go too far from the stove, make sure the contents don’t escape. Remove the saucepan from the burner and wait for the syrup to cool.

Remove the butter in advance so that it becomes soft. Beat with a mixer for several minutes, then add the egg. Use the mixer again, mixing the mixture until smooth.

Pour in milk syrup, stir again.

Add flour and knead a homogeneous dough at low speed. Do not knead for a long time, everything is done quite quickly.

The dough will be soft and sticky.

Make a bun and wrap it in cling film. Leave the mixture to “ripen” for about an hour.

Dust the countertop with flour. Lay out the dough ball. Let it warm up slightly if you put the bun in the refrigerator. Roll out into a thick cake 6-7 cm high.

Cut out the shortbread blanks using a notch or any shape with a diameter of 9-10 cm.

Place the cakes on a baking sheet, lined with baking paper. Collect the remaining dough, roll it out again and cut into new pieces.

Whisk the yolk with water and brush the surface of the shortcakes. Sprinkle with sugar if desired.

Place in the oven for 12 minutes. Temperature regime – 180 o C.

Homemade milk cakes from youth

Almost everyone, unaware of GOST, baked cakes in their own way at home. And later they enjoyed drinking it with milk or tea.

  • Milk – 75 ml.
  • Sweet sand – 200 gr.
  • Flour – 400 gr.
  • Butter – 95 gr.
  • Testicle.
  • Vanilla sugar - a small spoon.
  • Baking soda – 1/3 of a small spoon. (you can add a pinch of baking powder - 4 grams).
  1. Remove the butter from the refrigerator in advance. When it reaches room temperature, place it in a bowl and cut into pieces. Add sweet sand and vanillin. Beat with a mixer until smooth.
  2. In a separate cup, scramble the egg with a fork. Pour half into the whipped butter, use the rest later.
  3. Beat the butter mixture for a few more minutes. Then pour in the milk and continue working with the mixer.
  4. Combine flour and soda in a bowl, sift. Add to the milk-butter mixture. Knead soft dough.
  5. Gather into a ball and refrigerate for an hour.
  6. Roll out the dough ball into a layer 1 cm wide. Cut the cake pieces into 10 mm. diameter
  7. Place parchment paper on a baking sheet and arrange the pieces. Bake the milk cakes at 180°C, turning on the timer for 12 minutes.

How to bake milk cakes with sour cream

Sour cream shortbreads have an indescribably smooth dough, and a pleasantly crunchy crust on top. An ideal pairing for midday cocoa, tea, or morning coffee.

  • Milk – 100 ml.
  • Flour – 350 gr.
  • Sour cream – 50 gr.
  • Sugar – 100 gr.
  • Butter – 100 gr.
  • Egg yolks – 2 pcs.
  • Baking powder – 2 teaspoons.
  • Salt – a pinch.
  1. Pour milk into a saucepan and heat until almost boiling. Add granulated sugar and stir. Cook over low heat, stirring to help the sweet crystals dissolve more quickly.
  2. Remove from the burner and add the butter cut into pieces. Stir until the pieces melt. Then set aside and wait until the milk mixture has cooled.
  3. Add egg yolks (use whites in other dishes). Add sour cream. Stir well.
  4. In a separate bowl, combine flour with salt and baking powder. Pour into the milk mixture in small portions. Knead the dough.
  5. Wrap the assembled batch in cling film. Keep it on the table for a quarter of an hour, then transfer it to the refrigerator shelf.
  6. After an hour, take out the dough and roll it out into a flat cake 1 centimeter wide. Cut the shortbread pieces with a diameter of 9-10 cm.
  7. Place baking paper on a baking sheet and lay out the semi-finished cakes.
  8. Bake for no more than 15 minutes at 180 o C. Remove, cover with a towel, and let cool.

Laskogo homemade shortbread cakes with margarine

Margarine dough is not the worst option, as almost everyone thinks. The shortcakes will turn out crumbly, sandy and very tender. They will not go stale for a long time. If you want to remember your childhood, serve them with cool milk. Remember how delicious it was?

  • Flour – 450 gr. +25 gr. for baking.
  • Testicle.
  • Milk – 75 ml.
  • Margarine (bakery) – 100 gr.
  • Baking soda – ½ teaspoon.
  • Vanillin – a pinch.
  • Sugar - a glass.
  1. Leave the margarine on the table until it becomes soft.
  2. Mix milk and sugar in a saucepan. Let it boil. Stir until the sugar crystals dissolve. Then cool the sweet milk.
  3. Sift the flour, add soda to it.
  4. Combine the cooked products alternately in one bowl. Make a batch.
  5. Roll out the finished dough with a rolling pin into a wide layer about 1 centimeter wide. Don’t make it thinner, otherwise the cookies will turn out differently.
  6. Bake in the oven preheated to 180-200 o C. Cooking time 12-15 minutes.

Kefir shortbread recipe

Shortcakes are a good reason to take a break and drink some tea. And in the summer, on a hot day - cool milk. Or call your friends and keep a little secret.

  • Drink – 250 ml.
  • Sugar – 230 gr.
  • Flour – 600 gr.
  • Milk – 2 huge spoons.
  • Butter, butter – 50 gr.
  • A couple of eggs.
  • Salt – 1/3 of a small spoon.
  • Baking soda - teaspoon.
  • Vanillin – a pinch.
  1. Remove food from the cold in advance so that it can warm up to room temperature.
  2. Mix sugar and butter, grind. Beat in the eggs and whisk quickly.
  3. Pour the drink with milk. Stir.
  4. Add flour in small portions, mixed in advance with salt and vanilla. Knead into a homogeneous dough.
  5. Form the shortbreads, place them on a baking sheet, laying them on parchment.
  6. Bake for 10-15 minutes at a temperature of 180-200 o C. Do not let the homemade cakes brown, they should be soft and pale.

Milk shortbreads:
Flour – 423 g (400 g)
granulated sugar – 210 g (200)
margarine – 96 g 96 g (100)
melange – 21 g (half 1 egg)
whole milk – 76 g (80 ml)
soda - 2 g replaced with baking powder
ammonium - 4 g replaced with baking powder instead of soda and ammonium 1 pack -10 g baking powder
vanillin - 0.2 g
Yield 10 pcs, 75 g each

I round the weight slightly, but weigh it on a small electric kitchen scale.

Beat softened butter with sugar, add egg, milk and baking powder. (You can add vanilla sugar to taste) Add flour and quickly knead into a soft dough. Roll out the layer 6-7mm wide. Using a cake pan, press out cakes. Place the formed cakes on a baking sheet and bake in an oven preheated to 180 - 200 degrees for 15 minutes. The top of the cakes will slightly brown, which means they are ready. The main thing is not to over-expose it, otherwise it will be hard.
